Bollywood Potato Salad (Pink Potato Salad)

I made this potato salad just now and the hot-pink colour immediately reminded me of the neon brighness of Bollywood films. :-) Although I didn't put any curry powder into the dressing today, I will do so soon, as I love curried potato salads - and the Bollywood of the title would be slightly more justified. ;-) -- posted by evelyn/athens

Broccoli Crunch With Creamy Almond Dressing

Tiny green florets, crisp apples, crunchy shallots, candied nuts and slivered red onions are tossed in a barely sweet, creamy almond vinaigrette.

Find the freshest broccoli you can and be sure not to overcook them, you just want to blanch them quickly. A wonderful mix of crunch and color! You can make the components ahead of time, but don't dress the salad until you are ready to serve it; preserving the various crunches. Adapted from 101 Cookbooks. -- posted by Sharon123

Loaves & Fishes Fish Salad

Passed down from generation to generation, this salad is based on one made by Jon Snow, who owned a fish store in Sagaponack called Loaves & Fishes. Ina Garten's friend bought the shop in the mid 1970's and turned it into a specialty food store and then sold it to a friend. But they all kept making Jon Snow's delicious fish salad. So here it is for you to enjoy too! -- posted by Sharon123

Bibb Salad With Basil Green Goddess Dressing

Green goddess dressing was invented in the 1920's at San Francisco's Palace Hotel as a tribute to William Archer's hit play, The Green Goddess. It gets it's bright green color from lots of fresh green herbs. This dressing was originally made with tarragon, but has been updated with basil, which actually has more flavor! Delicious on green salad, but also great served with vegetables like asparagus and broccoli. Adapted from the Barefoot Contessa at Home cookbook. -- posted by Sharon123

Beet Salad With Walnut Dressing & Crumbled Bleu Cheese

Uncooked beets have a texture that is very similar to that of raw carrots. This is an easy and delicious salad that takes very little time. Grated fresh beets are tossed with walnuts and a simple vinaigrette, and arranged on a plate of tender salad greens. The bleu cheese pairs nicely with the beets. For a main dish salad, add chicken.
Mixed Herb Salad With Borage : La Salade De Plusieurs Herbes

A delightful old French salad recipe, which uses fresh aromatic herbs with fresh lettuce leaves and a simple dressing. Serve this with poached salmon or cold chicken for an elegant dinner party dish. Adapted from a 16th century French translation of a book originally written in Latin in 1474. NB: Borage is an excellent culinary herb and can be used in a variety of ways. Borage is far better used fresh, as the flavour and colour deteriorate when dried and some essential oils lost. Traditional recipes recommend borage leaves and seeds, together with fennel in salads for increasing the milk supply in nursing mothers. The leaves and flowers are still added for flavour and garnish to wine cups, Pimms and gin-based summer cocktails and the flowers are still candied for confectionary as cake and ice cream decorations. -- posted by French Tart

Easy Tomato, Red Onion, and Kalamata Olive Summer Salad

This refreshingly-light summer salad is my absolute favorite way to enjoy vine-ripened summer tomatoes. It's a quick and easy tummy-satisfying dish on a warm midday when the last thing I want to do is turn on the stove. The juicy tomatoes, sweet onions and rich-tasting Kalamatas are dressed simply with olive oil, red wine vinegar, fresh herbs, salt and pepper. If desired, add whatever other garden veggies you enjoy - our family loves cucumbers; or add a slice of feta and some sliced green peppers and you've got a Greek “village” salad! Don't forget the crusty Italian bread to mop up the tomato and vinaigrette juices. -- posted by Feast Your Eyes!

Or you can use a package of Maple Leaf already cooked chicken pieces.

Easy Potato Salad With Complete Instructions

A potato salad which is universally enjoyed and really easy to prepare. The dressing is heated prior to blending but it goes really fast and turns out perfect every time. This is a great "beginner's recipe" because I have listed detailed instructions on both how to cook the potatoes and how to boil the eggs to ensure a no-fail experience. I wanted to remark that this makes one of the best potato salads for cold potato salad midnight snack sandwiches. Of course, this is also the perfect covered dish. For lots of smiles, serve this with my Southern Fried Chicken, posted here on Recipezaar. Finally, if you must have sweet pickles in your potato salad, just add 1/2 cup of drained sweet relish at the blending stage. I did not include the 4-hour refrigeration period at the end in the cooking time. Enjoy! -- posted by Bone Man

Honey-Roasted Pear Salad With Thyme and Verjus Dressing

An elegant and sophisticated salad that makes good use of verjus (verjuice) in the dressing. I use a local blue cheese, such as Roquefort in this salad; however, please do use a local blue cheese of your choice - any creamy or robust blue cheese will marry well with the pears and tart dressing. Verjuice, or verjus, is the juice of unripe grapes. This staple of French provincial cooking, a key ingredient in Dijon mustard, has the tartness of lemon juice and the acidity of vinegar, but the harshness of neither. Its delicate flavour is ideal for everything from stocks to sweet syrups - as long as you know what you're doing. Verjus was also a common ingredient used in English cooking throughout the Middle Ages. I try to make a batch of verjus every year with the green grapes from my non-dessert grape vine - as I love cooking with it. This recipe came from an old copy of Bon Appetit magazine from 2005. Prep time includes the time it takes the pears to cool. -- posted by French Tart

Spicy Peanut Thai Vegetable Salad

This is a very easy, amazingly tasty vegetable salad that takes minutes to make. The combination of all the greens, reds, orange and yellows in the vegetables make a wonderful presentation. It's the vinaigrette that brings all the veggies together. You can use any veggies you happen to have on hand; I think it would be great with tomatoes and lightly cooked asparagus.
Confetti Cole Slaw With Cilantro

This recipe is traditionally called "California Cole Slaw", but I made some changes by reworking the recipe. The pretty contrast of colors reminded me of confetti, hence the name. I found the original version "California Cole Slaw" recipe while going through my deceased mother-in-laws recipes. Thought I'd make a couple ingredient changes and wala.
Chopped Salad in Lettuce Cups

Now, I can make many different versions of salads to put into these lettuce cups. From ... Cobb, Mediterranean, chopped, traditional, lettuce tomato, onion ... or you can make a all vegetable salad, a Mexican black bean and corn salad, fruit salad, chicken, shrimp or crab salad. The method is the same. But I love serving these at dinner parties. My last one I served a version of a caesar salad and put them in lettuce cups and served at a dinner party. They were a big hit. So, my favorite is a simple chopped salad, I love the traditional version for this. -- posted by SarasotaCook

El Torito Southwestern Caesar Salad

El Torito Restaurant's Caesar salad has been a popular favorite for decades; I obtained the recipe in 1994 when it was published in the Los Angeles Times and have made it many times since. The recipe contains some Mexican ingredients such as pepitas, which are roasted pumpkin seeds, avilable at Trader Joes, as well as at Mexican markets. The cotija cheese ia a Mexican grating cheese. If not available use any hard grating cheese such as Parmesan. -- posted by lynnski / LA

Creamy Cucumber Salad Dressing

Delicious dairy-free version of cucumber dressing. I liked to use 2 small cucumbers, rather than 1 large because of the seeds. IF using a large or non-organic cucumber, make sure there is no wax on the peel, and scrap some of the seeds out! For a thicker, creamier dressing add more cashews and less water; for a thinner, lighter dressing add more water and fewer nuts. -- posted by Kozmic Blues

Andalouse French Fry / Burger Sauce

This is a fantastic sauce. It's similar to thousand island dressing although it uses fresh ingredients instead of a relish which gives it more of a gourmet twist. I put it on belgium frites, traditional french fries and hamburgers. I love it so much I've started keeping a jar in my fridge at all times. A good tip to finely blend all ingredients is to (carefully) use a cheese grater on the vegetables, that way you're using more of the juice from the vegetables. -- posted by OwlMonkey

This is a wonderful cold green bean dish. It is very simple and has had rave reviews wherever I have served it. It is from Light & Tasty Dec/Jan 2002. -- posted by GibbyLou
