Parmesan-Crusted Chicken With Arugula Salad

This offering, originally from Food & Wine, is an easy weeknight meal. I love it for it's simplicity. Even though it is quick and easy, there is still great flavor due to the dijon, fresh thyme and parmesan. I love the lightly dressed salad which you can pile underneath each serving of chicken. If you like more dressing for your salad, by all means mix up a little extra! -- posted by LifeIsGood

Taco Salad

This is my favorite taco salad recipe, and the reason it's so good is the combination of chunky salsa, mayonnaise, and sour cream for the dressing. I vary a lot of things (might add black beans or chilies or beef instead of turkey), but I stick with this dressing if possible because it's heavenly. In fact, if I don't have a dressing for a salad I'll whip up this combination. You can always leave the dressing separate from the salad in case people want to dress their own or you are taking the salad somewhere and don't want the salad to get soggy. -- posted by AmyZoe

Wheat Berry Salad With Fruit & Feta

Hearty, flavorful and filling. My husband and I were both suprised at how delicious this was. The included ingredients really give a full, complete flavor to the dish. I compiled this after reading through several recipes and not being satisfied. This would be a great side dish, but we eat it as a one-dish meal. -- posted by Chef #319854

Prosciutto/Chicken Breasts/Eggplant Panzanella/Raisinvinaigrette

"Chef Barbara Lynch's take on saltimbocca gets its richness from Taleggio* cheese, which is stuffed in the chicken breast. A slightly sweet bread salad is served with the chicken." Bon Appetit Magazine, September 2009 Edition. The real name of the dish is: Prosciutto-Wrapped Chicken Breasts with Eggplant Panzanella and Raisin-Pine Nut Vinaigrette - with "Taleggio cheese that is a semi-soft, washed-rind cheese from the Valtaleggio region in northern Italy, near Lombardy. It is characteristically aromatic yet mild in flavor and features tangy, meaty notes with a fruity finish. The texture of the cheese is moist-to-oozy with a very pleasant melt-in-your-mouth feel. The combination of the soft texture, pungent aroma, and buttery flavors has proven to be addictive especially when spread on fresh crusty bread! Taleggio pairs nicely with Italian Nebbiolo wines, as well as a wide range of reds & whites." Cooling times have not been included. -- posted by Manami
