Rolo Cookies

I'm not sure what these were originally called, but the recipe came from a Pillsbury Bakeoff cookbook. These are my favorite cookies and I get requests for them all the time. They are a chocolate cookie topped with sugar and pecans and when you bite into them you get a delicious caramel surprise! -- posted by Pismo

Chocolate Heart Cookies

I found this last year in the "Taste of Home" magazine. They were an instant hit and left everyone craving more. Excellent for Valentines especially, but they are good any time of the year. I dip them in the milk chocolate and drizzle white - though the recipe calls for it the other way, you can chose to reverse the amounts between white and milk chocolate chips according to your taste. -- posted by Rachel55

Chocolate Chip Cookies With Sprinkles

A friend of a friend gave me this recipe, so I am not sure where she got it from. This recipe makes a lot of cookies, and it is great when you are baking for a huge crowd. This cookie does not spread much making it thick and has a mouth load of chocolate (from the sprinkles and chocolate chips). I have left out the sprinkles and they still taste just as good. Since the batter comes out rather thick it is advisable to use a heavy duty stand mixer. -- posted by Marz

Soft and Fudgy Peanut Butter Cookies

These cookies weren't supposed to be! A Zaar chef, who shall remain nameless, ;) posted a recipe for a chocolate cookie with pb chips in it. But instead of listing butter as the first ingredient, she accidentally listed peanut butter. After I had mixed everything together, I knew something was wrong because I ended up with a bowl full of crumbs, not dough. To try and salvage the ingredients, I added the milk, left out the pb chips and formed them like traditional pb cookies. Thankfully, the resulting cookies were soft and tasty so I decided to share. :) -- posted by Marg (CaymanDesigns)

Addicting Chocolate Chip Cookies

Just like the French add a dash of black pepper to their chocolate, coffee adds that extra "something" to chocolate chip cookies.
Simplified Peanut Butter and Chocolate Pinwheels

I found this one on the Better Homes and Gardens website. They turned out a little crackled on top, but still looked nice and tasted great! It was definitely a LOT quicker than mixing up two batches of dough from scratch!

My advice is to use the good quality (not cheapo off brand) cookie dough. I used a tube of Pillsbury Peanut Butter Cookie and a tube of off-brand Sugar Cookie. The sugar cookie dough took a little more effort to mix the cocoa into because of it's harder consistency...actually used my hands instead of the wooden spoon! -- posted by KaDo

Chocolate Chip Rugelach Recipes

Courtesy of bellaonline.com
Rugelach are a cross between a cookie and a little rolled up pastry. These pastries are now mainstream, and come with a myriad of fillings, including many that include jam and finely chopped nuts. The dough is traditionally cream cheese dough, which some believe to have been developed in the U.S. by the Philadelphia Cream Cheese company.

This recipe uses a chocolate chip, walnut and cocoa filling, this recipe will take some time, because the dough needs to chill, and then rolled out, and cut. -- posted by seahorse73

This recipe is from the Pillsbury Fall Baking booklet that I found in the checkout aisle of the grocery store. -- posted by senseicheryl

Chocolate Gingerbread Cookies

A great holiday treat! This is a delicious low-fat cookie recipe from the great cookbook, "One Smart Cookie: All Your Favourite Cookies, Squares, Brownies and Biscotti... with less fat !", by Julie Van Rosendaal. Dough must chill for an hour before rolling out.
An alternative (make-ahead) way to make this recipe is as an icebox cookie.
Shape the dough into a 12” long log, wrap in waxed paper or plastic wrap and freeze for up to 3 months. Slice log into 1/4” slices and bake as directed. -- posted by blucoat

I found this recipe on the web. I've made them as is and have also added finely chopped nuts. They are wonderful!
Chocolate Crinkle Cookies

These are crisp on the surface with a soft and gooey centre. These are great for the holiday season as the white powdered sugar contrasts dramatically with the deep brown chocolate crevices and they look as though they are covered in snow. The recipe is from "Bakewise: The Hows and Whys of Successful Baking" by Shirley Corriher. These are Shirley's favourite cookies! She is a food scientist (as well as a cook) thus her recipes are very reliable. The dough needs to be refrigerated for a few hours or overnight.
Mayan Chocolate Sparklers

A friend pointed me to this recipe (which I've changed slightly) on the blog MontCarte that is adapted from a recipe on Under the Highchair. I love recipes involving spiced chocolate. These cookies are absolutely delicious and they smell wonderful while baking. I didn't want to leave the kitchen! The topping gives the cookie a sparkly look and a wonderful crunch accented by a hint of heat from the cayenne pepper. The MontCarte blogger substituted the vegetable shortening with additional unsalted butter, but her cookies were crumbly as a result. I used vegetable shortening and my cookies crumbled very little. I've switched to bread flour in this cookie recipe. I will produce cookies with lasting softness. If that's not something you want, the bread flour can easily be replaced with all-purpose flour. If you plan to serve these to sensitive mouths and tummies, leave out the chili powder and cayenne but keep the black pepper to still achieve the spiced-chocolate taste without the burn. I prefer to use freshly ground black pepper for this recipe to achieve a stronger note in the taste. If you have an audience who's hesitant to spiced chocolate, dub these cookies simply "chocolate cookies" and watch for a reaction. I've seen these cookies win over many a cinnamon-chocolate, pepper-chocolate hater. Yield of this recipe is around 5 dozen and serving size is 2-3 cookies but I usually eat twice that amount in each sitting. The cookies great well with a glass of milk or crumbled over ice cream. -- posted by Graceless Ally
