Succulent Chicken Asparagus Salad (Warm or Cold)

Put this together for unexpected Lunch guests today. (from what I had around.) It turned out so delicious, had to share it. Served it with a platter of sliced tomatoes, celery sticks, carrots sticks, torn lettuce, and pickles, with havarti Jalepino cheese slices and whole wheat kieser rolls. and thawed frozen strawberries for dessert!! Funny how last minute things, sometimes turn out so well. -- posted by Derf

Roasted Asparagus

I got this recipe from "Simple Vegetarian Pleasures" by Jeanne Lemlin. I LOVE asparagus and am always on the lookout for new ways to make it. This is such an easy and elegant way to serve it. The asparagus gets a slightly nutty flavor after roasting, which makes it even more yummy. -- posted by taylortwo

5-Cheese Crab Lasagna With Roasted Garlic and Vegetables

This creamy, gooey, gorgeous white lasagna will impress your special guests and loved ones. Mild, but with many subtle flavors, it makes for elegant comfort food. Though the recipe appears long, it breaks down into easy steps and can be prepared for baking the day before. Prep time includes roasting times (when you can be doing something else). Those who dislike ricotta may not mind it here, as it dissolves into the sauce. -- posted by quantumgirl

Balsamic Roasted Asparagus With Fleur De Sel and Parmesan

This is based on a recipe from Second Helpings from Union Square Cookbook. Much to the dismay of family and friends, I could never learn to appreciate asparagus. It always reminded me somehow of eating grass. But I tried this recipe and finally found a way to love asparagus. This is incredibly simple, but the combination is superb. Spending the extra to get true fleur de sel is really worth it for this dish. -- posted by paperfreeme

Roasted Tofu, Asparagus and Radishes - Ww

This came from "Simply Delicious - Flexpoints Cookbook" from Weight Watchers. Out of all the recipes in there, this is the one that I want to try the most. At time of posting, I have not tried this. But I plan on doing so soon. I can't find tofu here in town so it will have to wait until I can get into the city to get some. The book says this is 2 points per serving. The numbers as presented here come up as closer to 3 points (2.9) but that is because it isn't counting on reduced fat tofu. Plus it isn't counting the balsamic vinegar. -- posted by Saturn
