			<description>When I was a kid my dad came home form work one day and told my mom we weren't going to eat red meat anymore. This coming from a meat and potatoes type of guy was quite surprising to say the least. At that time my mom switched from white rice to brown as she feared we would need an extra nutrient boost. That change didn't make me to happy...brown rice was not at the top of my favorites list. So one day we jazzed it up a bit. Hope you like what we came up with. My family does. 			<description>This is very tasty. It comes from a cookbook called &amp;quot;On Rice&amp;quot; and I fell in love with it the first time I made it.  Definitely use a low-sodium soy sauce unless you love salt! 			<description>I love Aaron Sanchez.  He is one of my favorite TV chefs. He runs a number of restaurants.  The one he runs with his mother is called Zarela's, his mother's first name.  He was on a show called, &amp;quot;The Best Thing I Ever Ate&amp;quot; with his mother.  His choice was Zarela's creamy, cheesy rice dish.  This is what Zarela wrote after the show.  I am posting it here so I don't lose the recipe.

			<title>Rice Stuffed Sunburst / Patty Pan Summer Squash</title>

			<description>Recently they have been selling some pretty large patty pan squash at the farmers' market, much larger than the little baby ones you often see roasted or grilled.  I didn't want to just cut them up like regular squash so I searched around and found quite a few recipes for stuffed versions, baked in the oven.  Didn't find one with rice though.  This started as a recipe on about.com, but morphed as I have made it a few times, into what it is now.  This only makes 4 squash, but you could easily double.  You could make this a very substantial main course for a vegetarian if you added some protein.  Note that the amount of rice is actually more than you'll need, by about 1/3 of a cup, we all really like the rice though so it's nice to have extra.  In fact we like the rice so much I have doubled up that part of the recipe and used it for another meal.  All depending on what you're serving this with, you could easily adjust the flavours, (ie I'm thinking feta, lemon &amp;amp; marjoram to go with greek).  This is a small enough side dish that I can cook it in my toaster oven.  Next is to try it on the BBQ. I served this as a rice ring (with easy glazed carrots and raisins in the middle). I had no onions on hand, but this would be excellent with carmelized onions on top. You may need to use a little more or less water depending on the age of your lentils. I used 6 1/2 cups, and it was perfect. 			<description>I spent 18 months in central Canada, serving a mission for the Church of Jesus Christ of Latter-day Saints.  While I was there, I fell in love with the people and the food, specifically Ukrainian and Filipino food. The cabbage rolls were my favorite, and when I returned to the US, I began searching for recipes, but could never find one that I liked.  This recipe comes from me combining elements of two or three different recipes that I found.  The resulting recipe is surprisingly easy--if a bit labor intensive.

I included instructions to make a sauce, but, if you run out of energy, the stuff in a can works just as well.  If I want to do a homemade sauce, I usually do it a day or so in advance.,

If possible, use leftover rice as fresh rice will be too moist.  Leftover rice from Chinese takeout works well too.  After making the dish the amount of garlic didn't seem excessive to me, but use your judgment.  Courtesy of Mark Bittman, the minimalist, from today's version of the New York Times.  I reduced the oil as it seemed excessive.  Use 1/2 cup if you'd prefer.  For a vegan dish, omit the eggs.
