			<title>Jambalaya, With Thanks to Pol Martin</title>

			<description>I am a great fan of the late Pol Martin, I recently made his Jambalaya, from &amp;quot;Pol Martins Supreme Cuisine&amp;quot;,   using left over gammon from Christmas Day in place of the ham.  The family absolutely loved it!  So I've brought it here to share with you.

I've recorded the recipe as written, but should add that I did not cook this in the stove at all,  (I've mentioned this in the directions),   I used the tinned tomatoes, with their juice,  and I didn't have fennel seed, so simply omitted it, after some deliberation about possible subs.  Also, please note that the recipe uses Cooked rice, I have not included cooking time for the rice, although I cooked mine in the microwave whilst cooking the bacon, onion, etc, down to step 4,   it took around twenty minutes to cook.  Final note, that should read a FEW drops of hot pepper sauce,   but somehow, it keeps coming out as 3! 			<description>I found this recipe in The Best of The Best of Idaho Cookbook/Caldera Kitchens.  This is different from any jambalaya I've ever tried because of the roux (which has a nice gravy texture) and the spicy rice, but it's comfort food at it's finest.  Although a little labor intensive, it's well worth the end result.  I used chicken, crab, and spicy smoked sausage, but use what you have on hand or what your tastebuds prefer.  The original recipe calls for 1/2 teaspoon file' (optional), but I left it out of the recipe because it wasn't recognized as a food when I tried posting it. Note:  I changed the estimated number of servings from 10 to 6 because after making it twice, I can say that this recipe seems to inspire &amp;quot;seconds&amp;quot; and &amp;quot;thirds.&amp;quot; We eat a salad along with it--no bread, soup, etc.   If you are controlling the portions for a dinner party or are serving a variety of side dishes along with this main course, use the higher number of servings.

Note 2:  I had this leftover yesterday for lunch, and it warmed up great in the microwave.  Freezing seems to be fine, too.

Note 3:  Because we were running low, my husband substituted parmesan cheese for swiss, cut the amount of cheddar cheese in half, and mixed the cheeses into the casserole instead of putting them on top. 			<description>This is from Southern Living. So good. I posted as written. However, if you can actually find &amp;quot;cream of shrimp soup&amp;quot; send me some as I have never seen it. NOTE: I sub 1 can cheese soup &amp;amp; 1 can cream of celery for the two cans of cream of shrimp and add some extra shrimp and I think it is good! Prep time includes time to cook rice and shrimp in skillet. :) Also, I will separate this into TWO casserole dishes, then cook one all the way (follow recipe through to the end) and the other I freeze right before sprinkling with cheese. I am jsut careful to eat it within about one month since there is seafood in the casserole. Also, sometimes I make half chicken/half shrimp or one of each. When I add chicken instead of the cream of celery soup I use cream of chicken. I always use the cheese soup. Really the possibilities are endless :) Also, add some cayenne pepper if you like it spicy! 			<description>I could live on this!  Everybody loves this one, and agrees that its better than any Jambalaya they've ever ordered in a restaurant.  Give it a try, you won't be disappointed I promise.  The secret is the roasted red peppers and the butter.  Don't be put off that the dish is finished in the microwave, it just ensures that there are no burnt pans to deal with later!  The only other veg that work in this I find are sweetcorn or butternut squash/pumpkin cut into chunks and added just before it all goes in the microwave.  Even my friends from Louisiana find it hard to accept that its perhaps even better (If not a little different) than they make. I'm thinking that cream of shrimp soup might be a good substitute for the cream of mushroom soup.  At the holiday season this would be pretty made with red and green bell pepper. The estimate for the amount of liquid will vary depending on the several factors, but you should be safe with at least 6 cups of pre-heated liquid, you can expect your rice to be done once you have added 4-6 cups.
