Gluten-Free Japanese Curry

I LOVE Japanese Curry. It is a dish I have grown up with and my grandma used to make weekly. Since my children were diagnosed as Celiac they can not have the packaged curry sauce as one of the main ingredients is wheat. I made this recipe and it turned out really yummy! Thumbs up all around!
Turkey Casserole

This is my favorite turkey casserole. Chicken can be substituted. Great for left over Thanksgiving or Christmas turkey. I found this recipe many years ago in a newspaper. My sons especially liked the cheese topping so I used to double the topping ingredients. Whether I serve it at home or bring out, I always get compliments and often asked for the recipe. -- posted by Truffle Lady46

Porcupine Meatballs W/Cheese Soup

This is a twist on the classic porcupine meatballs, traditionally made with tomato soup. One night, my mother had Campbell's cheddar cheese soup on hand instead of tomato soup.
A1 Ultimate Jambalaya

I could live on this! Everybody loves this one, and agrees that its better than any Jambalaya they've ever ordered in a restaurant. Give it a try, you won't be disappointed I promise. The secret is the roasted red peppers and the butter. Don't be put off that the dish is finished in the microwave, it just ensures that there are no burnt pans to deal with later! The only other veg that work in this I find are sweetcorn or butternut squash/pumpkin cut into chunks and added just before it all goes in the microwave. Even my friends from Louisiana find it hard to accept that its perhaps even better (If not a little different) than they make. Enjoy! -- posted by robd16

Marmie's Swiss Like Minute Steak

We love minute steak... our butcher does a really nice job and I always want to try a new way to prepare it, I have done this before but I really liked it today...maybe it was the wine? The wine I put into the sauce... lol
Minute steak is really tender off the bat but I am sure that if you simmered round or serlion steak about an hour it would be really tender too.
This is especially yummy with mashed potatoes, but nice with rice or pasta too. -- posted by Marmie's

Simmered Chicken Dinner

A very quick and easy way to prepare dinner for 4, in a skillet. To make Curried Chicken Dinner, prepare the same recipe, omitting the paprika. Add 1/2 Tbsp. curry powder to the broth mixture and 1/2 cup raisins with vegetables. Garnish with freshly diced apples, if desired. Another great way to serve this basic is Cranberry Chicken Dinner. Add 1/2 cup dried cranberries and 1 tsp. poultry seasoning to broth mixture. Replace plain rice with long grain and wild rice blend. For vegetables, use 1 cup each, sliced celery, and chopped onions. -- posted by Chef mariajane

Fee's Special Kitty Cat Renal/Kidney/Diabetes Diet

My cat, Fee, is 22 years old(!), blind and has kidney disease, but his quality of life is still great thanks to daily subcutaneous fluids, a special diet, and daily supplements that lower his BUN and creatinine. For a change of pace from Fee's usual (costly) prescription diet, I occasionally make this for him.

Diabetics need fiber and kidney kitties need to limit protein. The inclusion of brown rice addresses these issues.

The ingredients as given are minced, but I drop everything into my Magic Bullet yielding the consistency of pate. You can freeze portions, too - handy! Time estimate includes the mixing of all ingredients, cooked and otherwise, and the final quick cook of the mixture that includes the eggs. -- posted by Sandi (From CA)

Ww Low Fat Taco Beef Skillet Dinner

Since starting Weight Watchers, I have missed the flavour of Mexican foods. But with calorie-filled toppings and wraps, they're not always diet-friendly. So I came up with this meal- it has the flavours of Mexican food without the majority of the calories and if you have extra points, you can even add a little guacamole or sour cream on top! It's worth using fresh salsa, not the jarred stuff for this recipe- it adds a lovely fresh bright flavour. Using extra lean beef, this recipe has a total of 19 Weight Watchers points by British points calculations. -- posted by Shuzbud

Hung's Clay Pot Rice

Recipe by Hung Huynh, a student at the Culinary Institute of America in Hyde Park, New York was a Top Chef winner. Hung Huynh learned to cook with the Chinese trinity - GGS = ginger, garlic and scallions. He uses all three here to flavor this earthy, mushroom-and-bacon-studded clay pot (without the clay pot) rice.;) It was fun trying this type of rice in the dining room and seeing the people's reactions - they either loved it or weren't convinced by it.From: Top Chef Winner's Tips, Hung Huynh - publlished 02/2008 edition of F&W Magazine. There is an hour soaking time for the raw rice.It makes a nice side for chicken or fish - we tried it with chicken tenders (lightly seasoned and done on the grill) and sweet peas.:) -- posted by Manami

Five-Jewel-Rice-Stuffed Chicken Breast With Hot Sour Sauce

Here, the editors chose to feature a Chinese-inspired stuffed chicken breast, incorporating short-grain rice, like arborio -- which allows the stuffing to stay put. The five "jewels" of the stuffing are the rice itself, almonds, water chestnuts, scallions & garlic -- none of which requires a trip to a specialty market.;) Garnishing with sesame seeds is entirely optional (white and black) however, it makes a beautiful presence.
Uyghur Polo (Pilaf)

Polo (a Central Asian variant on the word pilaf) is a food staple found across Central Asia, including Kazakhstan, Kyrgyzstan, Uzbekistan, Turkmenistan, Tajikistan, and parts of northwestern China. The different peoples of each region have their own takes, and their own flavors, for the recipe. This recipe is for Uyghur polo, the variant of the dish found in China's Xinjiang Uyghur Autonomous Region. Uyghur food is on the whole closer in taste to Indian, Persian, or Mediterranean food than it is to conventional Chinese food.

I credit this recipe to my Uyghur language instructor. The recipe can be a challenge to cook correctly at first, but the challenge will prove well worth the effort because it is absolutely delicious. -- posted by mpevans

Sausage and Wild Rice Chowder
