			<title>Fee's Special Kitty Cat Renal/Kidney/Diabetes Diet</title>

			<description>My cat, Fee, is 22 years old(!), blind and has kidney disease, but his quality of life is still great thanks to daily subcutaneous fluids, a special diet, and daily supplements that lower his BUN and creatinine. For a change of pace from Fee's usual (costly) prescription diet, I occasionally make this for him. 

Diabetics need fiber and kidney kitties need to limit protein.  The inclusion of brown rice addresses these issues.

The ingredients as given are minced, but I drop everything into my Magic Bullet yielding the consistency of pate. You can freeze portions, too - handy! They called for a package of their Yellow Curry Rice and I changed to use what we have on hand (big tub o' Mae Ploy yellow curry paste &amp;amp; brown rice LOL). That also includes substituting a handful of sultanas or fresh cranberries for the dried cranberries as needed. 			<description>I spent 18 months in central Canada, serving a mission for the Church of Jesus Christ of Latter-day Saints.  While I was there, I fell in love with the people and the food, specifically Ukrainian and Filipino food. The cabbage rolls were my favorite, and when I returned to the US, I began searching for recipes, but could never find one that I liked.  This recipe comes from me combining elements of two or three different recipes that I found.  The resulting recipe is surprisingly easy--if a bit labor intensive.

I included instructions to make a sauce, but, if you run out of energy, the stuff in a can works just as well.  If I want to do a homemade sauce, I usually do it a day or so in advance.,

			<description>The arancini (fried rice balls) that are sold in the bars and cafes of Sicily are among my favorite foods. Here is a recipe that is easier for the home cook, and since it is baked and not fried, the fat content may be lower. This recipe has endless variations; I've posted the most complicated version (it's not that hard) which can then be unmolded for a dramatic presentation. But simpler versions abound -- for example, a timbale made in a springform pan and filled simply with ham, peas and a thick bechamel. Chopped spinach or eggplant could be added to the rice. The filling ingredients can be prepared the day before. 			<description>Polo (a Central Asian variant on the word pilaf) is a food staple found across Central Asia, including Kazakhstan, Kyrgyzstan, Uzbekistan, Turkmenistan, Tajikistan, and parts of northwestern China.  The different peoples of each region have their own takes, and their own flavors, for the recipe.  This recipe is for Uyghur polo, the variant of the dish found in China's Xinjiang Uyghur Autonomous Region.  Uyghur food is on the whole closer in taste to Indian, Persian, or Mediterranean food than it is to conventional Chinese food.

I credit this recipe to my Uyghur language instructor.
