Onigiri (rice Balls)

My family looovess these rice balls and they are often requested at get togethers. A simple recipe. It can be served as an entree with the salmon or the salmon can be left out. Make sure to wet your hands in water so the rice does not stick to your hands. -- posted by BirdyBaker

It's not really a secret recipe, many restaurants prepare rice this way, but it produces really great rice. More of a technique than anything. This is a response to a request in the forum and I hope you guys like it! -- posted by BirdyBaker

Simplest Fried Rice

I have tried to make fried rice without a recipe, three or four times, with absolutely no success. So this time I thought I would do the intelligent thing and follow a recipe! I’m sure glad I did, because the rice turned out absolutely wonderful and it was astonishingly easy, too. The recipe I chose was "Fried Rice With Ham and Eggs" from a marvelous book called "The Way We Cook: Recipes from the New American Kitchen." I've altered the wording slightly.

This recipe makes a mild fried rice, comparable to something you might have in a Japanese restaurant. Yum! -- posted by juniperwoman

Sukiyaki Big Bowls

Nice and real easy traditional Japanese Style food! These bowls can be of the Ziplock type or other freezer bowls and can be used as a meal for new neighbors, a sick friend or just for you. I found this on landolakes.com. Update 01/07/2008 - I remade this and used peapods with less bamboo shoots, sliced red pepper strips with less water chestnuts, increased the garlic to 1 tsp, increased the green onions to 1/3-1/2 cup, and some crushed red pepper flakes, for that extra zing! Just a thought! -- posted by Manami

Avocado & Vegetable Sushi (Gluten-Free & Vegan)

I fell in love with avocado rolls from a near-by Japanese take away, but I wanted to be able to make them at home to be sure of the ingredients used so my whole family (with allergies) could enjoy them also. I was, at first, apprehensive as they looked a little complicated and many recipes I found were actually very complex. However, it only took me two rolls before I got the hang of them. They really aren't difficult at all !!! I'm not really sure if my method is 100% correct, but it works for me.
This recipe makes a mix of avocado and vegetable rolls - how many of each is up to you.
You'll need a bamboo mat to help with the rolling. -- posted by bearhouse5

Glo's Sausage Fried Rice

This is an easy to prepare fried rice dished passed down by my Japanese mother. You won't find anything like it in the restaurants. Every time we have a family get-together or a covered dish luncheon at work, I am always requested to bring this rice. Being half Japanese, my family would eat this rice as the main part of our meal. Most people would make this as more of a side dish. This recipe makes a lot, so feel free to cut down on the quantities.
High protein sushi rolls which are not too high in fat. The yield and measurements are estimates as sometimes I make this into thin sushi, sometimes futomaki, sometimes sushi layers.
Chahan - Japanese Fried Rice

My friend's mom owns a yakiniku resteraunt but she also cooks various other foods. This is her chahan recipe.

She really uses chashaorou (chaashuu) but I don't know the word in English, but she said Bacon is okay too.

If you like green peas, you can add 2 tbsps. (I don't like green peas, that's why I didn't add them into the ingredients list).

Use how ever much olive oil, salt, and pepper you think you need. -- posted by Goldie174

Roasted Rice Balls (Onigiri Yaki)

These are so yummy! I haven't tried the miso one (yet! But once I get my paws on some miso paste. . .), but the soy sauce ones are fantastic. This is fairly typical bar food in Japan from what I have read online, but it also makes for good lunchbox food or a side dish for a Japanese inspired dinner. You can also make a bunch of these and freeze them for up to a month. This recipe comes from Bento Boxes: Japanese Meals To Go by Naomi Kijima - hence the single serving size. Cooking time does not include time to cook rice. I posted photos to try and make clear the grill, flip, brush, flip, brush, flip, done routine. Hope this helps. :) -- posted by CraftScout

Peanut Butter and Pickle Sushi

I love sushi for the ways in which the textures and flavours of its ingredients are uniquely highlighted. This unusual sounding roll was inspired by a favourite dish of mine, peanut butter and pickle sandwiches (like those described in recipe #104084), in which creamy, nutty peanut butter perfectly compliments the crisp texture and garlicky tang of dill pickles. It's unusual, but delicious! I eat this sushi roll with the usual condiments - tamari, wasabi, and pickled ginger.

I've used peanut butter in many other sushi inventions as well, enjoying it with carrot, red peppers, green onions, etc.

I haven't included cooking directions for sushi rice with this recipe, since there are several recipes for sushi rice posted on RecipeZaar already (i.e. Recipe #55243, Recipe #119373, etc.) Recently, I've been making all of my sushi using short-grain brown rice, for the additional health benefits.

NOTE: My directions assume some level of sushi-making experience. -- posted by Lumberjackie

Kayaku Gohan (Rice With Vegetables)

From The Best Recipes in the World by Mark Bittman. "This popular one-pot dish can be made with meat or vegetables and, like most casseroles, is easily varied. There are many similar dishes throughout East Asia, but this one is made distinctively Japanese by the addition of mirin and even more so if you use dashi for the cooking stock -- a terrific touch. Arbruage -- fried tofu -- is available, precooked, at Japanese markets; it's slightly sweet. Firm, well pressed tofu can be used as a substitute." -- posted by AB_Fan

Nikujaga or nikujyaga is a popular comfort-food dish in Japan. What many people don't realize is that it originated as a Japanese adaptation of Western beef stew. This particular adaptation--my own version--swings back in the direction of its origin by using beef chuck and subjecting it to a long, slow simmer for tenderness and flavor. -- posted by TPK

Grilled Tuna With Chipotle Ponzu and Avocado Salsa

My daughter made this last night and had a taste and was pleasantly surprised! This is a great example of how bold Asian and Latin flavors can work well together. The orange and lime juice are in place of the rice vinegar = the acidic ingredient used in a Japanese ponzu dipping sauce. The hot, smoky chipotle chiles give it that extra kick! The avocado salsa gives it that cooling feeling. Cooking Light Magazine, November 2005.
This recipe is out of a cookbook called eating well, healthy in a hurry. I love how simple this recipe is to make. It is great on a cold night and so healthy! I double the sauce to make it more like a soup since I love egg flower soup and this reminds me of it. I also omit the sugar, it is good without. I have only made this with white wine since i have no reason to buy mirin aside from this recipe and it turns out great. for a spicy kick, my husband likes to top this off with that hot rooster sauce.
