Chicken Risotto

This is a very good recipe for my son who is 2 years old. He isn't one for chicken, but will eat this. I put individual servings for him into the freezer so when the hubby and I eat something that we know he won't eat, I just pop this in the microwave. Very easy and satisfying.

Crock Pot Mexi-Meatball Rice Soup

A simple and comforting crock pot soup. It's so easy that the only work you have to do is chop the onions and cilantro; the rest is a "dump and go"! Recipe is very adjustable to fit everyone's diet preferences: if you're watching your fat intake and/or are watching carbs, use cooked turkey meatballs, omit the rice and use low fat or fat free toppings. You can also use low sodium broth and tomatoes, if watching your salt intake. -- posted by TheDancingCook

Crocked Brown Rice on a Budget

I threw this together and prayed! I am paid in 2 days and needed a good, easy and economical meal with what I had on hand. You can use regular corn and change the spicing to go Italian, Spanish, Mexican etc. I loved what came out and well enough to add to my 'weekend cook for the week' menu. You can also add chicken or any leftover meat to this and shrimp would work as well if added near the end of cooking. This is the only recipe I have ever posted where I will say ''use it as a springboard.'' I can tell you one thing; I have never had more fluffy or soft brown rice in my life. c.\2007 -- posted by Miss Elizabeth

Chicken & Rice for the Slow Cooker

A easy to throw together in the morning, ready when you get home meal. I use chicken thighs instead of breasts because they tend to stay moist and do not get overcooked & dry if you come home later than planned. I call for brown rice, but am planning to try wild rice. I would not use white rice, as it may get too mushy. -- posted by Chandra M

Crock Pot Chicken Jambalaya

From Fitness Magazine. We thought this was quite good, and easier than making it completely from scratch on the stove. I subbed fresh tomatoes and jalapenos with no problems. I also stirred in some small cooked and peeled shrimp 15 minutes before serving. I used Zatarain's Jambalaya mix which has no separate seasoning packet, so both the rice and spices went in together. -- posted by Vino Girl

Bo-Kaap Cape Malay Kerrie - South African Cape Malay Curry

This distinctive and tasty authentic curry relies heavily on the special blend of spices, known as Cape Malay curry powder. Cape Malay curries are famous for their fruity and full-bodied flavours, making good use of local colourful vegetables or meat and fish, they are not as hot as the curries used in the Indian kitchen. This "secret" recipe hails from one of the steamy kitchens in the vibrant Bo-Kaap area of Cape Town; it was on a recipe sheet given to my mum from a spice shop in that wonderful area, in the 1950's. The Bo-Kaap area is a treat; the houses are painted gorgeous bright colours that won't fail to make you smile, there are always children playing in the streets and the haunting call of the muezzin will remind you of exotic destinations such as Istanbul and Cairo. And then there's the smell of spices that wafts through open doorways and comes rushing out at you as you walk past Atlas Trading, the local spice emporium. You might be just minutes from the centre of elegant and sophisticated Cape Town, but you'll feel as though you're in a different country.
Serve this curry with yellow rice and a variety of sambals and atjars. -- posted by French Tart

Easy Jambalaya

I went to the Rainforest Cafe in Chicago a few years ago, and happened to order the Jambalaya. I had never had Jambalaya, and from the menu it looked a good choice, but I can honestly say, It was the best meal I have ever eaten. I have tried to make this dish many times, and have now (I think) simplified and perfected it. As an Englishman, no-one over here has even heard of Jambalaya, but I have made this dish for lots of friends, who all absolutely love it, and I swear it is the closest I have come to that fabled recipe. It is a cheat in that I use some store-bought items, but if you know how to substitute with fresh produce then let me know. I hope you all enjoy this meal as much as I do! -- posted by Chef #785168

this is an easy side or main dish. the cheese is optional. we eat it as a main dish. I can't remember where I got the beginning of this recipe but I have adapted it so much I don't think it would be recognized anymore. I make this in a crock pot but it could be made in an oven in a covered dish at 350 degrees for 1 1/2 to 2 hours.
I found this on a card supplied at the butcher's counter at Harris Teeter Grocery. The only change I made was to omit the marjoram leaves due to personal preference but I've added it back to the recipe as an option here. If you don't have bone-in chicken breasts you can use bone-in chicken thighs (about 10 thighs or 3 1/2 lbs). You can add ham or sausage for a more traditional take. Traditionally this dish was made for Monday supper with the left over ham bone from Sunday. It could simmer away on the back of the stove while folks were buisy with the Monday laundry. -- posted by Chef #1180651

Lamb and Okra (Bamyeh) over Rice

I learned to cook from Palestinians, but I have altered methods. I learned to cook the meat in this recipe by searing/browning it on all sides in a pan. I changed that method to make the meat more tender and to create a meat stock to add to the stew for depth of flavor. You can make this with lamb or beef. Middle Eastern cultural preference is lamb but beef can be easily substituted (and using my method to cook it, nobody will know the difference). Time saving tip: if you plan to use lamb, most commercial butchers are happy to remove the meat from the bone, remove the fat, and sometimes even cube the meat for you. But you have to ask for it! Smaller/shorter okra are strongly preferred. Bud-like okra can be found frozen in most Middle Eastern or Indian grocery stores. Alternate idea for okra: omit the meat from this recipe to make a hearty snack to eat on pitas! -- posted by Ayah Elisabeth

Autumn Sausage Casserole (In the Crock Pot )

Easy peasy recipe adapted from A Year of Slow Cooking. After looking through the reviews at her blog, I see that cooks who used a 6.5 quart crock pot had problems with this cooking too much. My crock pot is a 4 quart size and I have not experienced that problem. I do think the stirring is a good suggestion and have changed the directions accordingly. You could use any sausage you want but the sausage does need to be partially cooked or smoked. Try chicken with artichokes, chicken with apple, kielbaska, Italian, andouille, or whatever sausage your family enjoys. This uses LEFTOVER rice so plan for that. I love leftovers. :) This could be gluten free if you are very careful with your choice of sausage. -- posted by WiGal

'rough Cut' Slow Cooker No-Beef Chili

This is a simple, hearty comfort recipe that was based on whatever I had in the pantry last night. It's called 'rough cut' because it is meant to be just a "rustic", simple, easy, hearty, filling dish. There is to be No tedious MINCING!! :-) Just put the ingredients in the cooker. ;-)

It's really easy! Just put the ingredients into the cooker in the order listed, ending with the chicken. You don't want to taste it after adding raw meat to it so adjust your seasoning as nearly as you can before the chicken goes in. You can adjust the flavors further after it's finished.

Ours came out with a LOT of juice so, if you don't like it that way, consider draining the tomatoes, cutting the stock and using bouillon cubes instead. Or cook as directed and removing excess juices to reach the consistency you prefer.

I ladled off about 4 cups of the liquid after all the seasonings married in the cooking process.

I served it over rice.

I thought about adding ground cayenne or red pepper flakes after cooking for a little added heat. Or just having them in ramekins on the table for those who'd like it.

Consider substituting 2 LBS of ground turkey or chicken for the thighs. I'm going to try duck or venison this winter.
