Tiramisu Shots from B H and G Heart Healthy Living

Entered for safe-keeping. From Heart-Healthy Living by BH&G, Winter 2008. Was I surprised to see silken tofu as an ingredient! (Don't knock it until you've tried it.) You'll need about 1/2 of a 7-inch angelfood cake, cut in 24 pieces. You'll need 12 shot glasses or demitasse cups. Preparation time includes 30 minutes of chilling. -- posted by KateL

Irish Cream Cheesecake

We had a work gift exchange that involved "stealing" others gifts. Well, after all was said and done, I ended up with a huge bottle of Irish Cream Liqueur. This is great, but not if you don't drink like me! LOL!!! :-) I said to a few girls that I would find some yummy recipes that include Irish Cream and share it with them. Here is one that I ran across on the www.ifood.tv website. It appears to be slightly different from the other ones posted. The picture on the site looks incredible! ENJOY! -- posted by senseicheryl

Gravlax, Salt-Cured Salmon

With a sharp knife carefully slice on the diagonal to get slices as thin as you can without them falling to bits, leaving the skin.
With practice you can become pretty good at this.

Serve on bagels with cream cheese, a thin slice of onion and capers, and a squeeze of lemon.

Or on toast, or crackers.

The traditional Swedish way is on pumpernickel bread with equal parts dijon mustard, sugar, white vinegar emulsified with 3 parts regular olive or canola oil. -- posted by Kevinf

Mediterranean Dip

This is a Trader Joe recipe. It is such a delicious dip! I took it to a party and everyone wanted a copy of the recipe. The recipe suggests layering the ingredients into a pie plate or something sized similar. I made the mistake of thinking that was too big for the dip and used a smaller serving dish. By the time I was finished layering the ingredients, it was too full! I served this dip with pita crackers from Trader Joes, but you could use your own favorite dippers. This recipe looks unusual but it is knock out. -- posted by LifeIsGood

I got this recipe from a 2005 isuue of Womans Day magazine and its presentation is nice enough for serving to guests or just treating yourself to a bit of indulgence. They're very rich, so don't let the small 9" pan size fool you ;) -- posted by Breezytoo

Corn and Black Bean Macaroni Salad - Tex Mex

Chill a beer for this nice and spicy dish!
The elbows should be cooked al dente in well salted water to prevent broken mushy noodles. Do salt the water liberally. (2 teaspoons is not a lot once mixed with the rest of the ingredients) Seasons the pasta and avoids father salting in the recipe.
This can be eaten as a side or a main balanced meal.
I opted for yogurt and smart balance for better health. But you can use sour cream and mayo. -- posted by ~Rita~

Ceviche from Acapulco

Excellent meal for the summer, since there is no cooking involved and it is cool. Any thick, firm white fish can be used. The citrus juice cooks the fish. You can also add shrimp or scallops and substitute for part of the fish. This is adapted from "A Treasury of Great Recipes" by Mary and Vincent Price. Cooking time is the marinating time in the refrigerator. Letting it sit in the vegetable mixture overnight is not included.

Entered for safe-keeping for ZWT5. From Fine Cooking, June/July 2009. This version uses Yukon Gold potatoes, a cross between a North American white potato and a wild South American yellow-fleshed one. Their golden flesh is richly flavored and fairly firm and moist, with medium starch content -- a perfect compromise between dry, fluffy russet potatoes and moist, waxy varieties. Refrigeration time not included in preparation or cooking time. -- posted by KateL

Chocolate Banana Cake from Canadian Living

The name "Chocolate Banana Cake" does not do this dessert justice. Not even remotely. Banana-chocolate chip cake is layered with white chocolate whipped cream and banana slices, while the entire thing is covered in white chocolate whipped cream and topped with chocolate ganache.
Lemon Verbena Ice Cream from a French Country Herb Garden

I grow many old fashioned and unusual herbs in my garden in France, and although many people know Lemon Balm, Lemon Verbena is not so well known, which is such a shame! For me the flavour is MUCH more lemony and intense than Lemon Balm - think lemon sherbet, and you have a good idea of what to expect! The plant has graceful pointed leaves that are a gorgeous pale green in colour. Just scrunching a leaf in your hand to release the aromas can help fatigue or a headache. This is an ice cream I came up with to refresh and revive even the most jaded of palates – refreshing and with an amazing lemony zing! You should be able to source Lemon Verbena at any good Farmer's Markets - alternatively, make friends with someone who grows it! (Prep time includes the time to infuse the leaves to extract the flavour.) -- posted by French Tart

I prefer peeled potatoes, but if you prefer unpeeled red potatoes, that’s perfectly ok and it sure makes a prettier potato salad! -- posted by Ayah Elisabeth

By Mr. Food; found on our local television station's website. The cilantro should give it a nice bite and I like the idea that it does not use sour cream because then it should keep in the refrigerator without getting watery. I think I will add some thinly sliced celery when I make it this weekend.
Spooktacular Halloween Pudding Cups

Super fun Halloween treats that the kids are sure to enjoy. Easy to make and look great to!! I got the idea off of another website that used chocolate pudding but I thought using vanilla and dying it orange would be really cool since the pudding and oreos together would be traditional Halloween colors. This recipe can be easily divided in half and so on. For the pudding I used the kind that you cook verses the instant. I think the cooked pudding has a much nicer and thicker consistancy. The amount below for the oreos is a guesstimate because it wouldn't let me put down 1 large package of oreos but either way just one regular package of oreos crushed is what you need. Enjoy! -- posted by mamawheezy

Paula Deen Sweet Potato Balls

This recipe came directly from the FoodNetwork.com website, and they were highlighted as one of Paula's Thanksgiving 2009 foods in her Thanksgiving Special aired in 19 November 2009 on Food Network . The original airing of the "Thanksgiving Special" was 10 November 2005...just in case you want to look back in the archives!

Some say the recipe is too sweet. So, you may want to test-drive the recipe for your own sweetness. These suggestions you might make as I did: I let the sweet potatoes fully cool before mashing, I omitted the orange zest and put just a small amount of orange juice (not a huge orange taste fan), and cut back the brown sugar to 1/3 of a cup. One reviewer said that she only used 1/2 of a large marshmallow after she had them oozing out with a full marshmallow. However, Paula Deen states that if you overcook your Sweet Potato Balls then the marshmallow will burst out of the ball. So be careful not to over-bake them if you choose a whole marshmallow. I chose to roll the balls in chopped pecans and then placed each ball in a cup of a nonstick muffin tin (the recipe made exactly 12 large balls--enough to fill a full tin). I also made some with the coconut mixture. Another option would be to roll them in oats, sugar, & cinnamon OR coconut & pecans. I put the filled muffin tin in the refrigerator overnight and baked the next day after removing my turkey from the oven. They came out perfectly! -- posted by McGowan Family

Ed's Sugar Cookies

This is my husband's recipe and it has withstood the test of time. These delicious cookies are light & airy and fun to decorate. My husband is the Sugar Cookie king in our family and our grown kids still anxiously ask each year if Dad is making sugar cookies this Christmas :). Ed prefers using insulated cookie sheets. Yield and baking time may vary, depending on rolled dough thickness, the size of the cookie cutters and oven accuracy. NOTE: Chilling time is included in prep time. Overnight refrigeration is best, but if you are in a hurry, you can get by with chilling the dough for at least two hours. Do not skip the chilling step or the cookies may not hold their shape. -- posted by Kat's Mom

Ugly Dip

My friend Hannah and her mom used to make this a lot when we went over to their house. It sounds weird, but it is soooo good! I always ate way too much. Serve with tortilla chips or really any chips. -- posted by Marmaduke2

Animal-Free Raspberry Vodka Gelatin Jigglers

This recipe for vegetarian-friendly, alcoholic gelatin jigglers (think Jello Jigglers meets Jello shots) combines fruit flavored vodka, uses seaweed-derived gelatin called agar-agar (as opposed to nondescript gelatin, which is likely to be animal-derived), and reduces paper/plastic waste (no cups). The ratio of water to alcohol is 1:1, so these jigglers are quite alcoholic! For better taste/less alcohol, you might consider reducing the amount of alcohol to 1 1/2 cups and increasing the amount of boiling water to 2 1/2 cups. Of course, it's all a matter of personal taste and preference. The agar-agar powder can be found at your local South East Asian market. -- posted by Thuha

Red Pepper Vichyssoise

This is a lovely soup to serve in the summertime, as it is served chilled. If you prefer, you can substitute sour cream for the creme fraiche. To make creme fraiche, just combine 1 cup of whipping cream with 2 tbsp of buttermilk. Once combined, cover and let stand at room temperature for 8 hours. This will make a cup of creme fraiche. Prep and cooking time does not include the chill time! -- posted by breezermom
