Quicker Kosher Lower Carb Coq Au Vin

This is a combination/variation on several posted recipes for Coq Au Vin to make it simpler, kosher (no bacon or butter) and with less carbohydrates. It got 4 thumbs up when I made it for my family. This makes lots of sauce, so be sure to serve it with rice, noodles or boiled potatoes. -- posted by Jeri Roth Lande

Quick and Easy Garlic Aioli

I was taught to make this Aioli in Spanish cooking classes, it is basically a fast way to make an real (or almost real) Aioli without resorting to using pre made mayonnaise. It tastes great and takes under 5 minutes to prepare.

You will need a thin tall measuring cup or jug and a hand held (vertical or stab) blender.

If you don't like garlic, you can make without.

You can add things like herbs (fresh or dried), black pepper, smoked paprika or other things you like.

Experiment with the amount of oil and lemon juice.

If you want it to be more rich add two eggs yokes instead of one whole egg. -- posted by Claytox

Brandi's Yummy Spinach Omelet

I was experimenting with ingredients I had leftover from making spinach quiche and decided to try making a yummy omelet with some of them. I love pepper so I chose to increase the amount of it in my omelet. I also used frozen spinach. There's no need to thaw it. I used a knife to shave off what I needed. Cheese is optional because this omelet has great flavor without it and is much healthier. If you decide to add cheese I recommend Laughing Cow brand Creamy Swiss. -- posted by Lucidity

Balsamic Chicken Taco Salad

My wife and I were traveling through Old Quebec and ordered a version of this at a roadside diner. WOW...we just about fell over from the first bite. Robin said she could copy this at home...we had no idea what to use for flavoring the chicken until she suggested Balsamic Dressing...and this is the wonderful result. So easy and good. A quick change of pace.
The great thing about this recipe is that all the prep can be done in the time it takes to cook the chicken. Fast and good. -- posted by Chef #1308572

Taste of India Rotisserie Chicken

My hubby came up with this recipe based on a desire to have a rotisserie chicken in our Showtime Rotisserie but was a little tired of the same 'ol rub that we traditionally use. We are both HUGE fans of Indian Cuisine and therefore this fabulous recipe came to be! Hope you enjoy it as much as we do! We have not experimented with roasting the chicken in the oven, but I assure you, if you can let the skin crisp up the same way that it does in a rotisserie..you won't be disappointed! -- posted by Marly Deschauer

How to Soften Brown Sugar Immediately

I got a great buy on organic brown sugar because it was hard as a rock. I'd heard you can throw in whole unpeeled apples or a slice of bread to soften it up, but I never got around to doing it and needed soft brown sugar right away. I couldn't wait a day or 2 to try these techniques. If you live in Idaho or Utah you become familiar with brown sugar that's hard-as-bricks--people in the humid south don't have this problem. A trick to try if your brown sugar is soft and you want to keep it that way--store it in the bottom vegetable bin inside the refrigerator. Your brown sugar will stay nice and soft.
Vinyl Lager Crock Roast

I bought a six pack of Magic Hat's spring seasonal (Vinyl), and loved it so much I wanted to cook with it. Since I normally use deep, dark beers (like Guinness) to cook, and usually only for beef or vegetable stew, this was a bit of an experiment. All day, my apartment smelled AMAZING. Since I had to buy a three pound roast (the grocery store seems to only have VERY large roasts), and I'm only cooking for two people, this made a LOT of leftovers.
I don't usually measure anything, so I'm guessing on a lot of this. Adjust everything to your taste. As for the veggies, I used two small white potatoes, 1/4 of a large vidalia onion, and about 1/2 cup of sliced carrots. Use what you like! The blend of spices is my usual go-to blend, again... use what you like.
Best Homemade Rice Pilaf

Mixture of rice and vermicelli slightly browned with a buttery flavor. I love this with ribs, salmon, or barbecued chicken. This recipe is from my mother-in-law, takes about 1/2 hour to prepare, and you need 2 sauce pans. Don't sub with brown rice because it doesn't taste as good. You can cut the butter a little if you want but the more you reduce butter the drier the rice. Use real butter!
Buffalo Chicken Wing Dip

a great way to enjoy chicken wings without the mess. great served with celery or tortilla chips for dipping. I like to use a crock pot to keep this dip warm during parties, just mix everything up on the stove than transfer to the crock pot or you can use a electric fondue pot on warm too. If you don't want to use those then separate into small batches in oven safe dishes so you can keep the dip warm.
Bistec a La Criolla ( Colombian Style Skirt Steak in Sauce)

This is marinated skirt steak that is cooked in sauce. In Colombia this is eaten by many families every week (my husband had it every Wednesday). Serve it with white rice and beans, avocado, and an arepa or corn cake. The recipe makes more hogao than is needed.
Bacon Mushroom Burger

Credit: Lobel's Prime Time Grilling by Stanley, Leon, Evan, Mark and David Lobel
"Serve these burgers for the ultimate casual Labor Day BBQ. You'll like the combo of ground chuck and sirloin -- a burger made with chuck alone will be juicy but will lack sirloin's deep flavor, while a burger made with just sirloin will be a bit drier." -- posted by Japanese Delight

Easy Tasty Pork Roast

I looked and didn't find any pork roast made this way. This is the way I have made a Pork Butt Roast our entire marriage of 48 years. It is easy and oh so tender, juicy and delicious. I always serve it with mashed potatoes and make gravy from the rich drippings. If you make a large roast the leftovers can be made into many other dishes...even BBQ pork sandwhiches if you simmer some of it in BBQ sauce until it is absorbed. -- posted by CarrolJ

Herbed Burger Patties

We make our burger patties from scratch rather than buying the pre-made supermarket variety, as they're too salty for me. This recipe ramps up the flavour by trading the salt for a variety of either fresh or dried herbs instead.
Pancake Messages

I first made these pancakes messages for my son's 4th birthday and then for the last day of kindergarten. Both times the kids loved them and ate up the pancakes. You can write on them even when they're frozen, which I think is actually easier. You can write any messages you want or draw any pictures you want. Now I make a whole bunch to freeze, take out what I need and write the message/picture right then for either breakfast, snack or lunch. The kids don't even eat them with syrup! Servings and yield are approximate since it depends on how much batter you have-I double mine and get about 60 or so pancakes. Cook times are approximate and include preparing the batter, cooling and writing. -- posted by MonsterMaha

Steamed Taiwanese Meatloaf

Got this recipe from my friend's mom, who makes it with pork. I haven't tried it with the pork, only turkey. Kids love this recipe - it goes well over rice. Best part is that it takes no time at all to make. On days when I don't have time, I simply mix everything together beforehand, cover it in saran wrap and throw the Corel bowl (which I can put directly into a steamer) into the fridge until 30 minutes before dinner time. To avoid using the chicken bouillon I have tried using chicken broth, but I really see no difference in taste. So I normally just make it using water and skipping the chicken bouillon altogether. -- posted by Fluffkins
