Catfish & Okra With Pecan Butter Sauce

From page 222 of The Best of Gourmet, a very tasty way to serve catfish and okra(no breading involved/just roasting!). Prepared it last night after work, very easy to follow recipe. My wife and daughter's friends enjoyed it. The recipe calls for corn, though I omitted in my meal since a family member is allergic to corn. Still tasty. -- posted by Mr.Rich

These curried coconut shrimp balls were absolutely awesome! I was very leary about making these much less trying them - I don't like coconut that much and curry and I - just don't get along! :( However, I tasted these and I was convinced - loved them thoroughly! :) Coastal Living Magazine, December 2009 edition.
Sauteed Flounder With Red Grapefruit Beurre Blanc

Please feel free to substitute any mild tasting white fish of your choice. A non-stick pan works best for sautèing the fish. To say that grapefruit is my favorite fruit would be an understatement, although I would like to test this recipe next time with yellow-fleshed grapefruit. My brother mentioned this combination might taste good on shark and I think he's on to something. Serving suggestion: pan-grilled asparagus, roasted potatoes and a glass of Eola Hills pinot gris. Yesiree! Source unknown. Note: I was planning to use fresh tarragon as indicated in the recipe but sadly the tarragon in my herb garden wilted from the last big freeze. Parsley stepped in and saved the day. Thank you fresh Italian parsley! -- posted by Cookgirl

Crab Imperial from Ocean City, Md

I found this recipe in an article I was reading about Ocean City, MD. It said this recipe came from "St. Paul by the Sea" cookbook which includes many recipes from the various hotels there. This is sooo wonderful! I can't tell you if this came from a hotel or from a local there. No specific amount, other than 'just a bit' of green pepper was printed. The recipe is unusual as it says crackers must be ground fine as sugar. Interesting. -- posted by Debaylady

Little Smoked Salmon Cucumber Cups With Peppered Creme Fraiche

Delightful and EASY little smoked salmon and cucumber appetisers, and healthy too, with NO pastry! These are a breeze to make but they tick all the taste boxes, as well as being elegant. Cucumbers do vary in size, and I have suggested a medium cucumber, which is about 10" to 12" long.........however, any size will do!! Adjust the crème fraiche to how many cups you yield from a cucumber, I managed to make 30 cups and used 10 tablespoons of crème fraîche for that amount, 1 teaspoon per cup. Serve these with cocktails and pre-dinner drinks, or as part of a buffet. The cucumber cups and crème fraîche can be prepared beforehand, but these should only be assembled 1 hour before serving (at the most) and covered in cling film to ensure the smoked salmon does not dry out. Allow 2 to 4 per person, depending on what else is served. -- posted by French Tart

Shrimp Ceviche With Avocado

My son-in-law makes this wonderful ceviche for us every Christmas and New Years, and for the 4th of July too! Everyone loves it! Serve the ceviche well-chilled in small plastic cups or chilled cocktail glasses (I suggest placing the bowl of ceviche within a larger bowl full of ice to keep it icy cold), along with tostadas chips or tortilla scoops and some chili sauce on the side. Very delicious and refreshing! Note: amounts are approximate-- feel free to adjust measurements to suit your own tastes.
Tuna Patties

Simple dinner idea. We serve this with a veggie (usually broccoli or spinach) and either mac & cheese or fried potatoes.

You can use cracker crumbs instead of breadcrumbs. It's just to soak up some moisture.

The patties can be made earlier and set in the fridge. I've never frozen them, so you'll need to do your own experimentation for that!

You can cook these in a George Foreman grill, or in a skillet or frying pan. We like them fried! -- posted by Angel Stowe

Dalmatian Salted Anchovy Salad

This meal is very old, probably from Greek and Roman times 2000 years ago. We in Croatia are very lucky because we can buy salted anchovies from direct producers who make these salted anchovies the same way old Romans did. And I must say, these home made salted anchovies are much, much better than grocery-stores one. Beside anchovy we also salt “srdela” a.k.a. sardine. Srdela is “heavier” to eat, and more cleaning work. It is very salty meal and a person should not eat more than three salted anchovies per day (that’s 6 fillets). This is how we prepare this meal in Dalmatia. -- posted by nitko

Shrimp Imonelli - Low Carb & Low Fat

This is a reduction on calories and carbs for this superb recipe - it is challenging to find one that fits both mine and my husbands needs, however, this I believe fits the bill quite nicely! For it to be low carb, serve over grilled or baked portabello mushrooms. To keep low fat as is, serve over pasta. Bon Appetito! -- posted by Chef #1496457

Smoked Salmon

This recipe takes time, but is well worth it. Use the freshest salmon you can find. It is best to cut the pieces of salmon all the same size so you get even brining and smoking. Great for canning as well. Note: You may add other flavors to the fish such as garlic powder, pepper, soy sauce etc. if you like. The recipe can easily be doubled. You can use your imagination and try other types of fish as well. Even small whole fish. -- posted by RobinAnn

My Mom ran a little restaurant in a bank building and her soups were the best. The most popular one by far was this clam chowder. The only changes I made were to add more clams than she did. I also wait to add the whole milk until the end, because I like mine thicker and that way you can control the thickness to your taste.
Sarasota's Seafood Newberg over Parsley Toast Points

This is traditional Lobster Newberg with my twist. Living in Florida we have great seafood year round basically. And I also love fresh citrus. So I tried to combine both. By the way ... Mom I love you, but those little toast points and puff pastry shells, I just didn't like. I like a nice hearty thick slice of Italian Bread toasted with parsley butter - and then you can cut them in those cute little points. Serve with a cup of creamy roasted tomato soup to start and a side of crisp chilled asparagus salad. Quite Note: I like to use shrimp, scallops and lobster, but you can substitute crab for lobster. To me, the lobster and crab are too similar, so I use one or the other. Also, you can use canned, but for this dish, but ... I highly recommend fresh, it will be well worth it. -- posted by SarasotaCook

The Best Cajun Blackened Salmon Ever.

We eat a lot of salmon (at least once a week) and this is by far my favorite way of preparing it. It's really quite simple, and the end result is so delicious. The sweetness of the apple juice/white wine combined with the spiciness of the Cajun seasoning is amazing. The blackened texture of the fish is also great.
Blackened Indian Salmon

This is a dry-rubbed Salmon recipe with a nice bit of heat and curry-like flavor, without the need for a heavy sauce. Delicious and relatively healthy.
Lobster Stuffed Potato

I got this recipe from a chef who taught a gourmet cooking class many years ago. The recipe is from the award winning restaurant "Windows on The Water" which is in Kennebunkport, Maine, not far from President Bush's family compound. I'm sure you could substitute the lobster meat with imitation crab or lobster. Lobster meat is very expensive; around $23.00 per pound. -- posted by Mainely Debbie

Shrimp Cocktail My Way Please :d

My mom made this shrimp cocktail ever since I can remember. Then I made it for my husband, he thought it was too spicy so then I tweeked it a bit with Clamato Juice. The original recipe does not have any Clamata juice and has equal amount of Salsa Del Pato as Tomato Sauce. I hope you can enjoy it as much as everyone I make it for does. -- posted by Jacob's Mommy

Red Lobster Maryland Crab Cakes

From the Red Lobster restaurant website. These dense yet flaky, firm yet delicate, Maryland crab cakes are a seaside staple. I made these this evening and even my DH who doesn't care for seafood said it was a keeper recipe. I made them just as the recipe states but next time I might try a little more Old Bay Seasoning or pepper (or perhaps a dash of cayenne or red pepper flakes) to bring some more flavor to these wonderful crab cakes. Serve them a’ la carte, in a sandwich or beside a salad. We used Sweet Chili Sauce drizzled on the plate for another layer of flavor -- the Asian type SWEET-chili sauce, not the tomato-based kind you find with ketchup or the hot type of Asian chili sauce -- which complemented these very well and came straight out of the bottle so no extra work.
Some advice on breadcrumbs: I really recommend Panko breadcrumbs. They give these cakes a nice crunchy outside even though very few crumbs are used for breading. Luckily most major grocery stores now carry this product in the Asian product aisle. If you're lucky enough to have an Asian grocery store in your area go there not only to save money but also to take advantage of authentic, flaky, white breadcrumbs that can be use in numerous recipes! Please do NOT purchase Progresso Seasoned Panko breadcrumbs for this recipe. If Panko crumbs are not available to you, use plain (non-seasoned) breadcrumbs for this recipe. -- posted by Croft Girl
