			<description>This is actually based on a suggestion made by another Recipezaar member, SarasotaCook.  I had made a request for ideas to use up some ingredients in my freezer and pantry, and she kindly described how she likes to prepare chicken using the ingredients I had on hand.  I took her idea and this is what I came up with.  Sarasota told me to go ahead and post the recipe, so here is how I prepared it. I used Muir Glen organic for the diced tomatoes.  Note: I removed the skin after cooking and served the meat sliced off the bone; the nutritional facts are assuming you ate all of the marinade, didn't spoon out the fat, and ate the skin.  My chicken breasts were huge and had enough meat to feed 3 servings. I usually use this for dinner parties because it can be prepared ahead of time and takes very little effort. This calls for Cornish Game Hens but I always use mixed pieces of chicken with the skin on! Just watch because the chicken breasts cook faster than the dark meat. I never alter the ingredients but I do marinate it for at least 4 hours or longer. I serve this with garlic-mashed potatoes and broccoli!! Oh- don't forget the last step with the reserve marinade! 			<description>I got this fabulous recipe when I vacationed at Disney's Animal Kingdom Lodge. The soup was on the Boma - Flavors of Africa Buffet. When I inquired about a cookbook with the recipe, the waitress went &amp;amp; got the recipe from the kitchen. This is posted in the same manner I got it, but I'll tell you that finding 1 gallon containers of broth is difficult. So I use 10  14oz cans, it's a little more, but just as good. I also usually use 2 poblanos. Using ready to go chicken tenders is a big time saver. I just sautee them in a little sesame oil &amp;amp; garlic before I dice them.  This soup is very tasty and borderline addicitive. I've made several times since I got back. It is absolutley delicious the next day and freezes well. 			<description>When I was growing up, one of my favorite comfort foods was my maternal  grandmother's chicken and dumplings. &amp;quot;Nana&amp;quot; would stew her chicken and debone it, strain the broth (seasoned with fresh rosemary from her garden), roll her own biscuit dough, then drop hand-cut, flour-rolled dumplings into her broth. It was a lot of work, but she always seemed to have it on the table in minutes! She usually made it when I was sick or not having a great day (my mom too). It's one of those ''little things&amp;quot; my mom and I remember  fondly. This recipe is my adaptation of Colonel Harland Sanders' personal gravy and dumpling recipe, which I've brought a little closer to Nana's... made a lot easier! PLEASE NOTE: THIS RECIPE HAS BEEN REVISED SINCE THE ORIGINAL POSTING, AFTER CHEF #1523855'S REVIEW.  DOUBLING THE BROTH WAS MY SOLUTION (AS I'VE DONE HERE). 			<description>This is my response to craving mexican food but not being able to have the calories. This soup is very filling and low points- 6 1/2 for the whole recipe. You can control the heat of this recipe by the type of salsa you add- I usually use mild. Whatever heat you choose, it should be fresh salsa so the cilantro and other flavours are strong enough. If you really like it hot, add some chillies! I like to use a crock pot to keep this dip warm during parties, just mix everything up on the stove than transfer to the crock pot or you can use a electric fondue pot on warm too. If you don't want to use those then separate into small batches in oven safe dishes so you can keep the dip warm. 			<description>A friend of mine made this soup for a baby shower that I recently attended and everyone loved it!  Fritos or tortilla strips and cheddar cheese are optional topping's as well as the sour cream. I like it the best with only sour cream which make it HEALTHY which is alway a major plus! You do not need to pre cook the chicken, just put it in raw OR frozen, which makes it super easy. For spicer soup, get the spicy RoTel tomatoes and/or Medium or Hot Tostitos Salsa but you will find that it has a lot of flavor and is quite spicy for not having to add any extra spices -- SO easy!! 			<description>This is a great recipe that a friend of mine has been bringing to office pot-lucks for years.  I just got the recipe from him and made it myself.  It's a unique and pretty decadent twist on traditional enchiladas.

You can adjust the amount of green chiles and jalapenos to your particular taste.  This recipe carries a little bite, but is not particularly hot (even using green chiles rated HOT).  To pep it up, use 3 cans of green chiles and 2 cans of jalapenos.

Best part is that it takes no time at all to make. On days when I don't have time, I simply mix everything together beforehand, cover it in saran wrap and throw the Corel bowl (which I can put directly into a steamer) into the fridge until 30 minutes before dinner time.  To avoid using the chicken bouillon I have tried using chicken broth, but I really see no difference in taste. 			<description>This is another custom twist on a recipe from my favorite cookbook.  The original recipe is for Sopa de Elote, a sweet corn soup from Central America.  I don't like vegetarian dishes and I don't like complicating recipes with too many fresh ingredients, so I simplified this and made it meaty.

Consider adding 1-2 tablespoons chopped fresh cilantro or some diced jalapenos to change up the flavor.  You can serve this with warm tortillas, cheese crisp, cheesy jalapeno bread, corn bread, whatever.
