Bacon Wrapped, Filet Mignon

Using real thick and smokey bacon really gives this plenty of flavor. It’s cooked slow, because of the bacon, and, as a result, the fillet comes out real moist. There’s so much flavor in the meat, additional sauce isn’t needed.

Black and Bleu Salad

This is a favorite at a local restaurant I used to work at named Elijah's here in Wilmington. All of the topping measurements are approximate, put as many or as few as you want! The spicyness of the blackening spice and the potent cheese are wonderous with the sweet balsamic dressing. The original salad at the restaurant also includes cherry tomatoes, but since neither I or my boyfriend care for raw tomatoes we left them off! -- posted by Julia Lynn

Basic Meatloaf

My mother never used a recipe when making meatloaf so I never had one to go by when I grew up. I found this recipe in a magazine at least 35 yrs ago and have used it ever since. In fact, I don't actually use the recipe any more... since it's memorized. Recently, my son asked for the recipe so I suppose I need to enter this in the db for future reference.
This is comfort food around here... served with either mashed potatoes or rice, gravy, and peas & carrots. Also makes the best meatloaf sandwiches! -- posted by Impera_Magna

Rat Mash (Grain Free Dog & Cat Food)

We have two chihuahuas and two cats, all under 8 lbs,(the rats, as we call them) that we make this dish for. This will feed all four animals for two meals. Dogs and cats shouldn't eat grains as they make them fat (just like what happens to people when they eat grains) and they're not easily digestable. Cats need a high protein/fat diet and it for sure won't hurt dogs to eat it either.
--------------------------------------------------------------------------------------------------
Just like people, our animals get a varied diet. Try not to feed them the same meal day in and day out. Our pets have the softest, shinest coats, clean teeth, a healthy weight, don't have the bad breath and "wet dog" smell that grain fed animals have.
--------------------------------------------------------------------------------------------------
This can be stored in the fridge for up to 4 days. -- posted by ThatSouthernBelle

Winter Stew

Quick and easy, yet surprisingly delicious and hearty. Ground beef, potatoes, cabbage, broth and seasonings make this a fast and tasty dish sure to please your family! Serve with rolls or a nice crusty bread and sliced cheese.

I came up with this on one of those 'there's nothing in the house to eat' nights and the kids loved it! They named it Winter Stew because it was in the winter and it's been a winter staple on our menu ever since. We've also made this with Steak-Umm and it's great with that too! Just chop the Steak-umm into small pieces, cook, and remove from pan until adding the cabbage. -- posted by The Frugal Cheflady

Everyday Meat Loaf -- Meatballs -- OAMC

A moist and tasty meatloaf recipe. Perfect with boiled mashed red-skin potatoes and crispy, steamed green beans. The way it's cooked keeps it out of the grease & everyone who has tried it, loves it! --Let's face it - there are some incredibly awful meatloaf recipes out there. Some of the worst I've found were at restaurants! --This particular recipe is (adapted over the years) from my Mom's 1942 Betty Crocker cookbook - which she used the whole time I was growing up. She gave me the cookbook when I married. --In November of 2009, I made this for 20 people at "fish camp" in the Outer Banks of NC. Compliments galore! I was asked for the recipe by 10 attendees (the other 10 are in my family) --I also use the meat from the second loaf to make meatballs that cook well (fresh/frozen) in the crockpot on low covered in sauce. --Uncooked loaves/meatballs flash freeze well for OAMC. -- posted by DriverMama

Tortiere

I went hunting recently for a tortiere recipe, this is an amalgamation of several recipes and my personal preferences to boot. And to add to the debate of what to serve with tortiere? My family likes HP sauce with theirs.

For the pastry you need a double-crust pie dough, chilled for an hour. I usually make the full block of shortening, and add an egg and a tablespoon of vinegar to my water, it makes an awesome crust. Even though I am now making dough enough for 3 double-crust pies that way. The rest I often turn into butter tarts or an apple pie, no one ever complains about that! -- posted by MummaKat

My mother got this recipe from my grandfather's mother. Phew! She lived her life in southern Hungary. I have loved it since I was big enough to help mom peel the cabbage leaves. You could probably substitute diced tomatoes for the can of whole tomatoes, but I have never tried it that way. I still fix it the way I was taught as a little girl. I have also tried Bavarian Sauerkraut and its just as good. -- posted by saharann

Herb Crusted Beef Tenderloin

Published in Cook's Country magazine, Dec/Jan 2007. A whole beef tenderloin can be an expensive cut of meat but three distinct crusts - the oven-seared meat, the herb paste coating, and the herbed bread-crumb crown - make this roast perfect for special occasions. Begin the recipe 2 hours before you plan to put it in the oven. The tenderloin can be trimmed, tied, rubbed with the salt mixture, and refrigerated up to 24 hours in advance; make sure to bring the roast back to room temperature before putting it in the oven. Serve with Recipe #408760. -- posted by swissms

Grandma Lee's Meatball Soup

In 1930, my Great-Aunt Lucy was a new bride, and mortified to realize that she didn't really know how to cook. She asked my Grandma Lee for help. Lucy showed me a stack of recipes in my grandmother's handwriting. She and I made this one together. Grandma hadn't made it for me, but my mother made the more traditional (and expensive version), Konigsburger Klopse, with white sauce and capers. This is the Depression Era version.
Monday Supper! Curried Lamb and Chutney Rissoles/Patties

A tasty and different way to use some of the Sunday Roast leftovers on Monday! Although I have specified lamb in this recipe, beef would also work very well, it's just that I had roast lamb leftovers when I made these. These rissoles are lightly spiced and tangy - perfect for supper when served with salad, pickles, chutneys and maybe a naan bread or pitta bread to make a sandwich. They are easily made and can be prepared ahead of time and left in the fridge, as they hold their shape better when they have been chilled and are firm. These will also freeze very well; open freeze them before frying on a tray or plate until firm and then pack them into freezer bags or a plastic container. They only need about 6 hours to defrost and then are cooked as instructed below.Use curry powder to taste, I use 2 teaspoons as I like mine quite spicy! -- posted by French Tart

Beef Bourguignon

After growing up relishing my mother's beef stew, I stumbled onto a decadent equivalent from Julee Rosso & Sheila Lukins wonderful cookbook, "The New Basics" in the early 1990s. 20 years later and it's still a favorite winter staple. My version is a bit simplified from the original, but as long as the wine and bacon are included, the results will be savored by all. -- posted by Rutecki Family

Homemade Chili

Any time I see beef on sale, I think chili. This recipe comes together very easily and can be modified to fit your needs. I wrote an hour cook time but as long as you do not allow the chili to thicken too much and stick to the bottom of the pot, you can simmer for as long as necessary. If the chili does start to stick, add a cup of water at a time until it loosens. I served with a steam in the bag portion of Spanish rice and it was delicious! Feel free to garnish with whatever you like including cheese and sour cream. -- posted by carrie680

Vinyl Lager Crock Roast

I bought a six pack of Magic Hat's spring seasonal (Vinyl), and loved it so much I wanted to cook with it. Since I normally use deep, dark beers (like Guinness) to cook, and usually only for beef or vegetable stew, this was a bit of an experiment. All day, my apartment smelled AMAZING. Since I had to buy a three pound roast (the grocery store seems to only have VERY large roasts), and I'm only cooking for two people, this made a LOT of leftovers.
I don't usually measure anything, so I'm guessing on a lot of this. Adjust everything to your taste. As for the veggies, I used two small white potatoes, 1/4 of a large vidalia onion, and about 1/2 cup of sliced carrots. Use what you like! The blend of spices is my usual go-to blend, again... use what you like.
Bacon Cheeseburger Soup ( Paula Deen )

This recipe is from Cooking with Paula Deen magazine Nov/Dec 2009. This soup is warm and hearty. People of all ages loved it and it is a fast family supper. You can double it easily and freeze the second portion for later. It tastes more like a regular cheeseburger to me. I garnished mine with some cheddar cheese as well. Served with my Hamburger Bun Toasts recipe also from Paula Deen in that same issue that she used to accompany it. Hope you like it.
Bacon Mushroom Burger

We make our burger patties from scratch rather than buying the pre-made supermarket variety, as they're too salty for me.
