Sarasota's Foil Pouch Oven Roasted Asparagus

No clean up, 20 minutes, easy and healthy. Nothing more to say. This also will work with green beans, brussels sprouts, zucchini and summer squash, and mushrooms. I just change the seasoning a little (thyme with squash; rosemary with mushrooms and brussels sprouts) and otherwise, a great easy way to make a roasted flavor with no clean up. You may not get that dark caramelized color, but ... for a quick easy vegetable side dish, I love it. -- posted by SarasotaCook

Iced Coffee the Easy Way!

I see lots of recipes for iced coffee, and I have an easy way to make it! My hubby drinks a cup of coffee every morning, so as not to waste the rest of the pot, I began adding Splenda and Coffeemate powder to the hot leftover coffee. You can use the powdered creamer(I prefer Coffeemate)ay flavor, or the liquid kind. If you like the flavored ones, go ahead! Mine keeps about a week. Sometimes I might want a cup of coffee in the evening, so I just put some of the "leftovers" lol in a heat-proof cup and pop it into the microwave for a minute or two. Great either way! Mine keeps for about a week. -- posted by FLUFFSTER

Salsa

A mild tomato and sweet pepper salsa with cilantro and lime. Easy and fast to make using a food processor, but can be prepared by chopping the vegetables by hand if a food processor is not available. For a thicker salsa squeeze some of the juice out of the peppers and onions after processing and before adding the other ingredients and strain some of the liquid from the canned tomatoes before adding them to the mix. -- posted by Chef #578370

Marmie's Roasted Red Pepper and Garlic Bread Butter

This is an ,exquisite, mellow , really easy and somewhat fancy garlic bread. A must to try!
My Aunt Dawn told me of something that she makes that all her kids love and I thought I would try to imitate it.
This is what I came up with.
Often I make tonnes of roasted garlic and red pepper and freeze it for later ease of use. (fresh roasted red pepper is really nicest)

Tropical Chicken (Gluten Free)

From the Gluten Free Club. I don't usu. cook with fruit (bcz of DH), but I do like the flavor of the pineapple. So my DH picked out the pineapple, but liked the rest of it! In the US, we have 20 oz cans of pineapple and that worked fine. I didn't use the stock cube and would sub. shicken stock for the 1/4 C water instead next time. I just realized I read the curry powder wrong and put in almost 1 tablespoon of sweet curry! I would probably do that again, as it wasn't too much. I don't think you need to simmer it for 20 minutes, if you are short on time and you thoroughly cooked your chicken in step 1. -- posted by WI Cheesehead

Polenta With Mushrooms and Fontina

Be sure the Polenta is very soft (almost pourable) when spreading it in the baking dish. If necessary, thin with a little hot water. It will firm up as it bakes. Serve with a green salad or as a side dish to roasted chicken or meat.
Roasted Winter Squash Soup

Pumpkin and winter squash are so nutritious & versatile. I just love them. Rich taste, full of beta carotene, filling but not fattening & inexpensive - gotta love these vegies! Used a Golden Butternut to make this soup last night. It was the first use of our version of Sherry Peppers (habaneros, cinnamon sticks, allspice berries, black peppercorns in dry sherry) - turned out mighty well. I subbed hot pepper & dry sherry into this recipe as Bermuda Sherry Pepper is hard to come by. The squash cooked down to a beautiful thick orange base that did not need pureeing - the carrot bits were soft too but added a bit of texture which was appealing. Keeps well for reheating in microwave without separating too. Posting at request of DN who wants the recipe after tasting. We served with hot fresh Recipe#118283 made with rosemary & sultanas. -- posted by Buster's friend

Daddy's Pulled Pork- Texan Style!

Pork butt was on sale recently for under $1 per lb. In this economy you want to take advantage of those kind of sales. This was perfect for a get together at our place where we needed to feed lots of people over the weekend! This also doubles very well. We smoked 15 lbs using the same recipe, doubling the brine and rub.

DH loves Alton Brown, so I gave him Alton's recipe as a place to start. DH must be trained well because he wrote (scribbled all over the printed recipe that is) how he changed it up, gave it back to me and said "Baby, would you post this please?" lol Gotta love that man! -- posted by mama's kitchen

Apple Pumpkin Bisque

It’s amazing when two ingredients intertwine so perfectly, that regardless of how hard the palate may try, it can’t coax them apart. That’s what happens to the applesauce and pumpkin purée in this sweet and savory soup. The pumpkin gives substance to the apple; the apple makes the pumpkin sweet and tangy. Eaten together, they become a totally new taste sensation -- and a great way to fit fruit and veggies in!

A1 Ultimate Guacamole

I got this recipe from a Mexican guy I met in America. This lives up to expectation, unlike other guacamole's I've tried. This is best eaten straight away but contrary to popular belief you can actually store this in the fridge for a couple of days. Put into a bowl and cover with a very thin layer of olive oil then put cling film over so that it touches the guacamole itself. -- posted by robd16

Mama's Meatloaf Shared by Mammie

My mother (from Arkansas) was an excellent cook, Everyone that ate her food made that statement. I have made this myself for over 40 years & everyone gobbles it up. Please try it first without changing ingredients. Then if you like switch it around to suit your taste. People that don't care for bell peppers even love this. I like to have mashed potatoes & gravy made from the drippings with it.
