When I make this, I usually "wing it", the list of ingredients and quantities are only a guide (its my family's preference).
Grandma Chiesa's Ravioli

This recipe came from my grandma Chiesa, and is absolutely the best. I'm 63, so you can figure how old the recipe is. It's authentic except for the wonton wrappers -- she made her own ravioli dough, which you can do, too. However, my sisters and I find the wrappers to be as good as her dough was, and some ravioli dough recipes to be not half as good. -- posted by Ceil from NJ

Pierogi Filling

I grew up on Mrs. T's, never knowing what a homemade pierogi tasted like. I still have love for Mrs. T's, but there is nothing like a homemade pierogi; it's the ultimate comfort food for me. I won't bother to put up a dough recipe since there are so many good ones out there but I will advise never to trust a pierogi dough recipe that doesn't call for sour cream. So here are my recipes for potato and cheese, cabbage, and meat fillings. I try to cut a few corners since making pierogies is an all day event. They are all my own creations with the exception of the hunter's seasoning mix which I found in a traditional polish cookbook called "Polish Holiday Cookery" by Robert Strybel. You can make your own mix by using the instructions below or order the seasoning mix from an online food exporter or specialty store. -- posted by OwlMonkey

Yuliya was one of my exchange students from Russia and this was one of the meals she would often prepare. I thought I would share it with you guys. Yuliya's words of advice: "Don't get the dough too thin, or they'll tear in the water!" -- posted by Chief Teer

Italian Pasta Salad

This is a great tasting pasta salad that doesn't have alot of liquid dressing so its great to take to potlucks and picnics where your eating on paper plates. Its great if you let it set but not to bad served right away either. I have also added cubed chicken to this and it's pretty tasty -- posted by Ceezie
