Shrimp and Roasted Corn Ravioli

Again, I stole this one from Mike Kalina, who got it from the Park Hayatt in Washington, D.C. I changed the recipe by roasting the corn-I like the smokey taste with the shrimp.
What I like most about this recipe (other than the fact it's quick and easy) is how many tasty variations there are. You can use prepackaged alfredo sauce or make your own, or change it by using a cheese sauce or even tomato sauce.
Crab and Prawn Ravioli in Seafood Bisque

This is a dish I learned to make at Leith's cooking school in London. It takes a little work, but is divine. You could make the pasta dough, filling and sauce ahead of time, but I recommend cooking the pasta as soon as possible after you've made it. If you must store it for a few hours, then separate the ravioli with plastic wrap or parchment paper to keep them from sticking together. -- posted by Sackville

Bill's Homemade Crab Tortelloni Tuscany

This is my husband Bill's recipe. He's a wonderful Italian cook who learned how to make Italian food from a Sicilian couple whose restaurant he worked in while in his teens. He made up this particular recipe when his roommate of his bachelor years came home with crab and asked him to do something with it. It takes some time to make by hand, but if you purchase ready-made tortellini, the whole recipe can be prepared in about an hour. All you will need are the sauce ingredients. We hope you enjoy this dish as much as we do! -- posted by Recipe Junkie

Linguine With Shrimp in Tomato White Wine Sauce

There's a fairly similar recipe here, but it uses chopped tomatoes and doesn't call for basil. I like my more flavorful version that creates a nice, smooth sauce. My version of this dish appeared in the "Measure for Measure" cookbook (Vol. 2) put out by the Vienna Falls (VA) Chapter of the Sweet Adelines in 1991. Fast and easy, but good enough for company! -- posted by Cindy W.

Shrimp Asparagus Alfredo

This is so easy. This just recipe came from cleaning out the fridge one day. My family loves it, so do guests. This takes about twenty minutes, but tastes tlike you spent hours. Serve with a green salad, and garlic bread. You can't loose. This doubles well. -- posted by Chef #Mykidsmom

Pasta Seafood Salad

Yep! Another seafood salad. This one is from "KCTS Cooks-Favorite Recipes" cookbook. Sent in by Carol out of Seattle. She says this is one of her favorite pasta salads. She has brought this salad to lots of potlucks and it has always been a great hit! I haven't tried it yet so if you do, please let me know how it turns out. :) -- posted by TeresaS

Tuna Tortellini Casserole

I stole this idea from one of those dinner assembly place menus. The addition of tortellini as the "noodles" in tuna noodle casserole almost makes it decadent. It is still just a basic tuna noodle casserole recipe - not really meant to be real spicy or or exciting :-) Just comfort food . . . -- posted by WorkingMom2three

Cheesy Baked Tortellini With Salmon

A dish with a helpful shortcut, and easy too! Serve this yummy dish with a fresh green salad and some crunchy bread to scoop up the "homemade" sauce. The fish, pasta and sauce all finished at the same time and I literally spent 30 minutes from start to finish to make this meal as the prep time overlaps with the cooking time. -- posted by Nif

Fresh Broiled Salmon With Saucy Cheese Tortellini

The cooking time are approximate depending on the thickness of the fish. We really loved this and hope you do too! Note: Any fresh salmon can be used for this. Just try to buy high quality salmon as it tastes so much better. Check to make sure you have enough wine in the broiler pan. You will need it for the sauce. -- posted by CJAY

Shrimp Ravioli With a Tomato Vodka Cream Sauce

I have been making these for years - ever since I moved to FL where shrimp is so affordable. They are light and creamy. Wonton wrappers make this easy to make and the creamy sauce is a quick 10 minutes on the stove. I often make these ahead and freeze ... then when I need them, just pop them in some boiling water, heat up my sauce, and dinner is ready. Serve with a traditional crisp salad (I happen to like a grilled romaine salad) and then of course some crusty garlic bread. A nice twist to the traditional cheese or beef ravioli. -- posted by SarasotaCook
