Minted Peas and Pasta Salad

This is an adopted recipe that I haven't yet tried. The original chef comments: "Trust me, really. This salad is one of the best I have ever made. I came up with this about 5 years ago to use the fresh peas and mint I had in my garden. Let me know what you think!" -- posted by ms_bold

Tortellini Salad Primavera

From Quick Vegetarian Pleasures by Jeannie Lemlin. It turned into a nicely exotic salad with common ingredients. I use Gnocci [sweet potato] instead of the Tortellini tonight and it was wonderful. Also tweaked the lemon juice to Rose's Lime. Again wonderful. Feel free to play with the veggies and use what is in season for the best brightest taste -- posted by DR. House

Greek-Style Spinach and Egg Tortellini Salad

I have made this many times to serve to guests in the summer season, it is delicious! You can adjust all amounts to taste and double the recipe to serve more than six. Plan ahead the tortellini needs to chill in the dressing for a minumum of 4 hours or up to 24 hours. Don't be tempted to use more than 1 teaspoon (or less) of fresh garlic, or the garlic flavor will overpower the salad, you can use garlic powder in place of fresh, if you are not a garlic-lover then omit completely, this dressing is good even without the garlic! If you want to serve more dressing on the side, then prepare two separate dressings and use one to marinate the tortellini in and one to serve on the side. -- posted by KITTENCAL

This is a filling salad as is but you can add in some cooked chicken breast strips if desired. Also I like to add in a few tablespoons of Parmesan cheese to the dressing but that is optional. Plan ahead the tortellini needs to chill with the dressing for a minimum of 4 hours or up to 24 hours. Do not use more than 1 teaspoon minced fresh garlic or it will overpower the salad, or you can omit the garlic totally. -- posted by KITTENCAL

Chicken Pesto Pasta Salad

Super easy pasta salad- wonderful for any thing from a brunch to a summer dinner. Everyone likes it- even my picky 3 year old! My husbands co-worker brought this to share for an event and he begged for the recipe. The only particular is that the pasta salad will taste best if you use the pesto in a plastic container in the refrigerated section. The serving size stated is the pasta salad as main dish- in a pot luck or as a side it serves a lot more. -- posted by MistressRach

There are many variations on ingredients that will make it healthier, but I suggest trying the original first since it is sinfully delicious. -- posted by 921195

Tortellini Salad With Fresh Basil and Tomatoes in Vinaigrette

I took an idea from Michael Chiarello on the Food Network, and tweaked it according to a favorite vinaigrette recipe of mine. This is a delightful main-dish salad on a hot summer night. Grill up some foccacia, brushed with a good olive oil like Frantoia or Ravida, and serve it in pie-shaped wedges alongside. Good eats! -- posted by Maumeeprof

Caesar Salad With Tortellini and Asparagus

I was thumbing thru an old Summertime Southern Living magazine and found this recipe..I made it for dinner and we loved it...putting it here for safe keeping.
Quick Tip: Start with hot water for faster boiling and cook fresh pasta and asparagus together in the same pot. This does not work for all pasta dishes, but works well here since cooking times are the same. -- posted by CIndytc

Tortellini Salad

A simple tortellini salad with veggies and a vinaigrette dressing. Simple, and tastes great warm or cold!

I got this recipe from a former roommate, and we used to eat it pretty much weekly. This keeps well in the refrigerator, but you can eat it right away too. The feta cheese adds a nice punch, but the mozzarella makes for a more comfort-food feel; try both if you'd like!
