Tortellini With Broccoli

Another great recipe from The Best Slow Cooker Cook Book Ever. It's one of my favorites! The recipe warns not to over cook it because it will turn mushy, but I've never had a problem with it. The tortellini is found in the refrigerated section of the grocery store. -- posted by JESMom

Chicken and Spinach Rigatoni Casserole

Quick, easy and delicious. The recipe calls for 4 garlic cloves, but I only added 2 and should have added 3-4 cloves. I also added more parmesan because of preference. This is a hit with the kids.
Turkey and Tortellini Tetrazzini

This is a great use for that leftover turkey! I got this recipe from the Raleigh News and Observer from a syndicated column called "Desperation Dinners". I tried it tonight and it was tasty. The original recipe called for 16oz of frozen cheese tortellini, but I could only find 20oz of fresh. It doesn't really matter since you add the tortellini after it has been cooked to the other mixtures. I'm listing here as I made it. Hope you enjoy! -- posted by DeniseBC

Another of our South Beach favorites, healthy and oh so delicioso! Inspired by a recipe we saw on the South Beach Diet website. Fresh whole wheat tortellini can be found in many higher end grocery stores but you can easily substitute with 8 oz whole wheat penne rigate which is readily available in most grocery stores these days. Other ingredients are easily adapted to your individual tastes as well. Manja! -- posted by Moogliwoogli

Sausage Tortellini Alfredo

A wonderful combination of rich alfredo sauce and three cheese tortellini -with veggies and Italian sausage to make matters worse (or better!).
10 Minute Lasagna

Another recipe from Real Simple magazine from a few years ago. Super fast weeknight supper. Using cheese ravioli instead of traditional lasagna noodles condenses three steps into one. Using the ravioli straight from the freezer could not be more simple. Easily adapted to whatever addins/substitutions you like. I use my own homemade pasta sauce, quickly wilt fresh spinach in the microwave, and throw in some olives, mushrooms or whatever I might have on hand. You could add browned ground beef or italian sausage to the pasta sauce if you wanted it a meaty lasagna. -- posted by Chohertz

Spinach Tortellini

I got this recipe out of a magazine at my mother in laws house. I tried it and it is very tasty and easy. My kids even eat it so it is a good way to get them to eat spinach. You can even buy the spinach tortellini instead of the cheese if you want. Hope you enjoy! -- posted by Chef #897206

Alfredo Chicken Supper

I downloaded this recipe off of TOH and revamped it. No chef was given for this recipe. I added more ravioli than 12 called for because it was too saucy for us. I used white brick cheese as that is all I had and it turned out great. DH loved the recipe. The recipe called for 2 boneless but I cut mine into four small ones and then put the two chicken breasts close together with one slice of cheese over it. I am going to put 2 to 4 servings. The recipe called for 2 but I could not eat all of mine and DH finished my plate. DH does like to eat:) -- posted by happynana

Tortellini Salad With Fresh Basil and Tomatoes in Vinaigrette

I took an idea from Michael Chiarello on the Food Network, and tweaked it according to a favorite vinaigrette recipe of mine. This is a delightful main-dish salad on a hot summer night. Grill up some foccacia, brushed with a good olive oil like Frantoia or Ravida, and serve it in pie-shaped wedges alongside. Good eats! -- posted by Maumeeprof

Three-Cheese Tortellini With Creamy Italian Sausage Marinara

This is a dish I invented to try and get my picky-eater son to eat something other than macaroni and cheese, hotdogs, or hamburgers! He always thought regular marinara sauce was too "strong tasting"....I think it is just too acidic for him. However, he loves cheese and loves italian sausage. Much to my surprise, I have found that I love this dish as well. I prefer to make the sauce myself, but if you are pressed for time, substitute your favorite pre-made sauce and just add the italian sausage and cream. If you aren't a fan of italian sausage, substitute 1/2 the sausage for ground beef or ground turkey. The rosemary is optional. I like it, but some don't like the taste. If you don't have a picky eater, I would add some mushrooms and possibly some bell peppers. I think those would be nice with the dish. -- posted by breezermom

This is from "Lidia's Italian Table: Italian American Favorites" by Lidia Matticchio Bastianich, author and host of the PBS television series of the same name. The shape of the pasta (orecchiette means "little ears" ) soaks up the flavorful sauce. This is a one-dish meal, very hearty and very satisfying.
Garlic Fettuccine With Roasted Vegetables, Olives and Marinated

This is a result of combining roasted vegetables with a basic garlic pasta recipe and then adding black olives and marinated feta. It's really great! You can change the roasted vege selection to whatever is in season at the time and add more or less of anything that you like, you can't go wrong - just think of it as 2 meals combines into one with feta and olives to boot!
Cheese Tortellini With Creamy Pesto Sauce

This recipe is quick and easy. You may want to use fresh ingredients; however, I cooked with what I had in my kitchen and created this recipe myself.
Would You Like Some Tortellini With Your Cheese?

I love baked pastas and lasagna-type dishes, so I figured I'd make up my own this last winter with what was in the house. Well, before I knew it, I had more cheese than anything else! So...If you're a cheese lover, this dish is for you! :) It would be easy to "customize" though, which is what I do with many recipes. It would probably be good by cutting some cheese and adding varied veggies (some suggestions: mushrooms, spinach, squash, eggplant, and so on). Have fun, be creative, and enjoy! -- posted by Greeny4444

Pierogi Filling

I grew up on Mrs. T's, never knowing what a homemade pierogi tasted like. I still have love for Mrs. T's, but there is nothing like a homemade pierogi; it's the ultimate comfort food for me. I won't bother to put up a dough recipe since there are so many good ones out there but I will advise never to trust a pierogi dough recipe that doesn't call for sour cream. So here are my recipes for potato and cheese, cabbage, and meat fillings. I try to cut a few corners since making pierogies is an all day event. They are all my own creations with the exception of the hunter's seasoning mix which I found in a traditional polish cookbook called "Polish Holiday Cookery" by Robert Strybel. You can make your own mix by using the instructions below or order the seasoning mix from an online food exporter or specialty store. -- posted by OwlMonkey

Tortellini and Ham

A quick any night dinner fix when you are short on time and don't know what to make - from June 2009 TOH's Simple and Delicious. CAN be adjusted to suit your tastes and what's in the fridge/pantry! Recipe calls for frozen peppr strips, thawed. I have never used those so I modified it to use fresh peppers quickly sauteed. **Also think red pepper flakes would be good in this - asparagus.
Tortellini Salad

I got this recipe from a former roommate, and we used to eat it pretty much weekly. This keeps well in the refrigerator, but you can eat it right away too. The feta cheese adds a nice punch, but the mozzarella makes for a more comfort-food feel; try both if you'd like!
