This recipe, from Karin Calloway of the Augusta Chronicle, eliminates many of the steps in creating traditional lasagna. Instead of the cheese mixture and noodles, you use cheese ravioli. You layer the ravioli with meat sauce and mozzarella cheese and bake. Voila! -- It's "Not" Lasagna; and it is delicious and perfect for a weeknight supper. -- posted by Lorraine of AZ

Olive Garden Toasted Ravioli - Copycat Recipe

Sold as a finger-food appetizer along with marinara dipping sauce, Olive Garden's delicious breaded ravioli can be cloned with ease using one of several varieties of premade raviolis carried in just about any supermarket. It's best to use the fresher raviolis found in the refrigerated secion, but you can also use frozen raviolis, you just have to let them thaw first before breading them. The Toasted Ravioli at Olive Garden has a beefy inside, but you can use any ravioli that tickles your fancing including chicken, sausage, vegetarian or cheese. As for the breading, find Progresso brand Italian style breadcrumbs. Contadina is another popular brand, but their version is much to salty for a good clone. I borrowed a friend's cookbook entitled Top Secret Restaurant Recipes 2 and wanted to put this recipe here so that I wouldn't lose it. -- posted by Crafty Lady 13

Mrs. Dreyers Tortellini Soup

Let's take a trip back to the winter of 2000. My roommate living in the Phi Sig house was Chris Dreyer. We both are from the Bay Area so we would carpool to and from AZ for Christmas break. When we finally got to his house in Palo Alto, his mom had this waiting on the stove top (Shout out to Linda Dreyer). I ate it again and again that break. 2 years ago when I was back home for Christmas Mama Dukes made it for an informal dinner party to rave reviews, enjoy! -- posted by dane thomas

Turkey and Tortellini Tetrazzini

This is a great use for that leftover turkey! I got this recipe from the Raleigh News and Observer from a syndicated column called "Desperation Dinners". I tried it tonight and it was tasty. The original recipe called for 16oz of frozen cheese tortellini, but I could only find 20oz of fresh. It doesn't really matter since you add the tortellini after it has been cooked to the other mixtures. I'm listing here as I made it. Hope you enjoy! -- posted by DeniseBC

Sausage Tortellini Alfredo

A wonderful combination of rich alfredo sauce and three cheese tortellini -with veggies and Italian sausage to make matters worse (or better!). This is not for the faint of heart for calories, but that's why they invented the "just a garden salad for me" lunch! :)
This recipe looks fancy enough for company but uses pre-made sauces and pasta for convenience. I have used Buitoni refrigerated pasta and sauce as well as those listed in the recipe. Using homemade versions could only make it tastier! -- posted by Ma Field

Chicken Pesto Pasta Salad

Super easy pasta salad- wonderful for any thing from a brunch to a summer dinner. Everyone likes it- even my picky 3 year old! My husbands co-worker brought this to share for an event and he begged for the recipe. The only particular is that the pasta salad will taste best if you use the pesto in a plastic container in the refrigerated section. The serving size stated is the pasta salad as main dish- in a pot luck or as a side it serves a lot more. -- posted by MistressRach

A fresh and savory mix of flavors. This is a nice weeknight dinner--I prep the ingredients the night before, then turn into crock pot before leaving for work. Frozen chicken doesn't need to be defrosted ahead of time. Don't forget to sprinkle parmesan on top--it's a crucial last step! **After reading 1st review and making this again I was reminded that I normally do add more water than the original recipe called for, so I have updated amounts below!** -- posted by LexingtonMom

Spicy Chicken Rustica on Ravioli and Arugula

Just made that name up.... This was super flavorful and simple to make. We were fighting over the last serving at lunch the next day. This was one of those "here's what I have, so what can I make?" I think I would have added some black olives if I'd had them but that's the ONLY thing I would change for our taste. I used Classico's Spicy Tomato and Basil Pasta sauce (my very favorite in a jar). I also add a dash of cayenne which is not included in the ingredients listed.
Cooking the arugula takes a lot of the bitterness out but adds a "nutty" flavor to this dish. You can use spinach in replace of the arugula if arugula is unavailable. -- posted by sassafrasnanc

Three-Cheese Tortellini With Creamy Italian Sausage Marinara

This is a dish I invented to try and get my picky-eater son to eat something other than macaroni and cheese, hotdogs, or hamburgers! He always thought regular marinara sauce was too "strong tasting"....I think it is just too acidic for him. However, he loves cheese and loves italian sausage. Much to my surprise, I have found that I love this dish as well. I prefer to make the sauce myself, but if you are pressed for time, substitute your favorite pre-made sauce and just add the italian sausage and cream. If you aren't a fan of italian sausage, substitute 1/2 the sausage for ground beef or ground turkey. The rosemary is optional. I like it, but some don't like the taste. If you don't have a picky eater, I would add some mushrooms and possibly some bell peppers. I think those would be nice with the dish. -- posted by breezermom

Crock Pot Cheese Tortellini and Meatballs With Vodka Sauce

I'm always looking for easy meals for those busy weekdays. My husband and I both work and have two children that are very active in extracurricular school activities. I like meals that I can just throw in the crock pot before I leave for work and have dinner ready when we get home. This was something I put together and somehow it keeps getting requested. -- posted by ARathkamp

Chicken and Veg Laksa

Very simple Laksa adapted from a friend's menu plan. Not too hot, but if you like it spicy add some finely chopped red chilli. I have added extra veggies in this - the original had just broccolini and red capsicum.
Soy sauce can be substituted for fish sauce if wanted, and prawns or tofu for a variation on chicken. -- posted by Bungy

Chicken and Mushroom Tortellini

Simply the smartest way to cook Tortellini, in the sauce! This is my 12 year old son's all time favourite recipe. It comes from Sandi Richard's Life's on Fire cookbook. As she assures, it might look watered down while you are cooking it, but it ends up just perfect when it is done.
Ravioli With a Wild Mushroom Creamy Alfredo Sauce

My daughters and I are total Twilight fanatics. To celebrate the release of the dvd, we all got together for dinner before watching the movie. For the entree, a recipe for some type of Mushroom Ravioli was a natural choice since this is what Bella ordered when Edward took her to dinner. After searching online, I found a casserole type recipe for ravioli that had a mushroom sauce. A salad and Recipe #362337, named after the color of Edward's eyes, completed the meal. We thought the original recipe as written was a little on the bland side. So I went to the Italian forum asking for help with the recipe and Chef Dee514 was kind enough to give me suggestions for the recipe. I have now made the recipe incorporating her ideas and although it wasn't suggested, I did opt to leave in the container of alfredo sauce. Much better than the original recipe I had posted and I hope you'll think so too! Huge thanks and hugs to Dee514 for all her help!! :) -- posted by Dreamgoddess

Pierogi Filling

I grew up on Mrs. T's, never knowing what a homemade pierogi tasted like. I still have love for Mrs. T's, but there is nothing like a homemade pierogi; it's the ultimate comfort food for me. I won't bother to put up a dough recipe since there are so many good ones out there but I will advise never to trust a pierogi dough recipe that doesn't call for sour cream. So here are my recipes for potato and cheese, cabbage, and meat fillings. I try to cut a few corners since making pierogies is an all day event. They are all my own creations with the exception of the hunter's seasoning mix which I found in a traditional polish cookbook called "Polish Holiday Cookery" by Robert Strybel. You can make your own mix by using the instructions below or order the seasoning mix from an online food exporter or specialty store. -- posted by OwlMonkey

Confetti on a Plate – Italian Garden Tortellini

In the blue-collar towns where I grew up the Italians were known for their colorful, productive gardens where they raised large amounts of food on tiny, urban plots. This colorful pasta dish, loaded with just-picked summer vegetables, is a tribute to that memory. But if fresh vegetables and herbs are not available you can use frozen veggies or dried herbs (1/3 as much). The recipe can easily be halved or doubled and it holds well for potlucks and picnics. Feel free to adjust the amounts and types of vegetables to use the fresh, seasonal items you have on hand. The goal is a colorful variety of flavors. -- posted by 3KillerBs
