Raspberry Creme Fraiche Tart

I got this recipe from Bon Appetite. It is really a terrific desert and pretty easy. I get tons of compliments every time I make it. If you can't find pre-made creme fraiche at your local grocery store you can make your own the day before (see directions below), ...tons of other creme fraiche recipes on Zaar. Check the tart as it cooks, if the top starts to brown too much, place a tin foil tent over tart. Be careful not to let the foil touch the tart custard, it ruins the look of the baked custard. -- posted by Mrs Goodall

Darned Near Sugar Free No-Bake Pies

Okay, the no-bake is misleading, as you do have to bake the pie crust, but this is so trouble-free, and tastes so darned good. It's decadence for a diabetic, and a special treat for those special events. This is being posted for the 4th of July [hopefully], but you can substitute any fruit topping you wish for this recipe. I've used fresh diced cherries, orange slices [blended in 1 box sugar free orange gelatin into the top mixture for this], lemon [same as oranges], pears [used lime with this], etc. Use your imagination and let the fruit complement the day. If you aren't concerned with sugar/carbs, try Comstock brand pie fillings on top! -- posted by Pagan

Cherry-Red Raspberry Pie

I watched the National Pie Championships held by the American Pie Council on TV last night and had to look this recipe up today! It was torture watching the judges eat this delicious looking pie! They raved about her crust as well. This pie won "Best of Show" for Phyllis Bartholomew. In fact she pretty much cleaned up in all the categories. It looks pretty simple and clear-cut, I guess this is a good example of less is more. Her recipe uses canned sour cherries, but if you wish to substitute fresh sweet cherries, you can always reduce the amount of sugar and add a little lemon juice to taste...it should work fine with this recipe. This pie is extra pretty with a lattice top. -- posted by NcMysteryShopper

Ice Cream Pie With Raspberry Sauce

I found this easy recipe in a book a long time ago, and put my own twist on it. The recipe calls for vanilla ice cream, but you can get creative with it.
White Chocolate-Raspberry Tart, With Almonds and Pistachios

Ok, this is my new favourite dessert! Crisp pastry with a layer of lush fresh raspberries and nuts, covered in creamy white chocolate - I'm in love!
This has been adapted from 'The Chef's Table' and is really easy to put together. You can make the tart case in advance and then fill it 4-5 hours before serving. The recipe makes a 10" tart, but I have made a smaller one (8") by halving the filling, I made an extra tart case with the left over pastry and saved it for another day. Please see additional notes at end. -- posted by Nic

This pie is perfect for the summer when you don't want to use the oven, but tastes just as good in the winter. Any berries work great, but peaches are awesome in this as well!
Raspberry Cream Pie

This is very easy & delicious! The original recipe (from BHG) calls it "Black Raspberry Cream Pie" - we couldn't find black raspberry jam at our local discount grocer so used red raspberry fruit spread (no sugar added! so better for you). And we added two drops each of blue & red food coloring to give it the purplish black raspberry look. I use Recipe #165197 for the pie shell.
Freezing time is NOT included in prep or cook time. I recommend you make this a day in advance. -- posted by MA HIKER

Fried Apple-Stuffed Biscuit Turnovers (Aka Fried Apple Pie)

This is a cheat recipe that uses canned biscuits like Pillsbury refrigerated biscuits. It's pretty easy too as it uses canned apple pie filling, but I suppose if you're feeling inspired, you could create your own apple filling instead. The trick is really to roll these out enough so they appear more like a turnover instead of having that biscuit thickness. These are great on Sundays in the Fall. Also, these are supposed to be made in a cast iron skillet for best results. You can also use other fruit fillings too instead of just apple, like blueberry, strawberry, peach, even bananas with caramel sauce & cinnamon. Garnish with a dab of fresh whipped cream or cool whip and sprinkle the turnovers with confectioners sugar. Serve with fresh berries as a dessert. -- posted by BlondieItaliana

Frozen Berry Meringue, Adapted for Diabetic Diet

I found this recipe in Fare for Friends, a cookbook published in 1983 to raise money for Interim Place, a hostel for abused women and their children.
Of necessity, I have made changes to accommodate a diabetic diet, but will give the original ingredients in parentheses. To further cut down on carbs and calories I usually just line a square serving dish with graham crackers (mine takes nine 2-1/2 inch squares) and eliminate the crust base, but if you don't have restrictions, by all means make the graham/nut base. The original recipe calls for strawberries, but I think any soft berry or fruit would work. -- posted by Sweet Baboo

For cooks who like to work ahead, this is the perfect recipe. The crust can be prepared in advance and baked the day it’s served. The pastry cream can also be made ahead. A few hours before serving, fill the pastry with the cream and top with fruit.

This is a wonderful peach pie! I like mine without the raspberry sauce topping, as I do not care for raspberries. However, I have made the sauce for company and it has always gone over to great comments and recipe requests. From Pillsbury: Fresh peaches never tasted better!
Raspberry Rhubarb Pie

The flavors in this pie are a late summer favorite of mine. I don't give a recipe for the pastry as good pastry is fickle, and depends greatly on the conditions you're baking in--use your favorite recipe. Baking times for this recipe are mere suggestions, as my oven has temperature maintenance issues, so I'm not able to give exact times--I just check early and often when I bake. Use your best judgment! Time does not include pastry prep (though I usually make mine the night before so it doesn't really add much time to the actual pie making for me). -- posted by damienducks

Summer Memories: Jumbleberry Crumble With Shortbread Topping

This was a quick throw it together Sunday Lunch pudding idea - raid the freezer for all the nearly used bags of frozen summer fruits, such as cherries, raspberries, blackcurrants, redcurrants, bilberries (blueberries), blackberries and strawberries. Fling them all into an ovenproof gratin dish; whizz up a shortbread crumble topping - and Bob's your uncle and Fanny's your aunt, as we say down our way!!!! We loved it, the combination of fruits was wonderful - and it is a great idea for using up whatever fruits you have lurking in your freezer. I am sure that fresh fruit would also be suitable. We like our fruits to be on the tart side - so pleased add sugar to taste! Serve the crumble with hot custard, cold custard, cream, ice cream, crème fraiche or whatever you fancy! -- posted by French Tart

Tantalizing Raspberry Tarts

Another recipe from "The Anne of Green Gables Cookbook":

"The little girls of Avonlea school always pooled their lunches, and to eat three raspberry tarts all alone or even to share them only with one's best chum would have forever and ever branded as "awful mean" the girl who did it. And yet, when the tarts were divided among ten girls you just got enough to tantalize you. " (from "Anne of Green Gables" by L.M. Montgomery).

Times are estimated and do not include cooling time beyond the initial 15 minutes (included in cooking time). The original recipe did not specify the size of package of frozen berries, so I guessed a 10 oz package based on the fresh raspberry substitution. -- posted by Halcyon Eve
