The traditional English Cream Tea is very popular in the South West of England, especially in Devon and Cornwall - there you will be offered a pot of tea with fluffy warm scones, butter, cream and strawberry jam. 			<description>A delectable and easy Tea Loaf with aromatic and fruity flavours! The beauty of these British and Irish style Tea Loaves or Brack, is that they are nearly always fat-free, making them a tasty snack to have with an afternoon cuppa, and without the guilt! I have added ginger for a subtle kick, and I have discovered that if you soak your fruit in Darjeeling tea, it lends a wonderful flavour to the fruit, you can use any tea of your choice however. Remember to start this Tea Loaf off the night before you wish to bake it, as the fruit steeps in the tea overnight, making them plump and moist. This Tea Loaf freezes well (in slices) and it will stay fresh for a week in an airtight tin. NB: A note on ingredient conversions to US cups; The conversion rate to US cups is very dependant on what type of sugar and flour you use - there is a different rate for white flour and wholemeal flour, as there is for caster (superfine) sugar and granulated sugar. The sausage in this case is simply frankfurts or hot dogs which are placed whole in the middle of the loaf. This recipe is actually from Vefa Alexiou, who is a famous Greek TV chef, and it is quite easy to make. You can substitute any grated yellow cheese you like in the loaf but it must have at least half a cup of feta or it loses its unique flavour. 			<description>From the Weight Watchers Cookbook 'Take-Out Tonight!'.  They're really big, dense muffins which are full of fibre and really fill you up and give you energy.  They're the only muffin I've made that both me and my flatmate both like!  You can eat them plain or split with jam/spread for breakfast, even heat them up and cover with syrup (I use sugar-free) for dessert.  If you don't have a jumbo muffin pan, the recipe says you can use a 12-cup pan, reducing the cooking time to 25 minutes.  They also work if you substitute the sugar for Splenda, which I did the first time I made them as that was all I had (but I added 1/4 cup of sugar-free marmalade to sweeten it a bit, which tasted yummy), and I also skipped the crumb topping and raisins, and they still tasted great.  One time I made them, I added 2 teaspoons of cinnamon and one of mixed spice, which also tasted really nice, but my flatmate preferred them plain. You need jumbo muffin tins to get the 14 muffins from this - regular tins will yield more muffins &amp;amp; likely need a slightly shortened cooking time. Should be getting about 11 grams of protein &amp;amp; 9 grams of fiber with about 32 grams of fat - but a lot of that is coming from the seeds &amp;amp; canola oil.
