Hunter's Cake

This spicy molasses cake is from an old Vermont family's recipe. It got it's name because it holds up well on long hunting trips, but it never lasts more than a day or two in my house because everyone gobbles it up quickly. -- posted by Janny7

Brownie Bites

These little gems are very easy to make. I started baking this recipe when my kids were in elementary school and they loved those mini brownies that you can buy 5 to package (Hostess, I think) in their lunch boxes. I didn't like buying them so I found this recipe and the rest is history. I have never gotten 40 muffins out of this recipe -- more like 32. I don't always put a nut on the top of the brownie bites. I used pecans in the picture because that's what I had -- use your favorite nut. -- posted by Lvs2Cook

Dawn's Orange Loaf Cake

This is a definite cross between a light dessert or a breakfast quick bread treat. It has the texture of a cake but in loaf form. From a TOH booklet and submitted by Dawn C. from Florida. This uses cake flour which I find makes a really lighter texture to the loaves than standard flour. You can substitute all purpose flour but reduce the total by 3 1/2 tbls (for every cup of cake flour you need to reduce all purpose by 2 tbls) but remember that all purpose will probably give you a heavier texture of cake loaf. -- posted by HokiesLady

Very Moist Whole Wheat Banana Bread

This is my own adaptation of banana bread, and it has turned out very moist. Lower sugar, more nutrient dense, too. Has a very fine texture due to the whole grain wheat. Try it, and you'll see!
This freezes well for later use. -- posted by ^_^Elizabeth^_^

Applesauce Mincemeat Bread

Have had this in my files for years so do not recall the name of the cookbook. It is rich enough to be considered a cake if you want and one of our favourites, especially around Xmas time. I like it with a little butter and it keeps moist for days. -- posted by Chef #570804 Halifax Liz

No-Fat Banana Applesauce Muffins

I got this recipe out of a Gooseberry Patch cookbook and it is one of my stand-by recipes when I am watching my calories and fat. Since I am doing just that right now, thought I would put it on the zaar for easy access and hopefully someone else likes this recipe as good as I do. (I prefer to sub 3/4 of the white flour for whole wheat and use brown sugar instead of granulated sugar. I think fresh nutmeg is the key in this!) -- posted by mammafishy

Deep Chocolate Vitamuffin Copycat Recipe

I like Vitalicious VitaMuffins because they're so healthy and tasty, but they're expensive. I searched online for recipe clones and found ONE! It isn't mine, but I thought a lot of people here would appreciate it being posted. It doesn't have quite as high a percentage of vitamins as the original, but I hope they taste just as good for so relatively few calories.

Source: http://community.cookinglight.com/showthread.php?p=792843 . The main difference is that I exchanged sugar for Splenda. Enjoy!!

RecipeZaar doesn't have the nutritional info for the clear fiber supplement (e.g. Benefiber makes one that completely dissolves and is taste-free, 0 calories) but it is essential to making this recipe a healthy one with 3-4g fiber per muffin: -- posted by *buttercup*

Vegan Pumpkin Spice Bread

This is easy and delicious. Perfect with a cup of coffee for an afternoon pick-me-up. You can make it fat-free by substituting an additional 1/4 cup of applesauce for the oil, or use regular eggs instead of the egg-replacer if you don't need the recipe to be vegan. I got this recipe from Fatfree Vegan Kitchen. http://blog.fatfreevegan.com/2006/12/pumpkin-spice-bread.html -- posted by VeganFamilyChef

Oatmeal Pumpkin Cookies

This makes a lot of cookies. I got this recipe online and adjusted it for taste. There are many pumpkin cookie recipes here, but I think this one is different. It is all stuff you usually have in your pantry. This is great with chocolate chips and nuts in place of the raisins too. At the listed baking time you end up with a texture like a muffin top, but you can add time for a chewier cookie. -- posted by Jess4Freedom

Christmas Eggnog Bread

This came from a friend. I made this as written and it turns out beautifully every time. I always include a loaf of this bread in my Christmas crates that we make up for my family. I have included 3 variations I came up with. We love this bread toasted. Yes...toasted. What can possibly be wrong about toasted cake? Try it...you just might like it. Try it for breakfast instead of regular toast. This makes a large loaf and freezes beautifully. -- posted by luvcook'n

These chocolate muffins are very moist and rich. There is no need to use an electric mixer. A whisk or wooden spoon is all you need to mix this recipe.

I saw this on NBC a few days ago and knew I had to place it here for safe keeping. It looked great.
This bread stores well and picks up flavor when wrapped with a rum-soaked cloth. To store, dip a 12- to 14-inch square of muslin or cheesecloth into a cup holding 2 or 3 tablespoons dark rum, wetting the fabric all over. Squeeze out the excess rum, wrap the molasses bread with the dampened cloth and store the bread in a tin canister, or wrap with foil and store in a dark place. -- posted by Ceezie

Buckwheat-Yogurt Banana Bread (Guilt-Free)

I came up with this recipe to use up some extra bananas and yogurt, but since I live alone, eating a whole banana bread to myself is... well... pure gluttony. So, to my great pleasure, there is no willpower needed here! I am very proud of how it came out. It is very moist and the buckwheat gives it a nice flavour. If you are used to regular store-bought over-sweetened cakes, I recommend you increase the amount of sugar in the recipe or, you can use these tricks: use over-ripened bananas (they are sweeter), use sweetened applesauce and/or vanilla yogurt instead of plain. -- posted by Burgz

Very English Scones

Adapted from the Be-Ro home recipes book. As an english person I actually have no idea why scones are considered so British. But these are great with tea, a good breakfast food and look very pretty. You can use a variety of fruit fillings (my favourite is glace cherrys), to be honest I think any dried fruit will work as long as it's chopped to a good size (think around the size of a sultana). Also the recipe calls for 8oz self raising flour but when I made these this morning I used 4oz self raising, 4oz plain and 1 teaspoon baking powder and that worked wonderfully. The salt is optional, you can use margarine or butter and caster sugar is white granulated basically. Handle lightly for best results. It's a versatile recipe, enjoy. -- posted by SallyDe

A quick and easy recipe from Gourmet Magazine (June 2009) for a tender buttermilk cake topped with a nice, sugary crunch. This recipe works with any berries (including frozen). Make sure to allow the cake to cool before inverting (or it may fall apart) or you can serve it straight from the pan with vanilla ice cream. -- posted by blucoat

Zucchini Bread- Dark Rich Flavor

If you are tired of the same old zucchini bread try this one. It is my mothers personal recipe and it always pleases. It is much darker then traditional zucchini bread and much fuller in taste. It is even great when made with wheat flour. Be careful to check the doneness before you take it out. It is easy to under cook due to the darker color but also easy to over cook because it looks the same as timed right. -- posted by Katherine in idaho

Singin' Hinnies - Northumbrian Tea-Time Griddle Cakes/Scones

Served warm and oozing with butter, these fabulous fruity griddlecakes make a great treat for breakfast or afternoon tea. I remember my grandmother making these when I was little; she lived in a very old stone cottage in Northumberland, and made these on a huge cast iron black griddle, or girdle as they were also called! We used to eat them hot from the griddle, with butter – in front of a roaring wood fire during the winter months. Singin' hinnies are a type of fried fruit scone or griddle cake, so called as they 'sing' and sizzle whilst cooking. 'Hinny' is a Northern term for endearment used especially to children - my grandmother used to call me "hinny". Similar to singin' hinnies are Northumbrian griddle cakes, also known as Gosforth gridies.
If you are making them for a children’s party or at Christmas, put coins that have been briefly boiled, then wrapped in greaseproof paper, in the middle of some of the singin’ hinnies. -- posted by French Tart

Teff Muffins With Fruit & Nuts

The grains of teff are so small, the bulk of the grain consists of the bran and germ. This makes teff nutrient dense as the bran and germ are the most nutritious parts of any grain. This grain has a very high calcium content. It is considered to have an excellent amino acid composition, with lysine levels higher than wheat or barley. Teff is high in protein, carbohydrates, and fiber. It contains no gluten so it is appropriate for those with gluten intolerance. Teff flour, brown rice flour & arrowroot flour can be purchased at whole food stores. -- posted by lwatkins

Delightful personal cheesecakes! My daughter requested these from a Rachel Ray magazine for her girl scout troup on her birthday, BIG hit! Fairly easy to make, but everyone will marvel at your amazing baking talents... only you will know how simple they really were :) -- posted by spreadnjoy
