Smashed Garlic Plantains - Mofongo

This is a classic Puerto Rican dish that is also popular in Cuba (similar to the Dominican "mangu"). If you don’t have a tostonera (two pieces of wood hinged together to flatten plantains) use a glass or a small plate to flatten the plantains. If you don't use bacon and stop at step 2 you have tostones which also a great side dish. -- posted by MarielC

Camarones Enchilados - Deviled Shrimp

This is one of the few Cuban dishes that is a little spicy, rather, it is redolent with garlic and tomatoes and the succulent flavor of fresh-caught shrimp. As all Cuban favorites, it is served with white rice and either ripe or green plantains. Add a green salad and garnish with some cilantro and you're good to go. Delicious! -- posted by Manami

Island Pina Colada

Ever wonder why the Piña Coladas you make at home taste nothing like the ones served at your favorite tropical destination? Most recipes simplify the colada into a mixture of rum, pineapples & ice with a splash of coconut milk. A flavorful Piña Colada has two kinds of rum (light and dark), cream and even bitters added which make the concoction a true tropical delight. Use high quality Puerto Rican rum in this recipe for the best result. Enjoy! -- posted by NcMysteryShopper

Cornmeal Hot "cereal "(Funche)

I ate this as a treat with my best friend After School. It is called Funche, a Puerto Rican polenta mush. It is Sooo Good,it's warm, creamy and a bit sweet.I Use Harina de maiz mas fina(A very fine cornmeal, Goya makes it)) so its smooth not grainy.I have been searching for quite sometime but in wrong places, not thinking it was like mush but sweet :o(. I found a similar version of this on elboriqua.com.I hope you enjoy it as much as I have. I also add sugar with the cornmeal so it dissolves, but that is a personal taste as to the amount of sweetness. -- posted by BrindleGirlD

The various species of malanga (Cuba) or yautia (Puerto Rico), include some of the oldest root tops in the world. It was first cultivated in tropical America, and spread to Africa, and is also grown in the Phillipines. Malanga has more flavor than most other tropical tubers, and has been described as more like nuts than potatoes.
Caribbean Grilled Scallop Salad

Boston lettuce has a mild taste and tender texture. Rinse it gently, pat dry and refrigerate with moistened paper towels until ready to assemble salad. (Total time: 16 mins.)This is a very nice and pretty salad dish. Cooking Light Magazine, August/05. Making of the salad included in prep time -- not cooling time. Update 06/19/2008 - after making this again I tweaked it a bit; the first thing I did was used a rub that I used for another dish - recipe #283294 which added quite a kick! Also, I was remiss about including Emeril's Creole Seasoning recipe #146819 number. Also, used a vinaigrette that I had for another salad and added more of the mango chutney!!!:) -- posted by Manami

Recaito

There really is no translation for this mixture of onion, garlic, peppers and green herbs. Recao is culantro in Puerto Rican-speak, so this seasoning is called recaito, or "little culantro." You can buy it in bottles in some ethnic grocery stores but why? when it's so simple to make. Use in dishes like Cuban black beans or Puerto Rican style pot roast, where you want the flavor but not the color or extra liquid that you have in a sofrito. Culantro is the defining flavor. -- posted by SusieQusie

Coquito - Traditional Recipe (Made With Egg Yolks)

A delicious rum-infused Latino beverage enjoyed any time of year, but in particular, around the Holidays... Similar in type to egg nog, but way more delicious!

This recipe comes from my husband's friend's wife, Linda. The recipe is for larger servings (party-size) so you will have to adjust for portions desired.

Also, some tolerance is required as you must stir constantly over low flame as to not cook the egg yolks -- also, allow time for prep. & cooling when factoring your time, other than that, the recipe is pretty easy... those are just a few cook's notes FYI. -- posted by BlondieItaliana

This recipe is used in conjunction with my Recipe #315833. This mixture is used in almost every savory dish that leaves a Pueto Rican kitchen.
Puerto Rican Arroz Con Pollo (Rice and Chicken)

Please read the entire recipe before attempting to make this dish. You will need the Olive and Pepper Mix that I am unable to list in the ingredients, but is listed in the instructions. I've been working on an Arroz Con Pollo based on Throwdown with Bobby Flay. This is my rendition of the Al Fonda Boriqua version, who was the winner of the Throwdown. I jotted down all the info from the TV program. I have compiled techniques and recipes from authentic sources and this is what I have come up with. The prep time does not include the 24 hour chicken marination time. NOTES: Ingredients list includes links to Adobo Seasoning, Adobo Marinade, Sofrito and Olive and Pepper Mix. I hope that you enjoy my efforts as much as we have! -- posted by Humble Bee

Shrimp Bites Wrapped in Greens

Isabel Cruz's Spicy "Shoestring" Party Menu for a Sultry Late-Summer Night - CBS Morning Show, 09/01/2007. The San Diego-based chef likes to marry the tastes of Latin American cooking she grew up with to the Pacific Rim tastes she's come to know as a Californian. But most of all, Cruz likes to keep her cooking clean, fresh, flavorful and healthy - she likes to go for flavors that pop and offer contrast to one another. She has 5 restaurants on the West Coast, from Portland, Ore. down to San Diego, Ca:). She has also published a cookbook "Isabel's Cantina."Growing-up, Isabel's friends were Puerto Rican, Cuban, Peruvian, and she also spent time with her Asian friends learning Japanese, Chinese and Korean cuisine. Thus, was born her fusion of different flavors. "This is a Thai appetizer of shrimp wrapped with coconut, peanuts, and chiles in a leaf. She likes to use raw collard greens as wrappers for these spicy little snacks, which she drizzles with a little guava sauce to complete the hot-sweet Thai flavors while also bringing these bites further into the Latin realm. Prepare these ingredients in advance, and then assemble these at the last minute." She was given a $60 budget to create a dinner menu for 6 people - thus: Chef on a Shoesting. -- posted by Manami
