Danish Apple Pudding

A flavoursome Danish apple pudding with hazelnuts, honey and lemon. This dessert can be made well ahead of serving time as it is served chilled. Hazelnuts although high in fat contain mostly monosaturated fat which helps to lower levels of blood cholesterol in the body. I found this recipe on an International Masters '1001 recipes for pan or wok' card. -- posted by bluemoon downunder

Traditional Australian Summer Pudding

A visually stunning and totally scrumptious pudding, this traditional Australian summer pudding is made when berries are at their peak; and it is served cold with Cardamom Cream. Blackberries, raspberries, strawberries, blueberries, blackcurrants, redcurrants: the ratios are unimportant. What I've indicated below in the ingredients is but one possible berry combination. It was easier than trying to get Zaar to recognise all the possible alternative ingredients! Vary the ratios to suit your taste preferences and, of course, depending on what is available. What is important is that overall you have 1 kilo of berries (Australian): 2 pounds of berries (American) or 910g of berries (Canadian). A variety of berries will naturally make for a more interesting flavour combination. The preparation and cooking time does not include the overnight chilling time. Because it is a dessert that needs that overnight chilling, it can of course be made totally ahead of time! I have adapted this recipe from the Australian publication by Reader's Digest of a book jam-packed with traditional Australian recipes: 'Family Recipe Scrapbook: tried and trusted recipes for today's cooks'. -- posted by bluemoon downunder

Passionfruit Flummery

The word flummery derives from the Welsh word 'llymru'. In Scotland, a flummery would include oatmeal; elsewhere in the British Isles, it was a sweet dessert made with fruit. This recipe is one I have adapted from the Australian publication by Reader's Digest of a book jam-packed with traditional Australian recipes: 'Family Recipe Scrapbook: tried and trusted recipes for today's cooks'. I bought the book in preparation for the 2005 Zaar World Tour, so I could track down familiar recipes I've eaten often or heard of but not previously eaten. What I love about the recipes in this book is that from whatever decade or centurey past they come, they have been updated to suit C21st tastes. This recipe harks back to "the days (in Australia) when many people had a passionfruit vine growing over the fence and kept a few chooks in the backyard, (when) this luscious flummery would have been an economical pudding". This is a prepare-ahead dessert, and the preparation and cooking times do not include the 6-8 hours needed for cooling. The probably Scottish origins of this particular flummery recipe are evident from the suggestion that it be served with shortbread biscuits. -- posted by bluemoon downunder

Soft-Fruit Fool

The soft-fruit culinary sibling of the Fresh Fruit Fool. There is no foolishness about these two desserts! Traditional English fruit fools derive their name from the French word 'fouler', meaning to crush. Fortunately, this word was modified to 'fool': after all, not too many of us would be keen to be making, serving or eating 'foul' fruits! What I love about the recipes in this book is that from whatever decade or century past they come, they have been updated to suit C21st tastes. This is a prepare-ahead recipe, and the preparation and cooking times below do not include macerating and cooling times. BTW, 500g Australian = 455g Canadian = 1 pound American. -- posted by bluemoon downunder

Key Lime Mousse; Awesome!!

This is even better than Key lime Pie because it is creamy and much richer yet still light enough to serve after a heavy meal. A wonderful mix of sweet and tart. Don't let the use of unflavored gelatin and the long directions scare you off. If you can make Jello, you can make this. Just follow the directions & you'll be fine. This mousse is great for family desserts during the summer yet with some graham cracker crumbs and white chocolate curls on top, it is fancy enough for company also. -- posted by JanetC-KY

Yellow Squash Dessert

Wonderful way to get kids to eat squash. I've made this for years, and haven't found anyone who didn't like it. Its creamy, easy and delicious.I used to tell my kids it was a dessert pudding, and it was years before they realized they were eating squash. It has a nice vanilla taste. You can use splenda as a substitute for the sugar.

Hint: Precook your squash by peeling, seeding, cubing and boil it in enough water to cover it, for about 20 minutes, then drain throughly. -- posted by blgpts

Strawberry Sorbet Sensation

From Light and Tasty. This looks like a great refreshing dessert for summer. I don't use fat-free ingredients, but I think the regular equivalents would work just as well. (If using regular pudding mix the weight will be greater--a 3 or 4 oz box I think). Cook time is freezing time.

Weight Watchers Vanilla Mousses / Panna Cotta (Core)

From the UK Cook Eat Enjoy recipe book. This is a really nice, light dessert that I fall back on all the time. The recipe book calls it a mousse / panna cotta, but it's not really either... perhaps like a hard panna cotta in texture if anything, but either way it works well and is really nice. The recipe book serves it with roasted plums, but I prefer it with tinned raspberries. You can pretty much put whatever fruit you like with it (tinned or fresh) but, as per the first review, it does need something with it. It's a lovely summery dessert and doesn't taste particularly low fat at all. This is core or 1.5 points (WITH one roasted plum per serving) if you're doing full choice. Sorry - I'm not sure what the points damage is without the plums. Please feel free to Z-mail me if you would like the roasted plum part of the recipe to try with it. Enjoy! -- posted by Wendy-Bob

Midsummer Swedish Strawberry Compote - Jordgubbskräm

Midsummer would not be Midsummer without strawberries, and this is a simple Swedish recipe to make, to celebrate Midsummer, wherever you may be! In Scandinavia, the summer solstice is a magical time. The lavender twilight lasts until 11 p.m. and the day breaks again at about 2 a.m.; above the Arctic Circle, the sun doesn't sink below the horizon for weeks. This year, 2007, Midsummer Eve, the beginning of the three day official holiday, falls on June 25. Throughout Scandinavia, families and friends gather to decorate the maypole with birch leaves and wildflowers, make flower crowns for women and girls, dance around the maypole, sing summer songs and feast on pickled herring, new potatoes, and aquavit. In addition, many families have their own special foods that they traditionally serve as the Midsummer meal. These are usually dishes that can be prepared ahead of time and easily served outdoors. -- posted by French Tart

Must Try Low Fat Raspberry Dessert (Panna Cotta-Ish)

In the UK, Marks & Spencer do THE nicest dessert at this time of year - a raspberry panna cotta. Now for those doing Weight Watchers you'll know that panna cotta is practically a deadly sin, so I made up my own low fat version to try and stop me buying the M&S stuff. It's ever so healthy and really tasty - you wouldn't believe it's low fat at all in my opinion. It's almost core but I think you have to count gelatin(?) in which case it's not quite. Depending on whats in your cupboard you can either make this with a flavoured topping or just add vanilla and keep it simple (and more like a panna cotta). This week I've used raspberry jelly though and I think this is my fave version so I'm posting it this way, but if you want to make the plain vanilla version you may need to add some splenda if you like your desserts sweet. Please note that you have to make this recipe in two parts so allow time for setting, etc. Enjoy! -- posted by Wendy-Bob

A favourite "grown-up" summery and romantic dessert in our home! Summer berries - raspberries and strawberries, steeped in Rosé wine with a little sugar. Great by themselves or with whipped cream or crème fraiche. So easy to make - and they work better if made up to 48 hours beforehand. These berries are stunning if used in trifles or fruit fools!
Ww Panna Cotta With Strawberry Sauce and Pine Nuts

I really enjoy this one. It tastes very indulgent and not at all "diet-y." Both of my kids love to eat the panna cotta plain right out of the ramekins. Personally, I definitely recommend the sauce. The panna cotta itself is quite sweet and the tartness of the sauce is perfect with it. I've found that you can halve the sauce recipe and still have plenty. I've actually taken to making the full amount of sauce and just using the excess on other things. Either way... this has become a favorite here.
Light Layered Angel Food Dessert (Low-Fat)

Light, luscious and perfect for a hot summer evening. This dessert combines layers of store-bought angel food cake, 2 kinds of fruit, fluffy pudding and Cool Whip. Instead of strawberries, you could substitute whatever fruit is bursting with summer ripeness, such as peaches or blueberries. This dessert can be layered in a 9" baking dish, or for a nicer presentation, use a tall-sided trifle bowl.
Very Berry Delight (Non Dairy!)

This delicious pairing of chocolate and berries comes from the World's Healthiest Foods site. The silken tofu gives the chocolate a creamy texture without using heavy cream, making this a heathful alternative to most dessert recipes. NOTE: Cook time includes prep for the pudding and the berries; Prep time is the time to chill the prepared pudding. ALSO, if you use frozen berries, thaw and drain well before adding. You may want to save the juice from the thawed berries, and drizzle it over the top for extra flavor and nutrition. -- posted by Lynne the Pirate Queen

Lemon Verbena Syllabub for Lazy Summer Days or Dinner Parties!

Just the job when it is hot and humid, a simple and elegant dessert to finish off a special summer dinner party outside and under the stars! This is also a wonderful accompaniment for fresh summer berries or gently poached fruits. Try to make sure that you give these little syllabubs plenty of time to chill and set before serving. Serve with a squirt of Chantilly cream and some fresh Lemon Verbena leaves as a garnish. Lemon Verbena is a very lemony herb, think of fizzy lemon sherbet (as in Barratt’s Sherbet Dipper) and you will have an idea of the taste! -- posted by French Tart

Fresh Peaches in Sauternes Soak With Angelica and Lavender

This is a wonderful, light summery dessert, which never fails to please my guests, as well as my family and friends! Fresh peaches are soaked in sweet Sauternes with angelica leaves and lavender flowers tucked amongst them. Angelica is an interesting, aromatic tasting herb, and although I normally only use the stems to candy or crystallise (Recipe #248003) I have discovered that the leaves also make a great accompaniment when used with fresh fruit. Try to serve this fresh fruit salad in a large clear glass bowl for maximum impact; it just looks so pretty with the light shining through the fruit, juices and herbs! I find that the only thing that is needed to serve this is a good dollop of crème fraiche. I have also made this with apricots and melon for a slight change. I like to use a combination of white and yellow peaches for this recipe – but please use local and fresh peaches regional to your area. Prep time includes the minimum "soaking" time. I have not tried this with tinned peaches, but suspect that they may be too "soft" to hold their shape for prolonged soaking. -- posted by French Tart
