Chocolate Peanut Butter Pudding Cake

This is a quick and easy receipe that my grandkids love. I like it mainly because the ingredients are usually already in my cupboard, so I can throw it together whenever they come by, and they love to help. -- posted by chef sharonitall

Tapioca Pudding

This is a time consuming recipe but absolutely my favorite. I have had it written on a page that is really beginning to fade. I am sure I have had it for about 20 years or more. I don't make this often, because I am the only one that eats it....wait a minute...maybe I should make it more often...silly me ..Cooking time does not include soaking time. -- posted by FrenchBunny

Lemony Rice Pudding

Baked Mango Custard

This rescipe originally came from Splenda. I didn't like it with Splenda so I subsituted it with sugar.
"Mangoes are a wonderful ingredient for desserts -- their distinctive aroma and flavor blends so well with other components. Here, mango puree infuses baked custards. Don’t bother unmolding them, and serve chilled, with a dollop of whipped topping and a couple of mango slices, if you so desire." -- posted by sexymommalucas

Grandma Rene's Old-Fashioned Banana Pudding

This was the way my mom made banana pudding. You'll find no vanilla pudding mix in this! It's all homemade and with love. I used a saucepan on the stove to cook the custard, but you have to constantly stir it to keep it from scalding on the bottom because it needs to come to a boil (bubble) to thicken. If you're not comfortable doing that, try using a double-boiler. But it must bubble. For extra zip in the custard, add 1/4 tsp. of lemon oil or 1 tablespoon of lemon zest.
The meringue is simple and delicious. If you want a mile-high meringue, use 6 eggs whites (any leftovers in the freezer? Take 'em out!) and 1/2 cup sugar with 1/2 teaspoon cream of tartar and a pinch of salt.

Eggs are easier to separate when they're cold. So do so, and let them come to room temp before using.

Bananas are best if they're ripe and sweet. Don't get any that are green. If yours are green, wait for them to ripen (putting them in a brown paper bag will speed the process). Don't worry about having too many bananas....it's great piled high with all the ingredients!

Best served warm, but good either way. Zap in microwave if you have kept it in the refrigerator for hot banana pudding! This is one of my favorite comfort foods! -- posted by Citruholic

Very Vanilla Tofu Bread Pudding (Vegan)

I just love the flavor of Vanilla and I was happy to discover a new product called Silken Creations at my local Sunflower Market. It's a starter for smoothies and desserts. I am replacing the eggs and milk in the recipe with this. I used some vegan non-gluten bread I made in this recipe but you can use regular. Just make sure it's stale bread. That always works the best. You can removed the crusts if you wish, but I don't I like them. -- posted by Chef Joey Z.

Delicious, creamy and simple. You can add rum-soaked raisins when you add the milk if you wish. I serve it with crushed-berry syrup or applesauce. This is the way all of my husband's family (in Germany) makes it.
Sweet Rice is as individual as the cooks who make them. I've tasted sweet rice by different cooks, but I've never tried one that came close to the creamyness, and sweet, lemony flavour of my grandma's rice. This is her recipe. It takes about 30-45 minutes to make, but the results are well worth it. -- posted by Chef #1335041

Apple and Cinnamon Sponge Pudding

From a mag I took a copy but forgot to note which mag. Times are in accordance with recipe directions. They recommend to use 1 x 800 grams of can pie apples (in place of granny smiths) and microwave on high for 2 minutes, then top with sponge mixture (fruit must be hot when topping with sponge, or sponge will not rise during cooking. Would also add cinnamon to canned apple if not already done so by the manufacturer. Serve with custard or ice-cream. IMPORTANT NOTE - prepare sponge mix while apple is cooking (apple mix needs to be hot). -- posted by I'mPat

Creamy Pumpkin Rice Pudding

Even though the phrase "leftover pumpkin" doesn't exist in my household, most people often wonder what to do with the leftover pumpkin after making a pumpkin pie. I like to make this tasty, simple, and quick dessert when I have a huge can of pumpkin I haven't completely gone through. Whole milk and cinnamon rice milk really work best for this recipe, but some tasty variations that really add to this pudding's richness are vanilla rice or soy milk, and Silk Pumpkin Pie flavored soy milk (which is only seasonal, I wish it was available year-round! And is it just me or does Silk Pumpkin Pie Soymilk taste just like Silk Nog that's available around Christmas, only they package it differently? So if you're making it around Christmas, use Silk Nog!) This awesome dessert is great for parties and potlucks,
it travels and freezes well, and was a big hit at my sister's Halloween party! Both the kids and adults loved it. (Note: Prep time does not include cooling time.) -- posted by the80srule

Sensational Rice Custard Pudding

This is a very old recipe that was my husband's grandmother's own creation. She was well known for her cooking and baking. I have been making this for over 40 years and always get raving reviews. Once, a cousin gifted me with a very large glass bowl that had 8 smaller serving dishes. She included a note that this was to become 'the family dinners rice custard pudding bowl' as everyone requested that I make it for all our gatherings! For a creamier custard pudding, use Aborio rice or a medium grain rice; I prefer the short Aborio rice. Never use instant rice.

You may wish to use less sugar as this is a very sweet custard pudding, due to the condensed milk. I hope this becomes a favorite of your family too! -- posted by Debaylady

Strawberry Pudding

***Updated to fix all the kinks, tastes much better now*** I expanded on a simple blancmange recipe and adapted it to make it a special strawberry creation...since I now have a ton of strawberry Nesquik and want to be creative with it. And it turned out very yummy. :D It looks like it took a lot of effort but it didn't. This would probably make an awesome kid pleaser as well.
NOTE: Cooking time does not include cooling/setting time. Vegans and the lactose-intolerant-- if you use soymilk, rice milk, almond milk, etc. this will not set. You may want to try a tofu-and-blender approach instead. -- posted by the80srule

Easy Lemon Self Saucing Pudding

Been looking for the lemon delicious recipe I cooked many years ago but somewhere along lost the clipping (before ZAAR time) and this seems to come close to it though called a pudding (maybe searching in the wrong area) but it was good though sweeter than I remember (would need to work on the sugar content), certainly don't remember having the sprinkle sugar on top as per this recipe but I believe that what gives it its crispy top in this recipe. Serving suggestion was 4 but I think could be easily stretched to 6 served with cream and or icecream. i found that 1 lemon gave me the rind and juiced that but needed to juice a second lemon to get the full 1/2 cup (got a little more than that and added the lot). -- posted by I'mPat

i'm posting it so i don't lose it. you can change the flavors by using different flavor grahams. plain, cinnamon are good. chocolate grahams remind me of mallow cups. i also like fresh ground nutmeg but you can use nutmeg spice already ground -- posted by Brenda Marby

Sunday's Best Rice Pudding (Traditional Style)

In memory of my dad who used to take me to Pickwick Restaurant for rice pudding every Sunday afternoon. This is the closest recipe I could find to that which was served at the restaurant: Creamy with a hint of cinnamon and nutmeg. Delicious whether served warm or cold with a sprinkle of cinnamon on top. Also, if prepared ahead, rice pudding makes a quick breakfast in case you're too much in a hurry to make oatmeal. -- posted by Rachael Potter

Creamy Apple Spice Tapioca Pudding

I don't like tapioca pudding made with cooked egg so I came up with this recipe. Evaporated milk gives a richer, creamier taste and texture. I like my tapioca thick but if you don't, feel free to add water a tablespoon at a time toward the end of cooking, since the pudding will thicken more upon cooling.
