			<description>Use a mandolin slicer to get all the veggies paper thin; that way they'll melt into one another, and this whole mixture will become homogenized goodness.

Don't let the bechamel intimidate you. This French Mother Sauce is an alchemy of very simple ingredients that become a tremendous sauce through the proper application of heat. Just don't blast either the flour mixture, or the milk, with heat higher than medium, and you should be good. TAKE YOUR TIME, and don't pump up the heat to speed it up. You can use any combination of good melting cheeses such as Gruyere, Emmentaler, Fontina, or cheddar.  It works with kale, chard, or  spinach.  If you omit the greens, this also makes a great traditional mac &amp;amp; cheese. The best part is it's an all-in-one meal, you don't have to serve side dishes (although a dark green salad with a light dressing would go well too). I used about three different recipes to approximate it, so here's my current version.  I made this for dinner the other night and it was fairly easy and very good.  This recipe is written for use with fresh Lasagna sheets, the ones that aren't dried and you don't have to boil or anything.
