One of the most popular ways to serve chicken in the Canary Islands is in Adobo. Adobo is as varied as there are chefs, but the basic ingredients are the same. Feel free to play with the quantities of the ingredients! Cooking is a creative endeavor!
Ginger Chicken

This is another great, do-ahead, type recipe that's so 'after-work friendly'. I throw this together in the morning, let it marinate all day and then toss it on the grill when I get home. Cook the rice while the chicken's on the grill and you have dinner in about 45 minutes. Prep time doesn't include marinating time since you have a choice of quick or longer marinating. -- posted by Hey Jude

Barbecued Chicken (President Nixon's)

My mother had this recipe in a VERY old cookbook. It was President Nixon's favorite recipe for chicken I think, hence the name. I make this especially when we have outdoor parties, when I can grill. I made it for my daughter's birthday party, and by the time I got around to eating, the chicken was gone!!! Everyone loves this tasty barbecued chicken! A little salty if you add all it calls for, so you might want to add less. Or you could use garlic powder rather than garlic salt. Enjoy! -- posted by TweetysCookin

Basic Smoky Barbecued Chicken

For this recipe we used the BBQ sauce we made in class (Tomato Based Barbecue Sauce rz.#184193). It is delish!! If using a gas grill - you can wrap the smoking chips loosely in aluminum foil, poke LOTS of holes in the top allowing the smoke to escape. -- posted by SkinnyMinnie

Kittencal's Better Than Take-Out! Deli-Style Rotisserie Chicken

This is even better than the whole chickens that you purchase at the deli, I have made this many times on my indoor and outdoor rotisserie --- this is one recipe I use margarine the butter tends to burn when cooking, you could also use 1/2 cup oil if desired and omit the margarine, I find that it is best to use 1/4 cup of of each --- I strongly advise you to make two chickens you will be eating one chicken just yourself these are THAT delicious, I always make two sometimes even three! ---this also works well using a large 6-7 pound roasting chicken, or a smaller size turkey, make certain that your turkey is completely thawed before cooking, cooking time will need to be increased for a larger chicken or a small turkey ---another way I have done this chicken is to rub 2 teaspoons seasoned salt all over the chicken and sprinkle inside the cavity as well, place the chicken a shallow dish, cover tightly with plastic wrap and refrigerate for 24 hours, prepare the oil/margarine mixture as stated only omit the seasoned salt in it. You will love this! :) -- posted by KITTENCAL

Here’s a technique that delivers great-tasting chicken and makes a lively conversation starter as well. We’ve used one of our special rubs, but you can sub in 2 to 3 tablespoons of your favorite one.
South China Morning Post 1963 - Authentic Chicken Satay Skewers

I discovered this yellowing paper cutting in my Mum's recipe scrapbook recently - this recipe is the one we always used to use when I was younger. The recipe was posted in the South China Morning Post in 1963 - by a chef from The Repulse Bay Hotel - that lovely old Colonial hotel is sadly no longer there......they used to have this great satay on the menu, as well as the MOST amazing Club Sandwiches! Absolutely authentic and I have decided to share it with you all!! If some of the language is a bit archaic - it is because I have decided to post it, as it was written in the paper at the time! -- posted by French Tart

Sultana Chicken Stuffing

A slightly sweet, slightly savory chicken stuffing I made up to use some stuff I had around. I didn't have any eggs that I'd normally used to bind but suspected by the time it had cooked and some of the liquid and disappeared it wouldn't make much difference, and it turned out great. This is enough to do a small chicken (say 1.5Kg or less), double the quantity for a large chicken. -- posted by Peter J

Absolutely divine. This recipe comes from Weber's Big Book of Grilling, which is our grill bible. Be sure when you truss the bird that you secure the cavity and the neck with a pin of some sort, otherwise the wine and lemon juice will just come right back out when you pour it in. Also, make sure your grill really is at a medium heat, otherwise the skin will char. The prep time listed here includes the time it takes to roast the garlic. -- posted by 2hot2handle

YUM, YUM, YUM! And easy too :). The instructions are easier than they look - I was just being specific. This chicken cooks much quicker than a regular whole chicken because of the method that I use. Only 2 ingredients makes this a quick last minute delicious dish. Adjust the amount of rub used according to your own taste; I use 2 tablespoons total. If you don't have rub, you can just use some salt and pepper. The cooking time may vary slightly as not all barbeques cook at the same temperature. Enjoy! -- posted by Nif
