Any remaining sauce will keep up to 1 week, refrigerated. 			<description>DH and I made this grilled duck breast recipe for dinner a few nights ago and enjoyed it very much.  It is quite easy and since it is on the grill, it required less cleanup than usual.  While we prefer the recipe I posted for seared duck with cherry port sauce, we did not have the demi-glace that the recipe calls for, so this was a nice substitution.  We ended up running out of propane during grilling and had to finish the duck under the broiler.  This worked fine.  We served it with roasted asparagus.  The recipe is from the Williams-Sonoma &amp;quot;Grilling&amp;quot; cookbook.

The little effort involved with making this was so worth it.  I'm sure you could also do these in a regular pan in the oven - but we loved that grill flavor. The original recipe calls for a huge fillet salmon on a full cedar plank, but I've done this recipe for individual salmon fillets on smaller planks.  It's a much nicer way to serve them, and easier to do for a smaller group. 			<description>After trying several other recipes and being disappointed, I've experimented multiple times to come up with this version.  The meat is tender, flavorful, and pretty darn close to what you get at a very good Greek restaurant.  I usually use lamb necks, which are very economical... but it does take some work to get the meat off the bones, and the yield is only about 50%. You need a good food processor and a grill to make this recipe!!  Please note that you need to start at least two days before serving.. and three days is better. NOTE: The addition of a slice of your favorite cheese melted over the top of your burgers can never hurt.

ANOTHER NOTE: I make my patties and let them sit in the fridge covered in clear wrap for a half hour before grilling.

MORE NOTES: A good juicy burger can tend to make the bun soggy so it's a good idea to lightly toast the bun on the grill.

I'm not a fan of balsamic vinegar, I'd probably use red wine vinegar or a different kind of dressing, but posting as is for those who like it. BTW, you'll need at least 6 grilling skewers for this. Probably strong 8&amp;quot; metal ones that could pierce figs.   I used whole wheat spaghetti for the pasta, and regular olive oil, you could use what you like.
  I was hoping to have some of this left over for the next day but I ate it all that night.  I put down 2-4 servings but I ate it in one.  Sorry!!
