Smoked Fruit

What a different and fun way to enjoy that fresh fruit. I have posted this with cherries but please do try other fruits! , Suffused with the heady smoke of beer or juice soaked wood chips will leave the fruit unbelievably rich, mellow, sweet-smoked flavor. You can use less fruit and a smaller pan but keep the 12 oz of beer or juice the same to soak the wood chips in. Enjoy as they are or try adding them as a garnish to your drinks, especially cherries, citrus etc... You can toss all kinds of fruit right in the same pan or use small foil opans and keep them separate. I thik a jar of smoked cherries would makea great gift too! Enjoy! -- posted by mama's kitchen

Grilled Tomatoes and Green Onions

From a Williams-Sonoma Grilling cookbook. Recipe says to use firm tomatoes, even those that are slightly green since they are less juicy and hold their shape better when grilled than fully ripe ones. Fresh basil is wonderful with tomatoes but you could also use chopped tarragon or even parsley in the basting sauce. Serve warm or at room temperature. Great will grilled lamb or grilled fish. -- posted by Oolala

Twice Baked Outdoor BBQ Baby Potatoes

This is how we cook our leftover baby spuds, when we have any leftovers that is! Therefore, I often find myself cooking up a pan of these potatoes, in order for them to be grilled or baked on the BBQ! Quantities given are assuming that there will be other accompaniments - please feel free to increase or decrease the amounts listed. Split them open once baked/grilled and spread with butter and a good twist of sea salt plus some ground black pepper - no other embellishments are needed for these delicious potatoes! When the potatoes are VERY baby in size, I cook these in an old cast iron pan which is used just for the BBQ - they still come out smoky and delectable! -- posted by French Tart

Best Marinade -Ever

From Barbeque Bible, Sauces, Rubs and Marinades, well, most of it! Added a little here and there and this goes with any kind of meat and great with veggies. With a few little changes here and there can be used differently each time...
Fresh herbs work well, but so do dried, freeze dried and the ones that come in those little tubes!!
Use as marinade or basting sauce..
***NOTE -I use 1/4c basil and cilentro together, you can also use oregano or dill or any combination of the 4 - just measure 1/4c total! (some tarragon or thyme added in would be good too - play with it!)
Best fresh, so use with 2 hours of making. -- posted by me & alex

Rustic Grilled Home Fries

This was created by my dad and I when we discovered fingerling potatoes in the grocery store. We cut them with a fancy cutter to make the ridged edges but you can just use a regular old knife. Very simple and easy and taste better than deep fried fatty french fries you get in the pub-without the guilt! excellent served alongside fish. You can add more spices if you like-but the basic salt and pepper allows the lovely flavour of the potatoes to shine through. -- posted by KitchenKelly

Greek Baby Potato Kabobs

Plan ahead the potatoes need to marinate for at least 2 hours, baby white potatoes work well also --- make certain to soak your bamboo skewers in cold water at least 30 minutes before placing the potatoes on --- try to use good size baby potatoes for this as you will need to slice them in half and make certain that they are all pretty much the same size for even cooking --- I have listed garlic powder, you may use fresh minced but I find that the fresh garlic tends to burn somewhat during the grilling, the choice is yours :) -- posted by KITTENCAL

Rum and Honey Grilled Pineapple on Toasted Pound Cake

From the Summer issue of It's All Fresh.
Barbecuing Tip: Don’t forget to give your barbecue a good brush before attempting to cook any dessert. You don’t want your pound cake to taste like chicken and ribs or olive oil and garlic basted steak. I don’t want you to come knocking at my door with pound cake tasting like chicken fried “whatever” demanding compensation.
If you are a barbecuing enthusiast (like me), you will have lots of grilling toys that will not touch the barbecue grill, still give you beautiful results and not fail to Wow your guests with a Start to Finish Meal, Outdoors. You deserve respect for your efforts.

We started our barbecue party with recipe #307670. Here, then is the dessert. -- posted by TOOLBELT DIVA

Mango Garlic Rib Rub

I made this up with a few ingredients that I had in the house and it turned out great. I used country style ribs and grilled it on low. I usually like to slow cook ribs on the grill by placing the meat on one side with the burner off and heating the grill with the side with nothing on it, then browning some at the end. This takes hours and I didn't have time for that this time, but I'm sure it would have been even better. -- posted by Green Cuisine

Cranberry, Apple, and Sweet Potato Packet

This is a great vegetable combination to accompany your fall and winter meals. It is baked in a foil packet which cuts down on the clean-up. The packet may be baked or grilled depending on the rest of your meal. When you open the packet, the burst of aroma you get will sweep you off your feet! Note that vegetables are grilled in a single packet; but when meat is involved, single serving packets are made. Recipe is from Reynolds. You will use 1 sheet (18 X24 inches) of Reynolds Wrap Heavy Duty Aluminum Foil. -- posted by Lorraine of AZ

Caramel Grilled Pineapple Sundaes

Okay, so I know that we really cheated on the sauce by using a jarred sauce, but this is exactly what we served to some guests for a last minute dessert after a meal of "Brats--Our Way" and grilled corn on the cob, and they loved it! For four adults and two small children, this really was just barely enough, and we could have probably eaten another pineapple. I noticed that most other pineapple recipes here involve marinating the pineapple or brushing it with something just before grilling. We've never tried that, but really enjoy the simple, fresh taste of the pineapple without other added ingredients. If you've never tried grilled pineapple, you owe it to your tastebuds to try one of the recipes for it here on the zaar! -- posted by SrtaMaestra

Super easy, and the kinds of potato, oil and spices can be changed to suit any preference, although this is the masters' blend. We love them best finished on the top rack of the grill when the steaks are on, and nice big Jersey tomatoes sliced on the side. -- posted by Chef #616952

This is a rub to use on fish prior to grilling or smoking. Recipe from Steven Raichlen's How to Grill cookbook.
Grilled Portobello Mushrooms & Shallots With Rosemary-Dijon

These can easily become the star attraction to your next grilled meal! For the grilling itself, build a moderate, medium-heat fire. The veggies come out tender and full of smoky flavor and can be served warm or at room temp. If grill marks do not appear after 5 minutes, adjust either the heat level or the position on the grill. I have made these with chunks of red onion with equally good results. These have great flavor! Interesting factoid: Once the mushroom reaches 4 to 6" in diameter, it is called a Portobello rather than a Portabella. Adapted from Cook's Illustrated magazine, May, 2009. Hope you enjoy. -- posted by Scoutie

Grilled Vegetables

This is a great side dish or can use as entree. Terrific folded in a tortilla, even cold. Have also put on sub rolls with cheese for a vegetarian entree. I often double since this has so many uses later in the week for meals. Have also made a cold pasta salad with these chopped or a hot pasta dish topped with parmesan and added cooked cubed chicken. Use your choice of vegetables (asparagus, green beans), but this is what I like.
The Other BBQ Sauce

I'm always looking for new things to baste my grilled food with..thankfully DH and I have a creation of our own, that we've played with the spices for month's till finally coming up with this one. It offer's an excellant alternative to the same ole same ole tomato based sauce. We primarily use this when grilling chicken and sometimes pork, but it IS best on chicken. If you enjoy the sweeter side of sauces that have a hidden surprise of a kick at the end, then this sauce is for you. Use this as a base for your next "white" BBQ sauce and adjust it, play with it to make it your own! :) -- posted by I am his Jenni
