I researched the winning recipes from the last 15 years of the annual chili cook-off held in Terlingua, TX.  I then simply took what I liked, and left out what I didn't as far as ingredients.  Then put that together with some of the basic ingredients that I had been using for years.  The grilling technique is my own addition, and lends a beautiful smokey flavor to the chili. It was great, but I'm sure other sausage brands would work too!  The recipe originally said to make 8 patties, but they ended up so small that I decided next time I will make 6 larger patties. We used regular flavored sausage, but my husband and I love spicy food, so I can't wait to try this recipe using hot flavored sausage. Be sure to have all your favorite burger toppings on hand like lettuce, tomatoes, pickles, etc.**Update - made these patties for the 4th of July and used 96/4 extra lean hamburger since the sausage is so &amp;quot;fatty&amp;quot;. 			<description>We love Greek food, but Gyros are a true hit in my house! Most of the Gyros that we buy out are dry and the sauce never really tastes like it should. This is a fabulous recipe for those of us who love a REAL Gyro. It is flavor packed and very versatile. If you do not have lamb, you can substitute with finely ground hamburger. It will not be as authentic as the lamb Gyro, but the spices and seasonings used in this recipe will get you to where you are going! I serve this with recipe #296173. You can also wrap these up in foil and take along to a picnic or outing. UPDATE 07/25/08: I was given this recipe from a neighbor who used to live in our neighborhood and made this meat on his BBQ rotisserie. I had no idea it was an Alton Brown recipe until now. I honestly didn't even think about using the chipotles until I came across a recipe here using them. I didn't really follow that recipe much though :-) I looked at around 20 burger recipes trying to decide what to do. As I started looking, I started writing a list of the items from each recipe that sounded good. Then I put them together and made this. I found that my Kaiser rolls had molded and had to do a &amp;quot;quick bread change&amp;quot; and I think it came out better for it. &amp;quot;Da kine&amp;quot; is a key phrase in Hawaiian Pidgin, the language of the &amp;quot;locals.&amp;quot; It can mean almost anything, but commonly refers to something good or genuine, or as in this case, &amp;quot;the best.&amp;quot;

 This burger is as local as it gets, both in taste and ingredients. The patties are tender and juicy, thanks to fresh papaya and sweet onion, and are spiced with Hawaiian Portuguese sausage, which is so popular in Hawaii that it is on every breakfast menu (including McDonald&amp;amp;#8217;s). The accompanying salad employs heating oil to its smoking point, a local cooking method, resulting in a dynamite burger accompaniment. To complete the Hawaiian flavoring, I added a sweet glaze (Hawaiians love sweet and savory) and was inspired by our award-winning goat dairy to create a mouth-watering ginger-infused cheese spread. Ho, dat's da kine!

NOTE: The addition of a slice of your favorite cheese melted over the top of your burgers can never hurt.

ANOTHER NOTE: I make my patties and let them sit in the fridge covered in clear wrap for a half hour before grilling.

MORE NOTES: A good juicy burger can tend to make the bun soggy so it's a good idea to lightly toast the bun on the grill.
