Root Vegetables Casserole for Winter

Saw a picture of this one in *Successful Farming* magazine's January 08 edition and simply HAD to post it for future reference. It looks and sounds so G-O-O-D! Use the veggies in any combination, as long as you end up with 3 cups (plus the carrots, etc.). The original recipe wanted you to boil the onions with the other veggies--but that just didn't appeal to me--so I added the step with sauteeing the onions. Use your favorite melty cheese, we prefer cheddar, the original recipe called for Gruyere. Don't you love having a choice? -- posted by Debber

Chicken Pierre

This was the first meat recipe that my younger brother (Pierre) would reliably eat. He's older now, but this is still a family favorite. The sauce is incredible. It goes great with pasta, and even better on rice. This makes a lot of sauce, you could reduce it, but you'd regret it, people will want more sauce. I've been meaning to try this in a crockpot, if anyone does, let me know how it turns out. -- posted by GottaBeKD

Black Magic Coffee, Sugar Free-Fat Free

This is my own creation. I made it for a regular coffee mug but for a "Grande" simply double everything and use a tall latte mug. If you want to go all out for guests or your sweetie leave room at the top of the mug for a wallop (forget the dollop!) of whipped cream and sprinkle it with shaved bittersweet chocolate and finely crushed hazelnuts. Time for making this is after the coffee is brewed. -- posted by Annacia

Cathy's Toffee Blondies for C-A-C-H-E

Oooey, gooey and oh-so-good you'll want to eat 'em all! But really, save some for the next day or two, as they get better with time...and willpower is a good thing to test from time to time! A good friend brought over a batch of these little beauties as a thank you for hosting a homeschooling (CACHE = Coulee Area Christian Home Educators) function. I've made this right in the baking pan, too---with very good results.
This is a recipe that my mother used to make for us when we were kids. It became my brothers favorite. It's a great winter dessert, very simple and easy, one dish clean up. When ready you will have a delicious cake with a sweet sauce. This recipe asks for nutmeg, however if that is not your favorite spice flavour I'm sure you could substitute cinnamon and it would turn out just as great.
The Most Amazing Tasting Ribs in the World!

I actually got the basic idea from a Weber's Charcoal Grilling cook book, although I used a totally different barbecue sauce. This is the first time I've ever slow cooked ribs over charcoal and believe me - it really does make a huge difference. We've been doing ribs for years by boiling them, and then baking or barbecuing them and we've always enjoyed them. But slow cooking them over live fire just seems to add something that you can't get anywhere else! If you've got the time, and they're done right, you are going to love these! -- posted by Chef Ryoni

Blueberry Bran Muffins

These are wonderful muffins, if you're looking for healthy but the taste of oh-so-good. I just picked Saskatoon berries, and didn't have blueberries on hand, so I used those. Also, I put in 2/5 c. brown sugar, instead of the full cup, when I doubled the recipe, and olive oil to replace vegetable oil. The recipe said to bake for 20-25 minutes, but I didn't want to burn them, so I took them out after 14 minutes. But it's fabulous recipe that I found on the All-Bran cereal box, and thought I'd share!
Christmas Tree-Hunting Punch

Brew up a batch of this, pour into thermos jugs and insulated cups, hop into the car and drive to the Tree Farm to find your perfect Christmas tree. This will warm you up while you traipse through the rows and rows of trees. When you find the perfect tree, then pour a cup of punch, nibble on some Christmas cookies you also thoughtfully packed (needing nourishment after all that hunting!), and enjoy the scenery. If you're lucky there will be some beautifully falling snowflakes to add to the anticipation. Double or triple the recipe for a crowd--this freezes and thaws nicely for another occasion, too. You can adjust this and make it in the crock-pot too.
This is an extravagant splurge, so please cut the pieces in skinny slivers and the calorie count isn't so damaging! Make sure the cream cheese is at room temp for the best consistency of the batter. Try using orange flavoring instead of the usual vanilla--the orange and the chocolate will POP in your mouth. Cooking time does NOT include chilling time...so please PLAN AHEAD---this needs time to chill. Gotta love those folks at Gooseberry Patch--for always publishing such excellent recipes! Mmm-good! -- posted by Debber

Seafood Casserole for Christmas Eve from the Farmhouse

Getting the kids ready and out the door in time for the traditional Lutheran church's Christmas Eve Children's Worship Service is made MUCH easier with this recipe on hand. Get things ready ahead of time, make a loaf of garlicky French bread, and before the little whipper-snappers have time to realize what's happened, you've eaten a healthy AND festive supper, AND are STILL out-the-door in time for church to hear the story and sing the carols of the Birth of Our Savior! Those lovely ladies at Gooseberry Patch take the credit for coming up with this one. -- posted by Debber

When the whole family is home for the holidays, it's nice to have several recipes on hand that you can put together in the afternoon while they're off doing something else, and then be able to sit down together at the table for supper. This recipe is one of THOSE....put together and gather 'round the table to inhale it! Better double this recipe when you have a crowd!
Apricot-Balsamic Glazed and Grilled Chicken

From Rachael Ray's Sept. '08 "Everyday" magazine, so you know it's savory and simple--all at once. Her recipe called for apricot preserves, but I'm using up MIL's Peach Jam, and we loved it just fine. Also, I used only 2 chicken breast halves (paillard-cut) for four of us and we had leftovers (our chickens are very large!), so adjust the recipe up or down accordingly. -- posted by Debber

Simple & Succulent Canned Whole Chicken

This is basically the recipe I use for all my canned meat. I grew up with no electricity so all our meat had to be canned or fresh. When any one shot a moose or elk it would be shared around the comminity (about 7 families) and the rest would be canned. Mom would go back to her family on the prairies and can all the old laying hens and bring them home. When my kids were growing up I canned chicken just for a treat.

Nif's Nothing Fancy Meatloaf

Just a basic meatloaf recipe that my family happens to really enjoy. If you don't have green onions (they do add a great flavour), or your kids pick out the green pieces, you can substitute them with 1/2 medium onion, chopped. I'm not a huge fan of ketchup, but you can add it on top if you want to. Make these in a muffin tin if you want to get your kids more interested. Served with mashed potatoes and a veggie, it's a simple, tasty meal. These aren't huge portions so you might want to double the recipe. The leftovers will freeze very well.
Microwave Scalloped Potatoes

This came from a recipe book given to me by my grandmother-in-law. I like it because it cooks in about 1/2 the time of regular (oven) scalloped potatoes, and tastes basically the same. Great for weeknights when time is at a premium, or if you have no room in the oven. (Note, I noticed other recipes for scalloped potatoes call for cheese or other ingredients - this is scalloped potatoes like my mom used to make, basically just white sauce and potatoes.
This recipe is from "Alberta Bison" - we don't just have good beef here! If you haven't tried bison (buffalo), you really should. It has a wonderful taste and it's not gamey at all. My oldest Son actually prefers buffalo burgers over beef burgers and I really like them as well. I see no reason why this wouldn't work with beef.

Another tasty yet impressive recipe from Alberta Egg Producers. You can also use a microwave-proof wide mug if you don't have a ramekin or custard cup. You can cook more than one at a time, just make sure that they have cooked through; they should need more time the more you are cooking. Enjoy! -- posted by Nif

Seared Pork Medallions With Saskatoon (Or Blueberry) and Rhubarb

This is a recipe by Maren Lisac, chef of the Blue Plate Diner in Edmonton, Alberta, Canada. This would absolutely impress your guests. Enjoy!

A note about pork: the trichinosis parasite has been eradicated from pork in Canada, so it no longer has to be cooked to the well-done stage. Cuts like medallions and chops are much juicier and far more tender if cooked to the medium-rare to the medium-well stages. -- posted by Nif

Buffalo Chilli

Ground bison (aka buffalo) meat is growing in popularity. It is remarkably lean. For more heat feel free to add hot sauces, or chopped chilli peppers (like Jalapenos) just before serving.
Hearty Hamburger Soup

Please bear with me as this is my first posting :-).

Monday night is always soup night in our home and I'm often looking for recipes that are not too complicated AND my kids will eat. As usual no one recipe quite did what I wanted, so combining ideas from others I came up with this recipe and my kids loved it. Great comfort food for rainy days or cold prairie winters. I add extra ground cayenne to my bowl, for an extra kick and it's health properties. :D

Serve with fresh, homemade bread or crusty buns.

This recipe is very adaptable, as Chef Gusteau says... “anyone can cook !” =D. Please be creative to suit your own individual tastes as well as what you have on hand and feel free to share with me your changes. -- posted by Shannon & boys

Nif's Grandpa's Baked Granola

When I was a little girl, my Grandma would make batches of this for my Grandpa. It filled her house with a wonderful aroma and tasted terrific. She would store it in large glass Mason jars when it cooled. This is a half batch of what she used to make and my Sister makes this amount fresh every week. You can eat this as regular granola with milk or sprinkle on yogourt or ice cream. Thanks Grandma!
Authentic Cafe' Con Leche (Coffee With Milk)

Posting for ZWT 5 as we zip through Spain so might as well make this educational AND entertaining: Coffee was once believed to cure consumption, dropsy, gout, and smallpox; AND--get this!--when mixed with milk--as in this recipe--coffee was believed to be a CAUSE of leprosy! Oh, no! I think we've proved through many years of not-so-scientific daily coffee-drinking that this is not true. Enjoy a cup and rest assured, you will not be leaving any body parts behind when you've sipped the last drop!
Country Caramel Apples Around the Campfire

Here's a recipe that is sure to draw some oohs and aahs from your favorite diners! An easy-to-make, simple way to end the day while camping or on the back deck. The hardest part is coring the apples. Try stuffing the core with other melty sweet treats: chocolate caramels, cinnamon Red Hots, Lemon Drops, Gummy Bears. Oooohh...! The original recipe came from the Lutheran Girl Pioneer Camping cookbook. COOKING TIME DOES NOT INCLUDE getting the fire or grill coals going. This is a good recipe to put on as the fire is dying down---or AFTER you've pulled the meat off the grill--while you're eating supper. These will cook all by themselves while you're eating! -- posted by Debber

Campfire S'mores (Aka Robinson Crusoes)

If you like regular S'mores, you're going to LOVE these! Start with chocolate graham crackers, smear on some creamy peanut butter, add the chocolate candy pieces, the melty marshmallow; then top with the other square of graham cracker. THE TRICK to making these perfectly is being patient while the marshmallow is roasting....don't stick it into the fire, twirl it slowly over the warmth, so that it starts to swell up. That's your signal that the inside is getting all soft and smooshy--just right for perfect s'mores. I first made these back in the early 90's when taking 10 girls on a church youth camp-out in eastern Washington State. We cooked all our meals over the open-fire (no campstove!!) including chocolate chip pancakes MADE FROM SCRATCH, pioneer hotdogs (yum, yum!) and caramel apples roasted in the coals. I guess I need to post those recipes too. After all...it's summer-time and people are camping!!! -- posted by Debber

Rhubarb Crisp: a Celebration of Summer!

My rhubarb flourishes at the end of my clothesline, right next to a patch of hollyhocks that sway in the summer breezes. Right now there are some little birds (I can't make them out with my spotting scope) snatching up pine needles and flitting about busily. Anyway, this recipe comes from the June '09 issue of *Country Living*. I do live in the country, and have an abundance of rhubarb. It's easy to freeze the cut-up pieces, and if you toss the pieces with sugar (right in the zipper bag), you can pop it in the freezer and use them later. The extra sugar will be fine in the recipe! -- posted by Debber

Mennonite Cucumbers

I'm marrying into a Mennonite family, so I want to learn as many of the 'traditional' recipes as I can. We don't eat a lot of Mennonite dishes, but knowing about them is a great way to get immersed in the culture (and it gives me something to talk about with my fiance's grandma and her Church Ladies when I join them for coffee).

This is one of the first recipes that my MIL taught me, and it's by far the easiest to remember. Creamy with a bit of zing, this is a quick and easy side dish or condiment, best enjoyed using garden-fresh cukes. Amounts are estimated as this is pretty much a taste-as-you-go recipe, so make it to suit your own palate. -- posted by Stylin'Dog

Nut and Egg Free Cookies

These cookies are sure to be safe in any school! And taste awesome too! One of our children started at a new school this year and it turns out to be a nut and egg free school because of the seriousness of the allergies that some of the children that go there have. As a result my wife started scouring different recipes for snacks that were egg and nut free to send along with our daughter for school. She didn't really like any of the ones she tried so she ended up creating her own out of a combination of all the cookie recipes she tried. Hope you enjoy them as much as we do. -- posted by Chef Ryoni

Pioneer Drumsticks (Meatloaf on a Stick)

This was a favorite with the kids on our camping trips in the Pacific Northwest. Take your favorite meatloaf recipe, prep it at home, freeze or use the first night out. Have the kids look for green sticks about the size of your little finger. Guaranteed hair-on-the-chest strength (!) for the weak-kneed who don't like touching "raw" meat. Serve in HOTDOG buns with your favorite HAMBURGER condiments. The original recipe came from a Lutheran Girl Pioneer camping-cookbook. Tried & true! COOKING TIME does NOT include how long it may take the charcoal or fire to be ready. -- posted by Debber

Asiago Baco Buns

Here is a recipe that I came up with when wanting a bacon and cheese type bread but not wanting to use bacon. I always make buns but you could, of course, make a standard loaf of bread with it if you like. I always use the bread machine for the kneading then form and bake in the oven. -- posted by Annacia

Tomato Barley Soup With Thyme

I made this up quick when I had limited ingredients in the house, and unexpected company on their way for a meal. It's great comfort food and easy to make. I like to have nice crusty loaf of bread to serve along with and it makes a very hearty meal, especially with the beans (omit those if you're not a big fan). The barley makes it nice and thick. You can use homemade or store purchased soup stock if you prefer, just omit the bouillon and water. -- posted by Canning_Queen

Quinoa Fritters

I created this recipe when I was on a highly restricted diet for 5 months, but I loved it so much that I adapted it a little and it's now a staple for us. It goes especially well with soup. They are also really good dipped in pretty much any kind of mustard, and my little one year old boy loves them. Feel free to experiment with any kind of rice you have on hand for this. I've used 11 different types of rice for it, and each time it was wonderful. It's a simple side dish, and sure to please anyone that comes through my door for a snack or a meal. -- posted by Canning_Queen

Misty's Venison Stew
