Easy Scalloped Potato Casserole

Nana's Fuzzy Navel Cake

Found this recipe in the country register newspaper. A newspaper that comes out in both Manitoba and Saskatchewan every month or so. There is no schnapps in this recipe and I take it that is why its Nana's. I have not made this cake, but want to keep it in my cookbook. The servings etc. are not given so I am just guessing. Also guessing on the pie filling and instant pudding size. -- posted by cookalot #2

Stuffed Whole Cabbage

This twist on cabbage rolls might sound like a lot of work but is quite easy and makes for a great presentation. Your guests will be amazed! It also reheats well and is good cold. This doesn't have the usual tomato based sauce poured on top, but I have done it that way too and both ways are excellent! Be sure you have a clean piece of cheesecloth before starting this recipe.

This was an inspired recipe! I just put together some things I knew would taste delicious and they did! I LOVE this dish and will keep it in my arsenal of favourites.
It's a good idea to make the tomatoes and spinach beforehand so you have all your ingredients at the ready. -- posted by Adam in Calgary

Black Magic Coffee, Sugar Free-Fat Free

This is my own creation. I made it for a regular coffee mug but for a "Grande" simply double everything and use a tall latte mug. If you want to go all out for guests or your sweetie leave room at the top of the mug for a wallop (forget the dollop!) of whipped cream and sprinkle it with shaved bittersweet chocolate and finely crushed hazelnuts. Time for making this is after the coffee is brewed. -- posted by Annacia

The Most Amazing Tasting Ribs in the World!

I actually got the basic idea from a Weber's Charcoal Grilling cook book, although I used a totally different barbecue sauce. This is the first time I've ever slow cooked ribs over charcoal and believe me - it really does make a huge difference. We've been doing ribs for years by boiling them, and then baking or barbecuing them and we've always enjoyed them. But slow cooking them over live fire just seems to add something that you can't get anywhere else! If you've got the time, and they're done right, you are going to love these! -- posted by Chef Ryoni

Garlic,balsamic and Rosemary Roasted Potatoes

As the potatoes cook, the balsamic vinegar caramelizes making the potatoes sticky and mouthwatering.
Special Occasion Chocolate Truffle Cheesecake

This is an extravagant splurge, so please cut the pieces in skinny slivers and the calorie count isn't so damaging! Make sure the cream cheese is at room temp for the best consistency of the batter. Try using orange flavoring instead of the usual vanilla--the orange and the chocolate will POP in your mouth. Get things ready ahead of time, make a loaf of garlicky French bread, and before the little whipper-snappers have time to realize what's happened, you've eaten a healthy AND festive supper, AND are STILL out-the-door in time for church to hear the story and sing the carols of the Birth of Our Savior!
Apricot-Balsamic Glazed and Grilled Chicken

From Rachael Ray's Sept. '08 "Everyday" magazine, so you know it's savory and simple--all at once. Her recipe called for apricot preserves, but I'm using up MIL's Peach Jam, and we loved it just fine. Also, I used only 2 chicken breast halves (paillard-cut) for four of us and we had leftovers (our chickens are very large!), so adjust the recipe up or down accordingly. -- posted by Debber

Coyotes Blue (Or Yellow) Cornmeal Bread

This sweet, and very moist cornbread is served at Coyotes Deli & Grill in Banff and the recipe was printed in Bon Appétit (Nov. 2001). Pine nuts add a surprisingly delicious element.
The blue cornmeal makes for a beautiful presentation but it tastes just as delicious with yellow. Toast pinenuts on a cookie sheet at 350°F for 5 minutes. Best served warm.
