Pork Medallions with Apples and Cheese

Pork Tenderloin is a favorite of ours-this is an excellent fall dinner when apples are crisp and juicy. They really play off the sweetness of the pork and the creamy cheese. -- posted by DiB's

Resurrection Buns (Sweet Easter Buns)

These buns form a 'hollow' in the middle after baking. This hollow represents the empty tomb when Christ arose on Easter. They taste very much like cinnamon buns. YUMMY! -- posted by MapleLeafLili Hill

Barbecued Pork With Cheese Cornbread

Sassy's Summer Berry Crisp

This is a wonderful Summer Dessert. You can use whatever berries you can get your hands on. The combination of the apples and cherries are just awsome! In the summer I serve it with ice cream, as that is a big hit with the kids; both big and small! Don't be scared to mix and match whatever kind of fruit you need to use up.
Easy Scalloped Potato Casserole

Chicken or Turkey Pot Pie

Ultimate in comfort food dinner, and very easy to make.

I got this as a "starter" from Emeril 5-6 years ago, and altered to represent real life circumstance of "leftovers", but the results are to die for.

Leftover stuffing can also be added, and this kicks the spicing up "differently", given the variations of how you might choose to grind giblets, neck meat, etc into it, and/or use 12 grain bread for stuffing mix. -- posted by John DOH

Wayne's Mennonite Noodle Soup

This is the soup that my husband grew up on. He comes from a Mennonite Family in Manitoba, and they just call it simply "Noodle Soup" but I would call it chicken noodle soup. Also cooked by the Pennsylvania Dutch ;)
This will be unlike any other Chicken Noodle you have had. There are healing qualities in the cinnamon and anise, a great elixer for colds/flu.

Oatmeal Barley Cookies (Wheat Free)

Delicious, chewy, relatively healthy oatmeal cookies that do not contain wheat flour. Chocolate chips, raisins, dried cranberries and butterscotch chips all make great add-ins, you can also add more than the amount specified in the recipe. These cookies travel very well in lunchboxes and backpacks.
The original recipe came from the Rocking P Ranch in Nanton, Alberta.
Root Vegetables Casserole for Winter

Saw a picture of this one in *Successful Farming* magazine's January 08 edition and simply HAD to post it for future reference. It looks and sounds so G-O-O-D! Use the veggies in any combination, as long as you end up with 3 cups (plus the carrots, etc.). The original recipe wanted you to boil the onions with the other veggies--but that just didn't appeal to me--so I added the step with sauteeing the onions. Use your favorite melty cheese, we prefer cheddar, the original recipe called for Gruyere. Don't you love having a choice? -- posted by Debber

Chicken Pierre

This was the first meat recipe that my younger brother (Pierre) would reliably eat. He's older now, but this is still a family favorite. The sauce is incredible. It goes great with pasta, and even better on rice. This makes a lot of sauce, you could reduce it, but you'd regret it, people will want more sauce. I've been meaning to try this in a crockpot, if anyone does, let me know how it turns out. -- posted by GottaBeKD

Blueberry Bran Muffins

These are wonderful muffins, if you're looking for healthy but the taste of oh-so-good. I just picked Saskatoon berries, and didn't have blueberries on hand, so I used those. Also, I put in 2/5 c. brown sugar, instead of the full cup, when I doubled the recipe, and olive oil to replace vegetable oil. The recipe said to bake for 20-25 minutes, but I didn't want to burn them, so I took them out after 14 minutes. But it's fabulous recipe that I found on the All-Bran cereal box, and thought I'd share!
Christmas Vacation Manicotti Casserole

When the whole family is home for the holidays, it's nice to have several recipes on hand that you can put together in the afternoon while they're off doing something else, and then be able to sit down together at the table for supper. This recipe is one of THOSE....put together and gather 'round the table to inhale it! Better double this recipe when you have a crowd!
Simple & Succulent Canned Whole Chicken

This is basically the recipe I use for all my canned meat. I grew up with no electricity so all our meat had to be canned or fresh. When any one shot a moose or elk it would be shared around the comminity (about 7 families) and the rest would be canned. Mom would go back to her family on the prairies and can all the old laying hens and bring them home. When my kids were growing up I canned chicken just for a treat.

Microwave Scalloped Potatoes

This came from a recipe book given to me by my grandmother-in-law. I like it because it cooks in about 1/2 the time of regular (oven) scalloped potatoes, and tastes basically the same. Great for weeknights when time is at a premium, or if you have no room in the oven. (Note, I noticed other recipes for scalloped potatoes call for cheese or other ingredients - this is scalloped potatoes like my mom used to make, basically just white sauce and potatoes.
Hearty Hamburger Soup

Please bear with me as this is my first posting :-).

Monday night is always soup night in our home and I'm often looking for recipes that are not too complicated AND my kids will eat. As usual no one recipe quite did what I wanted, so combining ideas from others I came up with this recipe and my kids loved it. Great comfort food for rainy days or cold prairie winters. I add extra ground cayenne to my bowl, for an extra kick and it's health properties. :D

Serve with fresh, homemade bread or crusty buns.

This recipe is very adaptable, as Chef Gusteau says... “anyone can cook !” =D. Please be creative to suit your own individual tastes as well as what you have on hand and feel free to share with me your changes. -- posted by Shannon & boys

Authentic Cafe' Con Leche (Coffee With Milk)

Posting for ZWT 5 as we zip through Spain so might as well make this educational AND entertaining: Coffee was once believed to cure consumption, dropsy, gout, and smallpox; AND--get this!--when mixed with milk--as in this recipe--coffee was believed to be a CAUSE of leprosy! Oh, no! I think we've proved through many years of not-so-scientific daily coffee-drinking that this is not true.
Mennonite Cucumbers

I'm marrying into a Mennonite family, so I want to learn as many of the 'traditional' recipes as I can. We don't eat a lot of Mennonite dishes, but knowing about them is a great way to get immersed in the culture (and it gives me something to talk about with my fiance's grandma and her Church Ladies when I join them for coffee).

This is one of the first recipes that my MIL taught me, and it's by far the easiest to remember. Creamy with a bit of zing, this is a quick and easy side dish or condiment, best enjoyed using garden-fresh cukes. Amounts are estimated as this is pretty much a taste-as-you-go recipe, so make it to suit your own palate. -- posted by Stylin'Dog

I made this up quick when I had limited ingredients in the house, and unexpected company on their way for a meal. It's great comfort food and easy to make. I like to have nice crusty loaf of bread to serve along with and it makes a very hearty meal, especially with the beans (omit those if you're not a big fan). The barley makes it nice and thick.
Quinoa Fritters

I created this recipe when I was on a highly restricted diet for 5 months, but I loved it so much that I adapted it a little and it's now a staple for us. It goes especially well with soup. They are also really good dipped in pretty much any kind of mustard, and my little one year old boy loves them. Feel free to experiment with any kind of rice you have on hand for this. I've used 11 different types of rice for it, and each time it was wonderful.
Drunken Raisin Oatmeal Cookies

This is my co-worker's favorite version of oatmeal raisin cookies, everytime I make them, they are eaten almost as soon as I put the package out to share. This was inspired after I made carrot pudding for the second time ever, my DH's favorite holiday dessert, and his need for rum sauce to pair with it, the classic pairing of rum and raisins. It's so popular that i have to make a double batch everytime . -- posted by Katrilla
