However, I used sushi rice instead of the typical italian arborio- but it absorbs just as much!! Good stuff. As for taste...think of your favorite chicken soup recipe...but risotto syle.

It was a lot of work, but she always seemed to have it on the table in minutes! She usually made it when I was sick or not having a great day (my mom too). This recipe is my adaptation of Colonel Harland Sanders' personal gravy and dumpling recipe, which I've brought a little closer to Nana's... made a lot easier! Do try this with egg noodles, it is a night and day difference from the boxed variety found in your supermarket eisle. I have modified Ree's recipe slightly by increasing the carrots, celery, and adding chicken base to this recipe and omitting the salt because of the saltiness of the chicken base. Can really make it your own, and honestly you cannot taste the pumpkin.  ( I made this for my mom and her beau, who turns his nose up at anything healthy, and he LOVED it!)

I usually use 1 lb of ground chicken breast, but today I made it with 1.5lbs of shredded chicken. I have to say, I LOVE it with the shredded chicken. would make a great sandwich!

			<description>This is a great recipe that a friend of mine has been bringing to office pot-lucks for years.  I just got the recipe from him and made it myself.  It's a unique and pretty decadent twist on traditional enchiladas.

You can adjust the amount of green chiles and jalapenos to your particular taste.  This recipe carries a little bite, but is not particularly hot (even using green chiles rated HOT).  To pep it up, use 3 cans of green chiles and 2 cans of jalapenos.

Best part is that it takes no time at all to make. On days when I don't have time, I simply mix everything together beforehand, cover it in saran wrap and throw the Corel bowl (which I can put directly into a steamer) into the fridge until 30 minutes before dinner time.  To avoid using the chicken bouillon I have tried using chicken broth, but I really see no difference in taste.
