Chicken and Mushroom Party Pies

Tasty party pies to enjoy on any occasion, from The Australian Women's Weekly's 'little pies & cakes'. How many this will serve will depend of course how many other such dishes you serve at the same time. An Australian brown onion is what Americans call a yellow onion. -- posted by bluemoon downunder

Colombian Style Empanada

My husband finally had a great idea for using leftover rotisserie chicken. I used the traditional seasonings with non-traditional methods, still great. These can be frozen before cooking since they are best served fresh. You need frozen empanada dough which is found with the Goya products (there are other brands) and is yellow in color. Or you can make your own using masa harina which would be more authentic. -- posted by Ice Cool Kitty

Sweet Turkey and Herb Roll-Ups

This is a kid-friendly wrap I came up with to serve at my DD's 7th birthday party. It is slightly sweetened by the applesauce. This is sized for 8 little girls to nibble on at a party. So while these would make a lovely lunch, you might double the serving size. -- posted by CraftScout

Baked Buffalo Wings

I wanted to avoid deep fat frying chicken wings, they are fatty enough! I couldn't find many baked wing recipies, so this is mostly a baking technique recipe rather than a wing and sauce recipe.

These make a nice crisp wing perfect for parties and a smidge healthier than the usual fried wings. -- posted by Chef #401930

Flautas With Shredded Chicken

Flautas means "little flutes" in spanish and refers to the shape of these crispy filled tortillas. The chicken in flavored with chiles, onion, and tomato. At first I was a bit worried about the chicken being too spicy, but once it was cooked with the tortilla wrapped around it the heat was just perfect for us. You might consider using less chiles.
Spiced Chicken and Grape Skewers

Adapted from Ellie Krieger's recipe. Chicken and grapes are just meant to be together! This combination is just wonderful with the cumin and coriander spices. It is equally delicious with lemon or orange. The savory garlic and sweet grapes make it irresistible. I serve it with a quick yogurt sauce (greek or plain yogurt, garlic, fresh lemon or orange juice). Ellie's couscous and a green vegetable are great side dishes. This is so fast and easy to prepare. Pineapple and almonds are the surprise hits in this creamy chicken salad in cute cups making the perfect appetizer or snack portion. A great one for the spring and summer entertaining.

Sticky Grilled Drumsticks With Spicy/Sweet Plum Sauce

Food & Wine Magazine, August 2008 edition. From Pairing of the Day: August 2008, Great Chicken Recipes: Wings, Breasts, Drumsticks and Thighs. Grace Parisi prepares a wonderfully sticky and nicely sweet glaze of fresh plums and red pepper jelly to brush over drumsticks while grilling. Hot red pepper jelly makes for a spicier glaze, sweet pepper jelly creates a milder one. We opted for the milder one because we made it for the home but we made a batch of the spicier glaze for us and it was wonderful! This is a fantastic and tasty recipe for the grill and the summer.Suggested wine: Juicy Primitivo: 2006 . Serve with the drumsticks, corn on the cob with any of the outrageous butter recipes on zaar, a yummy mixed-greens salad with garbanzo beans, bacon, sesame seeds and a champagne vinaigrette, and then for dessert something chocolate and DECADENT! ;) -- posted by Manami

Chicken and Mushroom Pockets (Paula Deen)

This is from the May /June 2009 issue of Paula Deen's magazine under party menus "Meet the Parents Menu" as the appetizer. I made these for my family and guests and they all really enjoyed them. I didn't tell my husband and he said they seemed more upscale than most appetizers. The secret is the filling for the pockets. This is a delightful little mouthful. This is made for a party so it makes a lot of pockets.
Jalapeno Chicken Salad

This was a winning recipe in Home Cooking magazine, and after tasting, you will see why. The creaminess of the dressing perfectly compliments the spice of the jalapenos. I adapted this a little and my family loves it! It's delicious on a bed of fresh greens, or rolled into a tortilla. This is also a hit served in a bowl with cornbread crackers to use as dippers.

V's Soft Turkey Taquitos With Southwestern Dip

Every year my dad would make these taquitos with leftover turkey. The corn tortillas are lightly fried in oil, rolled with turkey and sealed on a griddle and come out soft with a nice crunch with the turkey still moist and delicious. These are awesome because they are not deep fried or baked. I took over the tradition and have been making these for years. My family won't eat any leftover turkey in any other form except these soft taquitos. We look forward to these as an appetizer or a meal served with my own Southwestern Dip, Cheese Sauce, Salsa and my Chunky Guacomole the day after thanksgiving. -- posted by Vseward (Chef~V)

Accidentally the Best Baked Chicken Nuggets Ever

Accidentally discovered this while playing around with Chinese restaurant classics. My nugget-expert daughter loved them.
