			<title>Smoked-Fish Spread Adapted from Ted Peters Famous Smoked Fish</title>

			<description>This recipe is from Guy Fieri Diners, Drive-ins, and Dives.  It is adapted courtesy of Ted Peters from Ted Peters Famous Smoked Fish in South Pasadena, FL.  I didn't have trout so I substituted salmon, but it's still delicious.  I also didn't have sweet relish and used dill pickles and pickle juice.  Quite a tasty little spread that would be great for a picnic or quick lunch. I doubled the recipe to have leftovers during the week.  I followed the recipe except I used whole wheat pasta shells, red onion, regular mayonnaise (1 cup instead of 2 cups), and I tripled the peas.  I also used 1/2 teaspoon salt and decided to add lemon pepper seasoning at the end for flavor.  Works great when you're hungry now and need something quick. 			<description>Although it's called cucumber potato salad, the recipe doesn't even call for cucumbers.  It calls for cucumber dressing.  I think next time this would be good if you threw in a few cucumbers too.  This recipe serves 36 and is designed for large gatherings.  I made 1/5th of the recipe or so and was pleasantly surprised at the flavor of the cucumber dressing.  I must confess that I added a few hard-boiled eggs, used the celery ribs and the leaves, threw in some dill pickle juice, and I couldn't resist a few crunchy garlic dill pickles in the mixture.  The recipe is great just by itself, but I love dill pickles and eggs in potato salad. 			<description>I know, I kind of have a potato salad problem.  This recipe came in my email from Taste of Home (it's a Country Woman recipe), and I couldn't pass it up.  It called for French Onion Dip, and I just put 1/2 a package of Lipton Onion Soup Mix with 8 ounces of sour cream.  For the dill pickle relish, I used dill pickles and a couple splashes of dill pickle juice.  I didn't have any bacon, and I must confess this was delicious even without the bacon.  After I made the recipe I read what some people suggested:  one person said adding a little horseradish gave it a little kick (I think I'm going to throw some in right now), and another person suggested using half mayonnaise and half sour cream when you make your French Onion Dip for better texture and more flavor. 			<description>Not your usual Tabbouleh, this salad merely has a similar consistency and shares some common ingredients with its authentic cousin.  It has a lot of crunch thanks to the apple, radish and walnuts, and involves no actual 'cooking'.  The bulgur and dressing could easily be made a day in advance, but I do find it tastes best if the salad, fully combined, is allowed to sit for about 30 minutes to an hour before serving.  Ideal to share, bring it along to your next potluck party!  Serves 6-8 easily as a side. Just bring the parsley/bulgur component of the salad and the strawberry part in 2 different plastic containers and combine them before eating (so the strawberries don't get too mushy). Both the sweet and savoury elements of this salad complement each other so well...you won't be able to stop eating it! 			<description>This is a very good potato salad from the folks at America's Test Kitchen.  I must confess that I love dill pickles and prefer that flavor to sweet pickle relish.  I wound up adding a couple dill pickles and some dill pickle juice to this recipe (just a personal preference) and quite a few more eggs.  Here are the tips from Cook's Illustrated:  If you only have celery salt available, use the same amount but omit the salt in the dressing.  When testing potatoes for doneness taste a piece.  If you overcook they will become mealy and break apart.  The potatoes must be just warm or even fully cooled when you add the dressing.  If you find the potato salad a little dry for your liking, add up to 2 tablespoons more mayonnaise.
