			<description>This is an easy beginner's curry. It is a very flexible recipe- you can use whatever vegetables you prefer or have to hand.The flavours are not spicy but more fresh and slightly fruity (from the mango chutney). You could of course add more spice to tailor it to your preferences. 
I have organised this recipe to be quick, but you do have two pans on the go at once- the vegetables in the saucepan and the skillet. If you prefer an easier pace, boil the potatoes, add the broccoli and cauliflower then drain and set aside when cooked. If you don't want to stray from traditional meatloaf- go ahead and use ketchup instead- but I recommend trying the BBQ at least once- my family loves it! I did one butt in the oven without soda and one in the crock pot with soda. I had never used soda pop in a recipe before but I heard it was worth a try and YES it was! The Crock pot recipe turned out so tender, moist and delicious, (according to the thirty something guests...this was a real hit.) Well worth trying and very easy to make. A lovely outdoor or 'big game' meal served with a variety of salads and crusty buns. Oh, and beer. 			<description>I live in southern New Mexico.  Our cuisine is far different than that of northern New Mexico (ie, Santa Fe, Taos, etc.).  Las Cruces, or Hatch really, is the chile growing capital of the world.  Whenever we have pot lucks at work or partys, my green chile enchiladas are always requested.  If it is going to be an especially large group, I leave out the chicken and just make several trays of green chile cheese enchiladas.
Just for clarification, &amp;quot;CHILI' is that soup dish made with hamburger meat and beans that is popular in Texas, while &amp;quot;CHILE&amp;quot; is the spicy vegitable that makes mexican food so great.
Green chile and red chile come from the same plant.  Green chile is harvested when ripe, and red chile is from chile left on the vine or tied up in RISTRAS to dry out and become red chile.
When I was in college in Odessa, they didn't have descent green chile, they used tomatillos instead.  I did not like that at all, so I substituted fresh jalapenos instead. Cook's Illustrated adapted this recipe where you used wood chips, soaked in water. I make this when I need something special, but don't have the time to invest in &amp;quot;fancy&amp;quot;.  I think the best type of pan to use for this, is the bottom part of a broiler pan, but a 13x9 works fine too.  One final note - for some families, once box of the rice might be enough. The customer noted he is a first generation Hungarian-American, who for twenty years has been searching for a goulash recipe that even remotely resembled his beloved grandma's... &amp;amp; this is it. Not only does it reheat well, it actually tastes better the next day - another one for the brown bag wide mouth thermos. BTW - pork shoulder works fine too - just trim either of excess fat &amp;amp; shoot for a pound and a half of meat to cube. 			<description>Spicy goodness! Pumpkin's not just for dessert anymore either-- and this is a fun casserole that has elements of Latin and Middle Eastern cooking.  Best of all, you don't even have to use the stove to make the sauce! It is a very thick and rich sauce. The pumpkin base is very hearty and delicious, and is jam-packed with Vitamin A and lycopene. The garbanzos (chickpeas) are loaded with protein and cold-press olive oil is good for your heart (so it's a good fat instead of bad fats like in vegetable oils and shortening.) You won't believe this yummy casserole is healthy. :) This is a totally vegetarian dish, but if you want to vegan-ize it, you can use soy, hemp or almond &amp;quot;cheese&amp;quot;, skip it altogether, or use some soy silken tofu. Meat lovers might want to throw in ground beef, and/or use chicken or beef stock/broth instead of veggie broth. I made this up myself, and love it! I have a group of friends (my pool buddies ... we play pool on Friday nights) they love these. Three (3) different dips, all unique served with my spicy chicken sticks (just chicken on a stick, but it is fun and never any left.  You can always cut down on the sauces but honestly, there usually isn't any left.  And what is left - I  can easily use in the next few dinners.  The herb vinaigrette is great over fresh fish, shrimp, scallops, or chicken.  The sundried tomato is awesome on a baguette with grilled chicken for an amazing sandwich; and the artichoke, over pasta for an easy side dish or even or some grilled salmon or grilled chicken breasts. 			<description>This was a throw together I made one night that turned out brilliantly.  You can adjust the seasonings to your taste... just remember the stock and cous cous should be equal quantities.  Great blend of sweet, sour and spicy. It's quick, filling, nutritious and will keep for a few days in the fridge - nice cold as well. 			<description>I'm currently on a budget casserole roll here. Feel free to sub the cream of potato soup for any other cream soup (my other favorites are mushroom and celery), they're pretty packed with flavor. It's just that not as many use cream of potato like I do! I like Stovetop traditional sage stuffing mix and the turkey one, any kind of boxed stuffing will do.
