Leek Soup With Apples and Blue Cheese

Seafood Chowder Under Pressure

I was craving a good seafood chowder that I could make with my new pressure cooker and in searching and reading many recipes online decided on this one. It's a mix of several different recipes. It was better than expected and something I'd like to make again. I served this with crusty bread and slices of gouda cheese. -- posted by zaar junkie

Potato and Leek Soup

Growing up in Scotland this soup was a favorite of mine. Over the years I have adapted it to suit my tastes. This is the full fat creamy version I use for Xmas and Thanksgiving a true treat for the holidays! But it is very easy to adapt it by using milk or half& half instead of creme fraiche, which I do at other times of the year. This freezes well, I reheat and add creme fraiche just before serving. There are creme fraiche recipes on this site the one identical to mine is Judi Caston's #34037. The servings are for holiday meals, if only for a dinner it serves about 4-6 -- posted by mrs mack

Bavarian Potato Leek Soup

I found this on a copy-cat site and its the best I've found so far. I use a potato masher right before serving to make it creamier but with some chunks of potato. You could also use an immersion/stick blender if you like it really smooth.
Very Serious Harvest Potato Soup

This is an intense potato soup made from scratch, like all of my recipes. It is savory, thick, creamy, flavorful, and rich.
Creamy Potato Cauliflower and Ham Soup

I have a potato soup recipe I love, but I wanted it to be a little less heavy on the carbs (not carb free, but just less). I decided to add cauliflower to replace some of the potatoes, and we couldn't really tell- plus it tasted great.
Potato Cheese Soup

This recipe was given to me by a friend and I just love it. Good comfort food! The first time I made this, I followed the directions exactly and baked my potatoes for about 1 1/2 hours at 500 degrees. I passed the recipe on to my mom, who just boiled her potatoes and she said it turned out perfectly, so by all means, make things easier on yourself. Just thought I'd post orginal directions as they were given to me. I used an immersion blender to make the soup creamy, but still left a few small chunks of potato to add texture. Add liquid as needed. Yummy! This makes a huge amount, so feel free to half the recipe. -- posted by Lydia's Mama

Family Favorite Vegetable Soup

This soup is chock full of veggies! It is wonderful with a loaf of crusty French Bread on a cold winter day. It is a family favorite. If I have kale in my garden I chop about a cup and throw that in. If I don't have fresh zucchini, I add in zucchini that I have dried over the summer. Sometimes I will throw in a handful of lentils. -- posted by Chef Cindy Rose

Roasted Beet and Potato Soup

I recently roasted five pounds of beets and have been using them for side dishes. I decided to make soup last night, and it turned out quite nice. You may get more servings, but we really like our soup and 4 servings is all I got. I am sure that canned beets would also work quite well. I like evaporated milk because it brings richness with fewer calories, but half-and-half would also be good. I don't usually have fresh celery, but 1/2 cup of chopped celery could be used instead of the flakes and 1/4 tsp fresh ground pepper instead of the peppercorns. Add an hour to the cooking time if you need to roast fresh beets. -- posted by duonyte

Cream of Potato Soup

This soup isn't like the potato soups you find in resturaunts. This is an old fashioned Cream of Potato soup. I got the orignal recipe in home ec. in high school. This soup is thick and hearty. Perfect for cold days or when you just want some comfort food.

I've given alternate measurements for a smaller portion at the bottom of the recipe along with tips to make thinner and/or chunkier. -- posted by ~Sherry~

Grilled Asparagus and Sweet Potato Miso Soup

Although you can use American sweet potato, it is best with Japanese sweet potato if you can find it. Besides asparagus and sweet potato, you can certainly add slices of kabocha and green beans as well. This is a very basic miso soup and you can add other ingredients as well. This makes small 4 servings ie what I call Japanese serving size, less than 1 cup per person. -- posted by Rinshinomori

Fresh Asparagus, Onion, Potato Soup

Easy and quick with the help of a food processor. This couldn't be easier and a great soup to make in a hurry. Serve as a starter for dinner or a main course with a side salad or sandwich. I make this often when my grocery store puts asparagus on sale or when they have it at the Farmers Market.
Vegan Creamy Corn Chowder

This is a very simple recipe. I use unsweetened 'MimicCreme' for all my cream based soups. It is made from a blend of almonds and cashews and is dairy free, cholesterol free, gluten free, 100% natural, kosher and of course, vegan. It can be ordered from mimiccreme.com or Amazon.com. The mimicreme.com web site also lists retail locations where it can be purchased. Of course, feel free to use any non-dairy substitute, such as soy, almond or hemp milk, but it may not be as creamy (you can always thicken with 1 tablespoon flour + 1 tablespoon water or broth). -- posted by CinLin

Using the Christmas Ham Bone, Makes You Feel Good Potato Soup

This recipe is a "base" potato soup that is WONDERFUL as is, but with SO many possibilities! I dumped in a can on Niblets corn, and it became chowder! It was wonderful! How about: add Julienne'ed carrots close to the end; or 8 oz Velveeta cheese; or 2 cups cooked broccoli florets; or throw in some cooked shrimp and crab meat & some Cajun seasonings...; or any combination you can think of! YUM! If your hambone isn't too meaty, add a cup of shredded or chopped ham from leftovers. -- posted by Shelley Lee

Winter Vegetable Stew

This stew brings the fresh aroma of thyme and tarragon and the slight tang of balsamic vinegar to winter veggies. It makes a meal when served with garlic bread topped with shredded mozzarella or provalone. Chick pea flour--found in Indian grocers and in some health food stores--adds body and deepens the flavor. -- posted by yankeeecho

Dehydrator Potato Soup

This soup is creamy and thick and the flavor actually improves if allowed to stand a few hours before serving. Very the herbs as your supply or inclinations allow. Small pieces of dried jerky or bacon bits are very good added to it, too. With a salad, it makes a pleasing simple lunch or supper, particularly on a chilly day. The recipe doubles nicely too.

This is a lovely soup to serve in the summertime, as it is served chilled. If you prefer, you can substitute sour cream for the creme fraiche. To make creme fraiche, just combine 1 cup of whipping cream with 2 tbsp of buttermilk. Once combined, cover and let stand at room temperature for 8 hours. This will make a cup of creme fraiche.
My Spiced Butternut Squash, Sweet Potato, Carrot and Orange Soup

This was inspired by my other butternut squash soup recipe (#402703). The orange flavoring is optional. I use pre-cut, cubed squash when I can find it. You can also use a small fresh butternut squash. (The prep time assumes you are using pre-cut squash.) I use almond milk in this recipe (I like Almond Breeze) instead of cream or half and half. You can save a little time by roughly chopping the onion and garlic, because the soup will be pureed later. I do chop the ginger rather finely because it is so fibrous, and I don't want lumps in the soup that didn't get pureed. -- posted by coconutty

Grandma's Cream of Potato or Broccoli Soup

When I was a little girl, cold winter nights at my grandmothers always called for her wonderful potato soup. She would serve it with fresh hot cornbread or home made yeast rolls and it warmed you all the way to your toes. It always brings back memories of a wonderful woman who was a great influence in my life. I still miss her. Sometime she would add fresh broccoli, and it was also great.
Red Kubbeh Soup

Kubbeh is a small pocket of dough that is stuffed with ground beef. Kubbeh for soup is usually boiled, whereas Kubbeh served on a platter is fried. Grocery stores in Israel and increasingly in the United States offer frozen packages of Kubbeh that are ready to drop into a vegetable soup. Enjoy this traditional recipe for kosher Kubbeh Soup, or Marak Kubbeh in Hebrew.

I found MirJ has a great Kubbeh recipe, Recipe #26755 or you can use frozen store bought kubbeh.

Rich, creamy and addictive low-fat, low-sodium potato soup. I was trying to recreate the soup from the deli without its punishing 28 grams of fat and way too much sodium. This soup is named after my daughter, who requested it :-) -- posted by summerbabies
