One potato generally is enough for 1-2  people. Select sweet potatoes that are uniform in diameter. I do not like to use really chubby ones. 			<description>The best way I know to use up Holiday ham.  Now I cook ham all the time, almost once every 6 weeks or less, so I love to keep bags of chopped ham in my freezer.  There are so many great uses and this is one.  I love to use a smoky gouda for this and a little bacon and onion which just takes this dish over the top. Otherwise it is a pretty basic scalloped potato recipe.  Give it a try for dinner one night.  I serve this with a fresh salad and nothing more. 			<description>I had these cinnamon sweet potatoes at a Thanksgiving lunch. I thought these were so yummy and I had to ask Bobby Smith how to make them. Bobby says these are alot of work but the pay-off is so sweet. When I made these yams I used to much nutmeg I'm gonna cut back on this during the tasting of the grease/syrup. I did use a good amount of cinnamon and will use a bit more next time. My future hubby thought these were good but a bit to sweet so next time I'll go more easy on the brown sugar and sugar. I did use Splenda for both.
