Tuscan Potato Soup (Zuppa Toscana)

There are a number of recipes out there that try to duplicate Olive Garden's "Zuppa Toscana" appetizer soup but they usually call for artificial ingredients or seriously lack in flavor.

With or without the addition of chopped kale leaves this all-natural and economical family dish is chock full of traditional flavors and is nearly identical to Olive Garden's signature dish.

Hint: To reduce the fat content of this soup make sure to remove the kale leaves before serving; they absorb grease. -- posted by GenYChef

Potato-Chorizo Tacos With Simple Avocado Salsa

New England Portuguese Clam Boil

This is one of my childhood favorites. I grew up in southern Massachusetts where there is a huge portuguese population. We would go to the coast and collect any muscles, clams or periwinkles we could find and then toss them in a pot once we got home. These days a trip to the supermarket works okay. Feel free to add whatever seafood you'd like. Ingredient amounts are estimations since we really just threw whatever we had into a large pot. Make sure the clams and mussels are fresh and discard any that don't look so great. -- posted by C. Taylor

Easy Jambalaya

I went to the Rainforest Cafe in Chicago a few years ago, and happened to order the Jambalaya. I had never had Jambalaya, and from the menu it looked a good choice, but I can honestly say, It was the best meal I have ever eaten. I have tried to make this dish many times, and have now (I think) simplified and perfected it. As an Englishman, no-one over here has even heard of Jambalaya, but I have made this dish for lots of friends, who all absolutely love it, and I swear it is the closest I have come to that fabled recipe. It is a cheat in that I use some store-bought items, but if you know how to substitute with fresh produce then let me know. I hope you all enjoy this meal as much as I do! -- posted by Chef #785168

Spaghetti Sauce With Hot Italian Sausage

Inspired by my Dad's somewhat tamer spaghetti sauce, this is my spiced up twist on an old classic. It is easy to make, SMELLS great and makes enough for dinner plus 2 frozen dinners for two (for those nights you just don't have time to cook from scratch). This sauce comes out THICK and CHUNKY, so adjust if you like a thinner sauce. I also make this a day in advance of when I want to eat it as I like the flavor after it has been refrigerated over night and then reheated. -- posted by Love to Eat!!

Shrimp and Chorizo Flatbreads

Chef Way Garces' recipe found in "Chef Recipes Made Easy" Food & Wine Magazine, August 2006 edition shows us how to use these wonderful pitas in place of the coca dough he would normally use. He also cooks dried garbanzos for the bean puree - we chose a good-quality prepared hummus, fresh shrimp and spicy slices of Spanish chorizo! Serve with a spicy, medium-bodied Tempranillo: 2001 Bodegas Montecillo Crianza. These were great when we made them when we had our mock-elections here at the home, they were very tasty. -- posted by Manami

Simple Sausage Stuffed Mushrooms

So many stuffed mushroom recipes call for mixing, chopping and pre-cooking the sausage. This one is so simple the little ones can help out. It takes just a matter of minutes to get them ready to pop in the oven. Since the sausage actually cooks in the mushroom the sausage flavor is bolder. Hope you enjoy as much as we do! -- posted by Food Goddess

Creole Cornbread Stuffing (Emeril's)

Saw this on Good Morning America. I decided immediately it had to be a last minute addition to our Thanksgiving menu. My 22 year old son was thrilled to have it assigned to him ("instead of a sissy salad"). He breezed through making it and we all thought it was so good it had to have a permanent place on our Thanksgiving menu. Highly recommended (although it may be a tad spicy for some -- if you are timid about spices, go easy on them). -- posted by Sharlene~W

I threw this together on one of those "I wonder what's in the fridge" nights, and it's now one of my favorite dinners. We have it a few times a month. I love the blend of sweet and spicy sauce with the fresh taste of the peppers and the tartness of the apple. I've found that the apple makes or breaks the dish. Make sure you use a firm apple with bold flavor. If you use a mushy or mild flavored apple you'll probably find yourself spitting it out. -- posted by Wigglesworth

Commander's Shrimp & Andouille Sausage With Creole Mustard

This is a recipe from Commander's Palace in New Orleans, from back when Emeril Lagasse was the chef there. The title should read "Commander's Shrimp & Andouille Sausage with Creole Mustard Sauce", but it wouldn't fit! It combines the elements of Creole and Cajun cooking together. Try to find Andouille Sausage because of it's unique taste, but if you can't find it another good quality spicy smoked pork sausage can be substituted.
Authentic Cajun Chicken and Sausage Gumbo

Some people think that New Orleans cuisine is Cajun cuisine. It isn't. It's Creole cuisine, where most sauces and gravies are prepared with tomato. To delight in true Cajun cuisine, one must travel west of New Orleans into Acadiana, where, in my opinion, the food is much better! Just be sure that you like spicy, because most of it is highly seasoned. My mother taught me how to make Gumbo. I usually make enough to freeze in portions so that I'll always have some on hand. Potato salad is traditionally served as a side dish.....oh, and of course, some good, crusty, garlic french bread to sop up the juice. :) -- posted by Irishcolleen
