OAMC Tex-Mex Egg Burrito Filling

My husband grew up in south Texas and often complains about missing breakfast taquitos. I will make these up for him and place the leftovers in the freezer. These are really easy, I recommend cooking the ingredients in stages as they will cook at different times and you run the risk of burning one before the rest are finished. I recommend using a large non-stick skillet for all steps, however if you do not have one any large skillet will work, however you may need to add additional oil. -- posted by Erindipity

The Full Monty - F E B - Full English Breakfast

A fine British tradition - and a meal to set you up for the day; there is a saying in the UK that goes like this: "breakfast like a King, lunch like a Queen and have supper like a pauper"! So, what does a typical full English breakfast consist of? One recipe in an Edwardian Cookbook listed a plethora of ingredients that would have graced the table of many a stately home at the turn of the century, to include 7 courses! A modern day FEB is likely to consist of the following: two sausages, two or three rashers of bacon, fried eggs, fried bread, tomato and lashings of mushrooms with black pudding and brown HP sauce to taste. In finer establishments you can even expect additional courses such as cereal, porridge, kippers, toast and jam or marmalade, kedgeree, or devilled kidneys.
Rumour has it that the term 'The Full Monty' is used to refer to these type of breakfasts because Field Marshal Montgomery was rather partial to them. Here is my basic recipe for an FEB, with optional extras! Grill or fry your FEB - and make sure you have acres of hot buttered toast and gallons of English Breakfast Tea! I am NOT suggesting this is what you should eat every morning - but it is a wonderful treat for the weekends, holidays and just when you feel like it. -- posted by French Tart

Midwestern German Fries With Sausage Gravy

This is a popular breakfast item served in a lot of restaurants in Ohio. It's a mixture of homefries, onion, green peppers and eggs topped off with sausage gravy. I like using either Italian sausage or sage sausage for the gravy. A great way to use leftover baked potatoes. If you don't have any leftover baked potates, you can put the potatoes in the microwave and use the baked potato setting. Let the potatoes cool to the touch then peel (or leave the skin on if you pefer) and slice. -- posted by Crafty Lady 13

Pizza for Breakfast!

Northern Omelet Bagel Sandwich

I used to work in a little muffin/bagel shop and this was my absolute favorite thing we sold there. I've slightly tweaked it to my tastes and you're welcome to do the same. My personal favorite is to use Tomato+Basil bagels with this.
Also, this is one of the 'chunky' versions of the recipe. If you don't like as much tomato or pepper in yours, don't add it. And if you like your peppers a little softer, precook them a bit before adding in the eggs. Pretty simple. -- posted by LutieLu

Sausage Pie (Easter Pie)

This is the traditional family recipe from my grandmother. Although when I made it, I added a little easter ham in it as well for some extra flavor. This recipe is very very tasty, but not the most figure friendly dish. This is a large recipe which is freezable. I froze about 1/2 the recipe for a few months later and it still tasted just as good. -- posted by Abbey212

Sausage Crescent Breakfast Casserole

This is a tastey breakfast casserole that can be done in under an hour! You can make it spicy or mild depending on which cheese you decide to use. Or you can mix them and choose the middle ground. For kids, I usually have to choose the mozzarella though. For adults, I sometimes add some green chiles or a seeded jalepeno, chopped very fine. But I really like heat. I also sometimes increase the garlic! -- posted by breezermom

This is a great way to use up left-over spaghetti (or left-over pasta of any kind). I often cook extra spaghetti just so I can make this the next morning. You can use unsauced pasta as well, but I like the spaghetti just covered with red sauce. This is a wonderful brunch dish and one that many have never tried before. Have some warm red sauce (try (Recipe#350995)) to serve over and top with grated Parmigiana and a sprinkle of finely shredded fresh basil leaves. -- posted by Alan in SW Florida

Meaty Country Breakfast Scramble

For this dish I recommend you break out two large skillets.

Sausage Breakfast Muffins

Going off a breakfast casserole recipe, I completely modified it to make these hearty, energy filled muffins. I am going to work on a healthier version next go around, using ground chicken.
*These freeze well.
*Could be baked as a casserole in a 9 x 9 pan. 350 F for approx 1 hour.
*Use glass, ceramic or best choice, stoneware pans. Metal pans turn the bottoms too dark. -- posted by Shannon & boys

These flavours blend beautifully to make a lovely, robust quiche. You could use an unbaked pie shell rather than dough- this is just how I make it. If your quiche pan is tall, you may like to increase the egg and cream mixture in a ratio of 4 eggs: 1 cup cream. -- posted by Shuzbud

Hash Brown Casserole

Anyone who love's Paula Deen like I do has heard her talk about the 3 different types of food ... one of them is "funeral food." No I'm not talking about some ancient Egyptian thing where they bury the dead with food, I'm talking about food you take to feed the family of the deceased .... its got to be pretty looking, hearty, and something that you put all your heart and love into. This is one of my "funeral food" recipes that I've made. Of course, I've also made it to go with breakfasts and brunches.
Jimmy Dean Six Layer Breakfast Casserole

The jalapenos give this casserole a nice kick to wake you up in the morning. I found this recipe at jimmydean.com, and I must confess the directions were confusing to me but maybe because it was 5am when I made it. I put half my eggs on the bottom, fit the bread slices in the bottom of the pan, put the entire sausage mixture on top, and covered it with the rest of the egg mixture. Whatever floats your boat...I figure it's all going into the same place (your belly). Personally, I'd use less than 1 teaspoon of salt (probably 1/4 to 1/2 teaspoon), but you decide. I also found it needed to cook more than the 15 minutes the recipe listed and cooked it for closer to 30 minutes at 350. I've posted the recipe the way it was written. Let me know if you're able to decipher it better than I did. Enjoy! -- posted by AmyZoe

Easy Sausage Egg & Cheese Breakfast Quesadilla

This is a fairly easy and tasty recipe. To save time I cook the breakfast sausage in advance and freeze 1/2 cup portions in small baggies and just take one out the night before making. Feel free to add or omit anything you like but keep in mind the more items inside the heavier it is and not as easy to flip in the frying pan. I like it just the way it is but you might like to serve with hot sauce or salsa. Cook & prep times are approximate.
This is an easy to prepare, tasty dish using simple ingredients...my family loves it! If you can't find the hash browns with onions already in with the potatoes, just saute 1/3 cup chopped onion and add that to the mix before baking. While I use a 4 cheese blend, cheddar cheese alone would be fine also...the cooked cheese makes a delicious crust in the casserole. Frozen hash browns would work too just thaw them before adding to the mix. The salsa gives this quiche a nice kick and the flavors of cilantro, sausage and potatoes add to the taste and textures. This is a family favorite in my house.
Dutch Oven Camping Breakfast Love

Not the most descriptive recipe title, perhaps, but this is what my friend calls it and I like the name, so there you go. Nothing wakes up your camp-mates like the warmth of a campfire and the sounds and smells of sausage, bacon, and veggies. You will NEED a REAL camping dutch oven (get the cast-iron kind with the little legs and the lip on top for putting coals on the lid - if you camp much, this is well worth the investment). You will also need two hot-pads, tongs, and a heat-resistant spatula. A long-sleeve shirt and leather gloves are recommended so that you don't singe your arms and hands. Note that preparation time consists mostly of letting the fire mature. -- posted by Da Huz

Fortnum and Masons Authentic Scotch Eggs With Sausage and Herbs

Freshly boiled eggs are encased in a herb flavoured sausage “jacket” and are then deep-fried until golden and crisp, delicious! Contrary to popular belief, Scotch eggs are not Scottish, and they were actually invented by the famous London department store “Fortnum & Mason” in 1738, where they are still available today. The word "Scotch" is an old English word meaning to chop or mince, and obviously, the eggs are covered with “chopped or minced” pork sausage meat, hence the name Scotch Eggs. They are traditional British picnic food but I also like to serve them as a light lunch or snack, and they make a wonderful addition to the buffet table. These tasty traditional English specialities have had bad press over the years; mainly down to commercial mass production, but if you make them at home with fresh, free-range eggs and the best quality sausage meat, they will taste divine, and they will always be the stars of the picnic hamper or family lunch table! PLEASE use high quality sausage meat or sausages, with at least 70% meat content.Historical Note: Founded in 1707, Fortnum & Mason (F&M) stocks "food fit for a queen". The 300-year-old British department store, famous for its jams, teas, and sauces, provides the Queen with her annual supply of Christmas puddings and holds the "Royal Warrant. -- posted by French Tart
