Puerco Puebla ( Pork As It is Made in Puebla, Mexico)

This dish is served at my favorite Mexican restaurant in Sacramento, I tweaked the ingredients at home until I got it right. You will love this dish for its simplicity, and its complexity all in one. Serve it with sauteed fresh spinach and mashed potatoes. This is awesome, yet simple and not spicy.
Guinness & Honey Glazed Pork Loin

In his Las Vegas restaurant, The Nine Fine Englishmen, Kevin Dundon serves this Guinness glaze in a dish mixed with olive oil for dipping bread into instead of butter. Pork loin cooked with this glaze sounded just too delicious not to share. I found this recipe in the March 2005 issue of the BBC Good Food magazine. It is part of Irish cook Kevin Dundon's suggested St Patrick's Day dinner menu. He serves this pork loin with colcannon and cabbage. As he says “I love buttered cabbage with this pork. Simply heat a knob of butter and cook the remaining finely shredded cabbage (the other half of the Savoy cabbage used in his colcannon recipe) for 5 minutes, so it’s still just a little crunchy.” I have already posted his side dish colcannon - Colcannon recipe #123663 - and his prepare-ahead starter - Smoked Wild Irish Salmon With Chive Pancakes recipe #123667. The preparation and cooking times provided below are my guesstimates. Kevin says that this dish will be "ready in 2 hours". Please mention your experience of cooking times if reviewing the recipe. I’ll also post his dessert for this St Patrick's Day menu: Sheridan’s Cream Sticky Pudding. All the dishes in this menu sound like any-time-of-year dishes to me! I certainly shan't be waiting until 17 March 2006 before making any of them! -- posted by bluemoon downunder

Pork Roast W/ Sauerkraut Excellante

This recipe was given to me from my bro-in-law. It makes the pork roast juicy and the sauerkraut is so tasty sweetened this way by the juices from the pork roast.
California Chili

This is a wonderful tasting all meat, no bean chili. The flavor of this is enhanced if it is made 24 hours in advance. For the best results use a dutch oven. A large pot also works.
Pork Tenderloin With Pear-Cranberry Sauce

This is my own recipe. I scored some great locally raised pork tenderloin and some homemade maple syrup in the same week, and was inspired to create a recipe that used these and other regional ingredients.

This recipe comes together very quickly. I made the sauce while the tenderloins were roasting and it took me less than 45 minutes from the time I started prepping ingredients to getting it on the table.

By the way, I specify port, but sweet marsala or sherry should work (or substitute 2 Tbs of balsamic vinegar in 1/3 cup water for the 1/2 cup wine). Using >Bosc< pears is key because they won't break down when cooked.

I served the tenderloins with buttermilk biscuits and lightly steamed green beans. And had a pint of Wolaver's brown ale to go with it all. Beauty! -- posted by Primordial

Chef-Boy-I-Be-Illinois' Pork Tenderloin Rosa Di Parma

And once prepared, it roasts in the oven for 30 minutes while you move on to make polenta and stewed apples to serve alongside this delicious dish!
Pork Tenderloin With Apples, Calvados and Apple Cider

A great recipe to serve guests. They will think they are eating in a fine restaurant in France. Impressive dish but quick and easy to prepare.

From Bon Appetit, May 1994.

Calvados can be expensive so you may want to use another apple brandy. To get the best flavor, be sure to use quality ingredients. It is important to use Golden Delicious apples. Many apple varieties are tasty when eaten fresh but do not withstand the cooking process. Use a good quality apple cider...not apple juice. Good apple cider can be found in the produce section during the fall. -- posted by swissms

Thai Pork Stir-Fry

This recipe is from the 2009 Milk Calendar. Thai food doesn't necessarily mean hot & spicy but it does mean flavourful & delicious! Serve this super fast stir-fry over rice or noodles.

Cooking tip: Thai green curry paste can be found in jars or packets with the Asian foods at most grocery stores. It is quite spicy so if you're not sure about the heat, start with the lowest amount suggested. Other curry pastes can be used as well. The first time I made this, I just used your basic brown curry paste from the local health food store.

For the Adventurous: Use Thai fish sauce instead of soy sauce, increase curry paste to 1-1/2 tsp. and add 2 cups shredded napa cabbage with peppers. (I have neved tried this alternative myself, and I don't know about the taste, but feel free to try it and post what it was like!)

Healthy Eating Tip: During the colder months, Canadians should be topping up on vitamin C and zinc. This recipe is an excellent source of both - so no need for supplements!

*Note: This recipe has a very prominent lime flavour to it, so if you're not that big on the lime, I would suggest cutting back on it a little bit.* -- posted by Glazbinator

With Fall aproaching and the leaves already begining to turn gold and droping what could be better than this outstanding (and easy) dish of pork loin, apples, cinnamon and pecans! Good enough for company but simple enough for everyday family. -- posted by Annacia

Chili

As temperatures drop, nothing warms you like a hot and spicy bowl of delicious "Chill Out" Chili. So here is a great recipe is from Pace, the Picante sauce people. This easy-to-make chili may be cooked on the stovetop or in a crockpot. My favorite way to enjoy it is with rice stirred in. So satisfying! -- posted by Deb's Recipes

Stuffed Pork Loin With Cherries (4 Ingredients)

This rolled pork roast is very simple to prepare, but elegant enough for special dinners. We make this during the Thanksgiving holidays, usually on the weekend after we've had enough turkey. I found this recipe in a magazine called "Home for the Holidays" possibly around 1995, and I'd like to give that credit although I no longer have the magazine. -- posted by Cookin'Diva
