Sela's Pineapple Pie

This is a classic from the Friendly Islands. It makes a huge amount but I tend to double the recipe, use a roasting dish as the pan...and it all goes. Great for big families, pot luck dinners. A Tongan treasure. -- posted by Missy Wombat

Curry Dressing for Rice or Potato Salad

This is a versatile dressing with a refreshing flavour that brings out the best in a rice salad. I am always asked for this recipe once people taste it, as rice salads can generally be very boring. The curry powder is the old fashioned one my mum has bought for years simply called Indian curry powder. It is not curry paste or masala but a milder type our grandma's used for making curried sausages and eggs. Do not use floury potatoes, they need to hold their shape when being mixed with the dressing etc. Cooking times are for the rice and potatoes and are approximate. -- posted by jackandfiona

Boiled Taro With Coconut Milk

This is a very common way to prepare Taro, as a side to many Tongan dishes. You may need more than one can of unsweetened coconut milk to properly cover the taro. If you cannot find the unsweetened kind, you can used a couple of thawed packages of the unsweetened kind. Oftentimes, I will not even transfer the taro to a saucepan, but will instead keep it in a pot, and drain some of the water. Then I will pour in the coconut milk. Fijian taro (the green kind)is the yummiest, if you can get your hands on it ;) -- posted by Pikake21

Sonoma Valley Mashed Yams

My boyfriend hates sweet potatoes. It's been rainy here forever, so I decided to get creative one night, serving these as a side dish for us and our three kids, with a lovely salmon with shiitake ragout and pesto capellini with pomegranate spritzers on the side.
It's a little sweet, a lot rich, simple to prepare, and totally delicious. There were no left overs and he has a new view on yams or sweet potatos or whatever the heck people call them in the rest of the country! -- posted by Chef #740736
