			<description>This is a hearty traditional Polish dish consisting of boiled cabbage leaves stuffed with ground beef, chopped onions, and rice or barley, baked in a spicy tomato sauce with sliced carrots for sweetness and mushrooms for heartiness. I remember eating only the stuffing when I was young. Now I eat it all and my kids cabbage they don't want. It's worth all the work! You can cook stove top very low heat, I use a rack on the bottom of the pot then layer the rolls, to prevent burning! Off the top of my head I'd say it makes about 20 rolls (give or take). The original version uses kvass made by soaking oatmeal and rye bread in water, instead of the vinegar. We pass around horseradish, rye bread, kielbasa and eggs and everyone adds what they want to their dish of broth. You will either love it or hate it. 			<title>My Family's Meat Stuffing for  a Turkey</title>

			<description>This is a meat stuffing my family has used all my life and before.  This was given to my mother by her mother, and I imagine, her mother.  Our whole family used this recipe. My daughter makes this stuffing as well, and now my granddaughters have the recipe so they will eventually use it. 
It is a very tasty stuffing so we make &amp;quot;tons&amp;quot; of it to freeze or use over the holidays.  It's good on toast with gravy as a hot open sandwich. Or with turkey slices and gravy as a leftovers meal. 
You can make it a day or so ahead, but you must bring it to room temp if you are going to stuff your bird with it.
ETA:  I have always made the stuffing and put it into the turkey HOT.  That way there is no problems with the turkey being overdone to make sure the stuffing is heated through.  IN RESPONSE THE THE REVIEW DATED NOV 20 2007 ----  I appreciate your FYI, however, I have been making my turkey just this way for over 40 years, and have yet to lose a family member or friend.

			<description>Polish cabbage rolls (filled with a mixture of rice, pork, and beef) stewed in tomatoes.

This is a dish I remember my Gram making.  I've taken the recipe and tweaked it as I've cooked.

The dish is hearty and delicious--and known by other names throughout Eastern Europe.  I've made it for friends who have never had Polish food before, and they loved it with a fervor that surprised me.

It may look very time intensive, but it's a meal unto itself and can be frozen or reheated easily.  It also helps to split it into two main phases:  1) making the meat filling and freezing the cabbage the night before; 2) assembling the golabki.

For Polish food, it's surprisingly easy (this is coming from someone who makes her own pierogi from scratch).

			<description>This is a typical Meatloaf found in eastern European kitchens and restaurants.  My Dad who was a wonderful cook brought this with him when he came to America in the 20's.  I've added the glaze when I started to prepare it myself. Also he used to use minced garlic, not the other type I now use.  Remember to get lean ground pork.  The pork I remembered seeing in the supermarkets had very visible pork fat. Try not to purchase that type. Buttered parslied potatoes and cucumber salad go especially well with this dish. You can use either a loaf pan or a 9x13.  One tip said she used a loaf pan and was able to extract the grease before adding the glaze. Both pans are usable. 			<description>Polish &amp;quot;Hunter's&amp;quot; Stew.  Mine's not absolutely traditional--there's no venison.  Perfect for cold weather.  This only gets better with reheating.  I recommend making a large batch and then freezing some of it (it'll last a couple months frozen).

This has many ingredients--but many are spices!  Overall, this is pretty easy to make, and a good portion of the cooking time is just letting the stew simmer.
