Rustic Summer Peach Berry Tart

This tart is not only pleasing to the eye but the taste buds as well. The crust is meant to be hand-crimped in a rustic fashion, so don't worry about perfection. I used peaches, strawberries and blueberries, but good substitutes for the berries would be raspberries or blackberries. A sprinkling of powdered sugar atop this tart makes for elegant presentation. Preparation time does not include cooling time. -- posted by MarthaStewartWanabe

Fresh Peach Melba Coffee Cake (Buckle)

This recipe came out in this month's Family Circle. I just made it, and I thought it was delicious. I used fresh peaches, and everyone thought it was very tasty. I don't know if I would call it a coffee cake or a cobbler. We ate it similar to a cake for dessert (in slices). According to Family Circle, "this fruit-filled dessert buckles as it bakes, hence the name". I used black raspberry preserves. I also used a bit more than the recipe called for- but this is just a personal preference. It was easier to just use the rest of an already opened jar. I ended up covering the edges with foil about 3/4 the way though its baking time because they browned a bit faster than the middle (like a pie). It thought it was almost better the second day when the cake had soaked up more of the fruit. It is SO GOOD! Try it!! -- posted by History Teacher

This "ice cream" replacer is much healthier for you than regular ice cream. No saturated fat or cholesterol, and low in calories.
Summer Abundance Fruit Salad

This is fresh and light, perfect for finishing off a meal of grilled summer fare. Use the freshest, ripest fruit you can find. I used to buy fruit salad like this many years ago from a seaside fruit stand -- I think they used their bruised fruit to cut up for the salad, and it was my favorite thing to buy at the beach. The "cooking" time is actually chilling time, to allow the fruit to macerate and the mint flavor to spread through. -- posted by Susiecat too

Peach Upside Down Muffins

I've long been a fan of Peach Upside Down Cake, so when I found this recipe on the web, I had to try it. They're cooling right now and I can't wait to dig in!

NOTE: I halved the butter and brown sugar as an easy way to cut some fat and calories. I had a little trouble getting them out of the pan and some of the peaches slipped off and had to be put back on, but there doesn't seem to be a significant compromise to the muffin. I'm interested if the results differ if you use all the butter and brown sugar that's called for. Also, you could easily stretch more than 12 muffins out of this recipe. -- posted by Amy020

Cherry Crisp Pie

I was in the mood for cherry pie but didn't want to make pie crust, so I improvised and made a cherry crisp in pie form. The recipe calls for fresh cherries, but you could substitute canned pie filling if they happen to be out-of-season. We liked this pie served a la mode and thought the sweetness of the crust and topping was a good balance with the tartness of the cherries. -- posted by MarthaStewartWanabe

Plum Torte

My friend gave me boxed of Japanese plums from her plum tree and I've been finding ways to enjoy them. This torte can be served for breakfast or dessert topped with a bit of ice-cream. The plums keep it from becoming too sweet. What I especially enjoy about this cake is that it is a perfect cake to freeze and bring out at a later date when you will appreciate a taste of summer. I haven given this cake to neighbors, friends, and family members and everyone loves it. You can also use other stone fruits if you would like. If you do not have a spring form pan, you can line a 9 inch cake pan with foil leaving an overhang over the edges of the pan. Oil the foil generously. Use the foil to "pull" the cake out of the pan when ready.
Peach Freezer Jam - Eating Well Magazine

I got this recipe out of the August '08 Eating Well Magazine. I made it using about 3/4 C of sugar and apple juice. It worked great. I'm putting the recipe here so I don't lose it, because my family loved it. I like the fact that it is lower in sugar than other freezer jam recipes. The magazine says not to use regular pectin in place of the no sugar needed pectin. I used Ball brand natural no sugar needed pectin.

Poached Peaches With Yogurt

This yummy breakfast recipe comes from the January 2009 issue of *recipes+* magazine. You can use other stone fruit or a combination such as plums, apricots, or nectarines. You can make the poached fruit up to 6 hours ahead if you want. Another variation is to serve it warm, instead of chilled. Prep time doesn't include the 3 hours needed to chill the fruit. -- posted by Sara 76

Green Chili Guacamole

My standby guac recipe has bacon in it and I needed to whip something up for a BBQ that was hosted by a vegetarian. Not wanting to run to the store I raided the pantry and decided 'what the hey', I'll see what I can come up with. I couldn't have been happier with the result. Even a guy at the cookout that was from Mexico said it was better than his grandmothers. Now that's a compliment. I do recommend leaving it in the fridge overnight for best results.
Peach and Cucumber Salsa

Low calorie, fat free vegan recipe from Whole Foods; it is highly rated on their website. They suggest serving it atop grilled fish but I think it would also be great with chicken or pork tenderloin. You can make it up to 4 hours ahead of serving, just keep it in the refrigerator. I think mango and a splash of OJ would be a great addition to this recipe as well! NOTE: I just made this recipe and I added the OJ for a touch of sweetness and added a couple drops of jalapeno sauce for more kick. I also didn't care for the mint, so I changed that to optional. . .the basil was nice I thought. -- posted by JanuaryBride

Quick Peach Sherbet

From the San Francisco Chronicle, posted for safe-keeping.

This can be made without an ice cream maker, and can be served right away. If you plan to make the sherbet ahead or have leftovers to freeze, the vodka helps keep it scoop-able when fully frozen.

Use fresh peaches when available. To freeze, cut peaches into chunks and freeze in a single layer on a cookie sheet. Preparation time does not include freezing time. -- posted by RDcook444

Fresh Peach Ice Cream

Both the cooked peaches and the custard mixture must be cooled to 40º before you churn them. Since they are fine in the refrigerator overnight, you may want to prepare them the day before you plan to churn and serve the ice cream. You'll get the very best results from using in-season, fully ripened peaches, but in a pinch, you can substitute 2 cups IQF (Individually quick frozen) sliced peaches and replace the vodka with peach-flavored liqueur. The ice cream is at it's peak when eaten within 4 hours of churning, although covered, it will keep in the freezer for up to two days. Adapted from the America's Test Kitchens. Prep time includes chill time. Cook time includes 2 hours of freezer time after churning. -- posted by TxGriffLover

Tarte Aux Abricots - Glazed French Apricot Tart With Almonds

This is my favourite type of French fruit tart, even more so than apple tart! Our local Patisserie makes a wonderful Tarte aux Abricots, but they are quite expensive and VERY large, much too big for the two of us when we have no B and B guests! So, I have been tinkering in the kitchen again, and have come up with this recipe. You MUST use fresh apricots for this - tinned ones are too soft and too sweet. Plus, I love the slightly tart flavour that the fresh apricots lend to the flavours of this tart. The ground almonds are scattered over the base of the short crust pastry case to stop it becoming soggy during cooking; they also provide a complimentary flavour to the apricots. A classic French tart that will make a delightful ending to any special meal or for afternoon tea. Serve this tart with fresh whipped cream or crème fraiche. -- posted by French Tart

Fresh Peaches in Sauternes Soak With Angelica and Lavender

This is a wonderful, light summery dessert, which never fails to please my guests, as well as my family and friends! Fresh peaches are soaked in sweet Sauternes with angelica leaves and lavender flowers tucked amongst them. Angelica is an interesting, aromatic tasting herb, and although I normally only use the stems to candy or crystallise (Recipe #248003) I have discovered that the leaves also make a great accompaniment when used with fresh fruit. Try to serve this fresh fruit salad in a large clear glass bowl for maximum impact; it just looks so pretty with the light shining through the fruit, juices and herbs! I find that the only thing that is needed to serve this is a good dollop of crème fraiche. I have also made this with apricots and melon for a slight change. I like to use a combination of white and yellow peaches for this recipe – but please use local and fresh peaches regional to your area. Prep time includes the minimum "soaking" time. I have not tried this with tinned peaches, but suspect that they may be too "soft" to hold their shape for prolonged soaking. -- posted by French Tart
