			<description>I discovered the ease of Recipe #94405 recently, and my non-baking self fell in love.  When I was overloaded with sweet cherries, I had to find a galette recipe to use them.  This is an adaptation of a recipe found at an online wine site. 			<description>Cut from our local newspaper a few years ago.  It has become a family favorite.

&amp;quot;If apple is the quintessential American pie, then peach is surely our summertime favorite, and all the more if it's served a la mode.  To make a peach pie worth of the name, use fully ripe fruit and a pastry crust that's rich and tender but still sturdy enough to contain its sweet, juicy burden without collapsing.

To remove the skins from peaches easily, pour boiling water over them, then quickly dip fruit into ice water.  Use your fingers or a small knife to slip off the skins.

This recipe calls for a crumbly nut topping, but you could substitue a classic lattice crust that lets the fruit show through.  Serve the pie warm or at room temperatue, with or without ice cream.  To gauge the amount of sugar and cornstarch to use, take your cue from the ripeness of the peaches; if they are very sweet-tasting and quite juicy, use the smaller amount of sugar and the large amount of cornstarch.&amp;quot; -- posted by &lt;a href="http://www.recipezaar.com/member/447742"&gt;Beth A.&lt;/a&gt;</description>

			<description>This recipe is more like a giant prune turnover.  This is found on many of the pueblos here in NM, and is a great dessert.  The crust is more like a cross between a cookie and bread.  This recipe is from a small pamphlet called &amp;quot;Sampling New Mexico Foods&amp;quot; printed in 1983, for the E. J. Martinez Elementary School.
This recipe is definitely one for those who like to experiment.  Many of the ingredients are approximate, as are the prep and cooking times.  It's been years since I made this. What I especially enjoy about this cake is that it is a perfect cake to freeze and bring out at a later date when you will appreciate a taste of summer. I haven given this cake to neighbors, friends, and family members and everyone loves it. You can also use other stone fruits if you would like. If you do not have a spring form pan, you can line a 9 inch cake pan with foil leaving an overhang over the edges of the pan. Oil the foil generously. 			<description>This is my favourite type of French fruit tart, even more so than apple tart! Our local Patisserie makes a wonderful Tarte aux Abricots, but they are quite expensive and VERY large, much too big for the two of us when we have no B and B guests! So, I have been tinkering in the kitchen again, and have come up with this recipe. You MUST use fresh apricots for this - tinned ones are too soft and too sweet. Plus, I love the slightly tart flavour that the fresh apricots lend to the flavours of this tart. The ground almonds are scattered over the base of the short crust pastry case to stop it becoming soggy during cooking; they also provide a complimentary flavour to the apricots. A classic French tart that will make a delightful ending to any special meal or for afternoon tea. 			<description>This is VERY loosely based on some of the pie instructions in How to Cook Everything. I've done a lot of adjusting and tweaking. A food processor is used to make the pie dough.  I like the filling with all brown sugar, but you can substitute all white sugar, or use a combination.  The topping is best with brown sugar.
