			<description>A co-worker brought this in for myself and my wife to try.  I was apprehensive at first (I don't usually like pies) but was completely won over on my first bite!  I came home from work and started searching RZ for the recipe.  To my surprise, no one had sent it in.  I ended up finding similar ones on the site, but none that used the Rice Krispies as the crust.  Personally, I think this made the pie better (and was why I loved it).  I finally found the recipe on RiceKrispies.com and knew I had to submit it first thing!  I have left the directions alone but substituted the brand names of the products my co-workers used (since I KNOW how AMAZING this is).  I hope you enjoy this as much as I do! 			<description>This is my latest attempt to make something tasty for lunch that fits into my new-found low fat and many fish and veggie based diet.  I had a normal carrot salad in mind but wanted to make it something I could eat as a lunch meal.

I marked this down as two servings but I will be honest and say that I usually eat it all by myself when I feel the need for a big meal but don't want to spare the calories.

The biggest pain about preparing this dish is  peeling all the carrots around my dogs who love them and go insane when I just get one out of the fridge!

For four adults and two small children, this really was just barely enough, and we could have probably eaten another pineapple.  I noticed that most other pineapple recipes here involve marinating the pineapple or brushing it with something just before grilling.  We've never tried that, but really enjoy the simple, fresh taste of the pineapple without other added ingredients. If fresh pineapple is not available use canned pineapple slices, drained, 2 per serving. Substitute any fresh fruits in season. For a no-grill option, broil pound cake and pineapple separately on a rack set 6 from heat source until lightly browned, turning once, 1 or 2 minutes per side. Instead of cooking spray, use additional melted butter to coat pound cake slices. The original recipe from Woman's World magazine called for serving with caramel topping and dulce de leche ice cream.
