			<title>Low Fat Tropical Prawn and Carrot Salad</title>

			<description>This is my latest attempt to make something tasty for lunch that fits into my new-found low fat and many fish and veggie based diet.  I had a normal carrot salad in mind but wanted to make it something I could eat as a lunch meal.

I marked this down as two servings but I will be honest and say that I usually eat it all by myself when I feel the need for a big meal but don't want to spare the calories.

The biggest pain about preparing this dish is  peeling all the carrots around my dogs who love them and go insane when I just get one out of the fridge!

In 1896 Oscar Tschirky, Maitre d'Hotel made this salad which contained apples. chicken, celery &amp;amp; mayonnaise - later the walnuts were added. Well, I am taking poetic license and making some more changes to it. It has always been served on a bed of lettuce. Based loosely on a recipe provided by The National Chicken Council. You can make this with a store-bought rotisserie chicken(if you do skip the first four steps.) 			<description>I made this and took it to a party last weekend and is it ever knock your socks off good!  To make it I chopped the lettuce up and put into one bowl and mixed the fruit and put into another bowl and refrigerated until time to serve. Just mix it all together and add the dressing and stand back! There weren't any leftovers. I'm just guessing on the servings because I didn't count. LOL!
